ONE-HOUR DINNER ROLLS



One-Hour Dinner Rolls image

Soft and fluffy dinner rolls that are so easy to make and ready in one hour! Soon to be a family favorite!

Number Of Ingredients 8

3 3/4 - 4 1/4 cups all-purpose flour
1/4 cup granulated sugar
1 Tbsp rapid rise yeast
1 1/2 tsp salt
3/4 cup cool water
2/3 cup milk
4 Tbsp unsalted butter, (diced into 1 Tbsp pieces, plus more for tops)
1 1/2 tsp lemon juice

Steps:

  • Preheat oven to 180 degrees Fahrenheit. In the bowl of an electric stand mixer whisk together 3 3/4 cups flour, sugar, yeast and salt.
  • To a medium bowl add water, milk and butter and heat in microwave on HIGH power until it reaches 120 degrees on a thermometer, about 1 minute 15 seconds. Stir to partially melt butter (you just want to make sure it's softened through).
  • Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice.
  • Set mixer with a hook attachment then set mixer on low speed and gradually increase to medium-low, knead about 3 - 4 minutes until smooth and elastic while adding additional flour as necessary (dough should be lightly sticky but manageable).
  • Cover bowl tightly with plastic wrap and rest 5 minutes. Meanwhile butter a 13 by 9-inch baking dish.
  • Drop dough onto a lightly floured surface. Shape into an evenly level square, about 9 by 9-inches. Cut into 16 equal portions (don't have to be exact)
  • Shape dough into 15 balls, while using excess dough from the 16th portion to add to smaller rounds as needed, and place shaped dough portions into prepared baking dish.
  • Dampen hands with water and brush tops of dough with the water (just so they don't dry while rising in oven). Transfer to oven, close oven and turn oven off, allow rolls to rise 20 minutes (don't open oven door).
  • Remove from oven and preheat oven to 375 degrees Fahrenheit (this should take about 5 minutes, so just allow rolls to rest on counter while oven preheats).
  • Bake in preheated oven 14 - 16 minutes until tops are golden brown. Remove from oven and run the top of a stick of butter along tops of rolls just to coat. Serve warm. Store in an airtight container (I recommend rewarming cool rolls in microwave for best results.

These homemade buttermilk dinner rolls simply cannot be beat! So soft and fluffy with the teensiest hint of tangy buttermilk, and baked and ready to eat with a big pat of butter or jam in just 45 minutes!

6 tablespoons butter (divided)
1 cup buttermilk
2 packets Fleischmann's RapidRise® Yeast
4 tablespoons honey
½ teaspoon salt
1 egg
3 ½ - 4 cups all-purpose flour (as needed)

Steps:

  • Preheat the oven to 400 degrees and butter a 9x13 inch pan.
  • Add buttermilk and 4 tablespoons butter to a liquid measuring cup. Microwave for 20 seconds at a time until butter is mostly melted. Buttermilk should be very warm but you should still be able to touch it without burning your finger (about 110 degrees).
  • In a large bowl, combine honey and yeast.
  • Whisk in buttermilk and butter mixture.
  • Whisk in salt and egg.
  • Add 2 1/2 cups flour.
  • Mix (by hand, or with an electric hand mixer, or you can do this in the bowl of a stand mixer fitted with a dough hook attachment) until flour is completely incorporated.
  • Gradually add more flour, 1/4 cup at a time, until dough comes together just enough to form a ball. (It will stick be quite sticky! You should be able to handle it with heavily floured hands.)
  • With floured hands, transfer to a lightly floured surface (be careful not to use too much flour as it will dry out your dough) and knead for 4-5 minutes until dough is smooth and elastic.
  • Divide dough into 12 equal-size pieces and roll each into a ball. Place 1 inch apart in prepared pan.
  • Cover pan tightly with plastic wrap and let dough rise for 10 minutes in a warm place (I place mine near the preheated oven).
  • Uncover, and bake in preheated oven for 15-20 minutes until golden brown on top.
  • Brush immediately with remaining 2 tablespoons butter and serve.

