4 large navel oranges, sliced
4 Cornish game hens (20 to 24 ounces each), split lengthwise
1/4 teaspoon pepper
1 can (15 ounces) plums, pitted, drained
1/4 cup finely chopped onion
1/4 cup butter, cubed
3/4 cup thawed lemonade concentrate
1/3 cup chili sauce
1/4 cup reduced-sodium soy sauce
1-1/2 teaspoons prepared mustard
1 teaspoon ground ginger
1 teaspoon Worcestershire sauce
1/4 cup sweetened shredded coconut, toasted, optional

Steps:

  • Arrange orange slices in two greased 13x9-in. baking dishes. Top with game hens; sprinkle with pepper. Bake, uncovered, at 350° for 45 minutes. , Meanwhile, place plums in a food processor; cover and process until smooth. Set aside. In a large skillet, saute onion in butter until tender; stir in lemonade concentrate, chili sauce, soy sauce, mustard, ginger, Worcestershire sauce and plums. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. Set 1 cup of sauce aside. Spoon remaining sauce over hens., Bake 30-45 minutes longer or until a thermometer reads 180°, basting occasionally with pan drippings. Sprinkle with coconut if desired. Serve with reserved plum sauce.

1/4 cup pure maple syrup (preferably Grade B)
1 teaspoon ground cumin
Coarse salt and ground pepper
2 Cornish game hens (about 1 3/4 pounds each)
3 teaspoons olive oil
1 1/2 pounds carrots, cut into 2-inch lengths
1 medium red onion, quartered
4 garlic cloves, peeled
6 sprigs fresh thyme
2 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 450 degrees. Stir together maple syrup and cumin; season with salt and pepper. Using kitchen twine, tie hen legs together, then tuck wing tips underneath. Place hens on a rimmed baking sheet and rub with 1 teaspoon oil; season with salt and pepper.
  • Roast 10 minutes. Remove sheet from oven and add carrots, onion, garlic, and thyme. Toss vegetables with 2 teaspoons oil and season with salt and pepper. Roast 20 minutes.
  • Brush hens with maple mixture. Continue to roast, brushing twice more, until juices run clear when hens are pierced between breast and leg or an instant-read thermometer inserted in thickest part of a thigh (avoiding bone) registers 165 degrees, about 15 minutes. Transfer hens to a cutting board and let rest 10 minutes. Meanwhile, toss vegetables with lemon juice. Carve hens and serve with vegetables.

2 tablespoons mango chutney
1 teaspoon curry powder
1/4 cup low-salt chicken broth
1 lime, halved
Chopped green onions
Chopped roasted salted peanuts

Steps:

  • Preheat oven to 400°F. Rinse hen halves and pat dry. Sprinkle with salt and pepper. Line rimmed baking sheet with foil. Arrange hen halves, skin side up, on prepared baking sheet.

¾ cup plum jam
1 (1.25 ounce) envelope dry onion soup mix
2 kiwifruit, peeled and sliced, for garnish

Steps:

  • Place the game hens in a slow cooker. Sprinkle with red pepper flakes.
  • Mix the plum jam and onion soup mix together in a bowl until well blended. Remove 1/4 cup of the jam mixture and refrigerate until needed. Brush the remaining jam mixture over the hens.

1 (7 1/4 ounce) package herb & butter Rice-A-Roni
1 (9 ounce) package frozen cut green beans, thawed
1/4 teaspoon black pepper
2 Cornish hens, split in halves or 1 (3 -3 1/2 lb) quartered whole chickens
1/3 cup apricots or 1/3 cup peach preserves
1 tablespoon Dijon mustard

Steps:

  • Heat oven to 400 degrees.
  • Prepare RICE-A-RONI® mix as package directs. Add frozen green beans and pepper with Special Seasonings.
  • Spoon rice mixture into 11 x 7-inch glass baking dish; top with hen halves. Bake 30 minutes.
  • Dish may be prepared up to this point. Turn the oven to warm, cover the dish with foil, and leave in the oven until guests arrive.
  • When guests arrive, combine preserves and mustard; brush hens with preserve mixture. Continue baking 15 to 25 minutes or until hens are no longer pink inside and glaze is golden brown.
