An easy way to serve brunch for a crowd. You can also prep this the night before, keep covered in the fridge overnight and bake in the morning! If you can get coconut yogurt it's an excellent addition to serve it with.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 19

1 stick (8 tablespoons) unsalted butter, softened
1 tablespoon agave
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup seedless raspberry jam
1 tablespoon lemon juice (about 1/2 lemon)
1 cup unsweetened coconut flakes, toasted
1 cup full fat coconut milk
3 tablespoons agave
2 tablespoons millet flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Pinch kosher salt
1 ripe banana
Coconut oil or vegetable oil, for brushing the skillet
Four 1-inch-thick slices challah bread
Fresh raspberries, for garnish

Steps:

  • For the spiced butter: Put the butter in a small bowl. Add the agave, cinnamon, ginger and nutmeg and mash with a spoon until smooth. Transfer to a ramekin.
  • For the raspberry sauce: Add the jam and lemon juice to a small skillet and cook over low heat until melted and bubbling around the edges, 1 to 2 minutes. Keep warm or reheat before serving.
  • For the French toast: Combine 3/4 cup of the toasted coconut, the coconut milk, agave, millet flour, cinnamon, ginger, nutmeg, salt and banana in a blender. Blend on high until very smooth. Pour into a baking dish.
  • Heat a large nonstick skillet or griddle over medium heat. Brush with oil. Soak the challah in the batter, 15 to 30 seconds per side (to wet it, but don't saturate it). Add to the skillet and cook until caramelized on the bottom, about 2 minutes. Flip and cook the second side, about 2 minutes more.
  • Serve the French toast with the spiced butter and raspberry sauce, garnish with fresh raspberries and the remaining 1/4 cup toasted coconut.

Coconut Cream Cheese Filling, recipe follows
French Toast Batter, recipe follows
2 to 4 teaspoons canola oil
1/2 cup raspberry puree
1 cup strawberries, diced
4 bananas
1/2 cup granulated sugar
1/2 cup shredded coconut
Serving suggestions: ground cinnamon, confectioners' sugar and maple syrup
8 ounces cream cheese, at room temperature
1/4 cup mascarpone, at room temperature
1 cup shredded coconut
1/4 cup honey
1/2 teaspoon coconut extract
1/2 teaspoon vanilla extract
6 eggs
1 1/4 cups whole milk
1/4 cup heavy cream
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 teaspoon ground nutmeg

Steps:

  • Cut the bread into 5 thick slices, each about 2-inches thick. Split the top of each slice open in the middle, creating a pocket. Stuff each pocket with 1/2 cup of the Coconut Cream Cheese Filling. Dip each piece of stuffed toast into the French Toast Batter, coating completely.
  • Add 2 teaspoons of the oil to a pan set over medium heat. Place some pieces of the toast into the hot pan and cook until brown on both sides and heated through in the middle, 3 to 4 minutes per side. Repeat for the remaining toast, adding more oil as needed to the pan.
  • Transfer the raspberry puree to a squeeze bottle. Drizzle some raspberry puree in a circle on each serving plate. Sprinkle some strawberries on top. Cut the French toast slices in half on the bias and shingle 2 halves on each serving plate.
  • Cut the bananas in half lengthwise and then split in half again widthwise. Place the bananas cut-side up on a sheet tray. Sprinkle the bananas with the granulated sugar to coat. Using the torch, melt the sugar until golden in color. Carefully place 3 pieces of banana on each plate next to the French toast.
  • Sprinkle the coconut on the plates, then dust each with cinnamon and confectioners' sugar and serve with maple syrup.
  • In a large mixing bowl, using an electric mixer, whisk together the cream cheese and mascarpone. Add in the shredded coconut, honey, coconut extract and vanilla extract, and mix until combined.
  • Crack the eggs into a large mixing bowl and beat with a wire whisk. Add the milk, cream, brown sugar, cinnamon, almond extract, vanilla extract and nutmeg, and mix together until combined. Refrigerate until needed.

BANANA-NUT FRENCH TOAST SANDWICHES

Banana-Nut French Toast Sandwiches image

For a heartier take on banana-nut bread, spread a mixture of bananas, brown sugar, and walnuts between slices of golden brioche before battering and frying. Line up the resulting French toast sandwiches on a large platter, and top with the remaining warm banana mixture before serving for brunch.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Number Of Ingredients 13

1 1/2 cups walnut halves
6 large eggs
1 1/2 cups heavy cream, half-and-half, or milk
2 tablespoons pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of ground nutmeg
Pinch of salt
6 ripe but firm bananas, peeled and cut into 1/4-inch rounds
1 1/2 cups packed dark-brown sugar
12 slices of bread, (1/2 inch thick), such as brioche or challah, preferably day old
8 tablespoons (1 stick) unsalted butter
4 tablespoons vegetable oil
Pure maple syrup, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Place walnut halves on a rimmed baking sheet, and toast until lightly browned and fragrant, about 10 minutes. Set aside. When cool, chop walnuts coarsely.
  • Whisk together eggs, cream, vanilla extract, cinnamon, nutmeg, and salt in a medium bowl, and set aside. Combine bananas, dark-brown sugar, and toasted walnuts in another bowl. Lay out 6 slices of bread on work surface. Top each slice with 1/3 cup of the banana mixture. Top with remaining bread slices; press gently to seal the sandwiches.
  • Place sandwiches in a shallow baking dish (or two dishes) large enough to hold them in a single layer. Pour egg mixture over bread, and soak 10 minutes. Carefully turn sandwiches over, and soak until bread is soaked through, about 10 minutes more.
  • Reduce oven temperature to 250 degrees. Place a wire rack on a baking sheet; set aside. Heat remaining banana mixture in a small skillet over medium-low heat until sugar is melted and bananas are soft and slightly translucent, about 3 minutes. Add 4 tablespoons butter, and stir to combine; keep warm.
  • Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a large skillet over medium heat. Fry half of the sandwiches until golden brown, 2 to 3 minutes per side. Transfer to wire rack, and place in oven while cooking remaining sandwiches. Wipe out skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Cut into triangles, and serve with warm banana mixture and maple syrup, if desired.