4 tablespoons unsalted butter (cut into 1 tablespoon slices)
2/3 cup buttermilk
3/4 cup water
4 cups all-purpose flour (divided)
3 tablespoons granulated sugar
1 tablespoon rapid rise yeast
1 teaspoon kosher salt

Steps:

  • Preheat over to warm, 170 degrees F.
  • Place butter, buttermilk and water into a heat proof bowl. Microwave until butter is mostly melted and between 115-120 degrees F. Mixture will separate, don't worry when you see this. Transfer to bowl of stand mixer with dough hook attached.
  • Place 3 cups flour, sugar, yeast and salt into a large bowl, stir to combine. With mixer running on low speed, slowly add flour mixture. Use a rubber spatula to clean sides of bowl as dough is forming. With remaining 1 cup of flour, slowly add little bits at a time so that dough mostly cleans sides of bowl while mixing. I usually only use 1/2 cup of the flour during this step. Use the remaining 1/2 cup to flour countertop. Let dough knead on medium low for 4-5 minutes, using a rubber spatula to scrape edges of bowl. Transfer dough to a lightly floured countertop.
  • A couple options for shaping rolls. For crescent rolls, divide dough into two equal pieces and roll one of them at a time into a large 1/4 inch round. With a pizza cutter or pastry cutter, cut into 8-14 triangle wedges. Starting at wide end, roll dough down to the pointed end of the dough. Place crescents into a lightly greased 9 x 13 inch baking dish(s), placing 1/2 inch apart. Generally I use an 8x8 inch baking dish in addition to the 9x13 inch.
  • To make knotted rolls, roll all dough that was made into 1/2 inch thick rectangle, close to 9x13 inches. Cut into 12 equal squares or strips and roll each piece into a long rope shape. Tie into a knot shape or start to knot and continue to wrap edges around circle and place into a 9 x 13 inch baking dish. If needed, use an 8 x 8 inch baking dish as well. Place into warm oven and turn off heat. Let rise in warm oven for 20 minutes.
  • Remove rolls from oven and preheat oven to 375 degrees F. Lightly brush tops of rolls with melted butter and sprinkle with a touch of kosher salt if you'd like. When preheated, place rolls in oven and bake for 12-14 minutes, until just barely turning golden brown on top. Remove, brush with melted butter and serve. For best results serve warm. Store any remaining rolls in air tight container and gently warm up before re-serving.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup plus 2 tablespoons warm buttermilk (110° to 115°), divided
1/2 cup plus 1 teaspoon softened butter, divided
1 large egg, room temperature
1/3 cup sugar
1 teaspoon salt
4 cups bread flour

Steps:

  • Dissolve yeast in warm water until foamy. In a large bowl, combine 1 cup buttermilk, 1/2 cup butter, egg, sugar, salt and yeast mixture, then add 3 cups flour; beat on medium speed until smooth, 1 minute. Add remaining flour, 1/4 cup at a time, to form a soft dough., Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide and shape into 20 balls. Place in a greased 13x9-in. pan. Cover with a kitchen towel; let rise in a warm place until almost doubled, about 45 minutes., Preheat oven to 350°. Brush rolls lightly with remaining buttermilk and butter. Bake until golden brown, 20-25 minutes. Cool in pan 20 minutes. Remove to a wire rack; serve warm.

Got this off the internet (somewhere!) a few years ago. Absolutely delicious - they will be gobbled up quickly! You can make them in an hour, but of course the longer you can let them rise, the better!

2 1/4 teaspoons dry yeast or 1 package yeast
1/4 cup sugar
2 tablespoons water
3/4 cup buttermilk
1/4 cup canola oil
1/2 teaspoon salt
2 1/4 cups flour
1/4 teaspoon baking soda
2 tablespoons butter or 2 tablespoons margarine (butter, especially Lurpak Danish butter is of course best)

Steps:

  • Combine yeast and sugar in large bowl.
  • Set aside.
  • Heat the buttermilk and water in the microwave until warm- NOT HOT!
  • About 45 seconds to 1 minute.
  • Pour the buttermilk slowly into the yeast/sugar mixture until combined.
  • Allow this mixture to sit for 5 minutes.
  • Add oil and dry ingredients, mixing until a soft dough forms.
  • Allow the dough to rest for about 10 minutes.
  • While the dough is resting, melt the butter in a 9" round (dark) cake pan.
  • Spray your hands with butter or cooking spray, and scoop out a piece of dough (about 2-3 T. size).
  • Roll it into a ball in your hands.
  • Drop the ball into the pan, and roll it around in the butter.
  • Repeat this process with the remaining dough, buttering hands again as needed.
  • You will wind up with about 12 rolls.
  • Place the pan in a warm place to rise, for 30-60 minutes.
  • Longer is better, of course.
  • Preheat the oven to 425, and bake for 8-12 minutes until golden brown.
  • You don't need butter with these!
