- il giorno prima mettere in ammollo i fagioli (eventualmente anche le castagne)
- al momento della preparazione, in 2 litri di acqua leggermente salata lessare i fagioli
- sbucciare le castagne e lessare anche loro in acqua leggermente salata con le foglie di lauro, con il lardo e le verdure preparare un trito (lasciare indietro il prezzemolo), in una pentola di coccio con poco olio far appassire il trito

- far cuocere ancora una mezzoretta prima di servire ben la zuppa ben calda, aggiungere il prezzemolo tritato finissimo, lasciare a disposizione crostini di pane in mancanza di Carasau e pecorino giovane grattugiato.

- Begin by sautéing a few slightly crushed garlic cloves in abundant olive oil. If you like, you can add a bit of peperoncino to sauté in the olive oil along with the garlic.
- When the garlic begins to give off its aroma and is just barely beginning to brown, add tomato. Season with salt and pepper (going light on the salt since the shellfish will be salty) and finely chopped parsley, then allow the tomatoes to simmer for about 10 minutes or so, or until they begin to reduce and reach a saucy consistency. Then add a splash of white wine.
- Add your seafood, starting with the varieties that take the longest to cook, then progressively adding those that take less time: Begin with the mollusks. With very young calamaretti (baby cuttlefish) let them simmer about 10 minutes before you add any other fish. Octopus or mature squid (which you should cut up into bite-sized pieces) will take much longer, usually about 30 minutes.
- Then add the fish and let that cook for another five to ten minutes, depending on the size.
- Then add shrimp or scallops, if using, along with the clams and mussels and simmer them until they open.
- Sprinkle with a bit more finely chopped parsley and serve immediately.

- Soup base:.
- In a large, heavy-bottom pot over medium-high heat, sauté the leeks and fennel in the olive oil until translucent. Stir in the pepper and tomato paste and continue cooking until the tomato paste has darkened in color and thickened slightly, about 5 minutes, stirring constantly.
- Stir in the Arborio rice, then the fish stock, scraping any flavoring from the bottom of the pan. Bring to a simmer over high heat, then reduce the heat to maintain a simmer and continue cooking until the rice is tender, about 15 minutes.

- Meanwhile, season each piece of cod with a light pinch each of salt and pepper. Lightly dredge the fish in flour. Heat a large skillet over medium high heat, and add the remaining olive oil. When the oil is hot, add the fish pieces a few at a time and sauté until lightly golden on both sides and the fish is firm and opaque, 2 to 4 minutes on each side.
- Divide the soup between 8 warm bowls and top with the sautéed cod. Serve immediately.

- Incidete le castagne con l'aiuto di un coltello e cuocetele in acqua bollente e salata, con una foglia di alloro e rosmarino, per circa 15 minuti. Una volta pronte, sbucciate le castagne e tenetele da parte. Sbucciate e tritate lo scalogno e rosolatelo in padella con l'olio e qualche foglioline di salvia. Aggiungete la zucca a dadini, lasciate insaporire per qualche minuto e poi coprite con brodo vegetale o acqua calda e lasciate cuocere per 15 minuti, o fino a quando la zucca non sarà ammorbidita. Aggiungete sale e pepe, unite anche le castagne, tenendone alcune da parte per la decorazione, e cuocete ancora per qualche minuto. Togliete la pentola da fuoco e frullate il tutto, fino ad ottenere una vellutata. Aggiungete un po' di noce moscata, e aggiustate di sale e pepe se necessario. Servite la vostra zuppa di zucca e castagne con un filo d'olio extravergine d'oliva e con le castagne tenute da parte e sbriciolate.

ZUPPA DI SANTA LUCIA

- Soak the porcini in a cup of warm water for at least 30 minutes. Drain the liquid, straining it through a fine strainer to remove any sand. Reserve the strained liquid, re-rinse the mushrooms, pat them dry, and chop finely.
- Place 4 tablespoons of the olive oil in a large soup pot over medium heat. Saute the onion and garlic for about 5 minutes until wilted. Add the porcini and the white mushrooms and cook for 10 minutes. Add the porcini liquid, tomatoes, salt, pepper, marjoram, thyme, and the stock. Bring to a boil, lower heat, and allow to simmer for 15 minutes.
- Combine the egg yolks, Parmesan, and pecorino in a mixing bowl, then gradually whisk 1 cup of the hot soup into the mixture to warm it. Then whisk the egg mixture directly into the simmering pot, stirring to thicken the soup. Add the parsley and cook for 5 more minutes.

- Incidi la base delle castagne con un taglio a croce; lessale in acqua bollente salata per circa 40 minuti, aromatizzando con una foglia di alloro. Unisci all'acqua di cottura 3 cucchiai di olio extra vergine di oliva che semplifica, rendendo più morbida la pellicina interna, la noiosissima operazione di sbucciatura delle castagne. Tieni da parte.
- Lessa nel frattempo le lenticchie in acqua profumata con sedano carote e cipolla per circa 20 minuti. Io ho usato il dado fatto da me essiccando tutte le verdure e ho aggiunto anche una patata divisa in 4 per avere alla fine un zuppa un po' più cremosa. Mentre le lenticchie cuociono, taglia a brunoise (quadretti molto piccoli) la cipolla, il sedano e la carota; versa in un tegame alto un filo di olio extra vergine di oliva e, aggiungendo nella stessa successione ( cipolla, sedano e carote) fai appassire le verdure. Solo alla fine unisci i pomodoretti lasciandoli cuocere una decina di minuti. Frulla una parte di lenticchie e le patate e lasciane intere la maggior parte. Unisci al battuto le lenticchie scolate (senza buttare la loro acqua!) e falle insaporire per qualche minuto.
- Versa sulle lenticchie tanta acqua di cottura quanto basta per avere la consistenza della zuppa che ti piace, aggiungi le castagne e lascia sobbollire per una decina di minuti, giusto il tempo che i sapori si amalgamino. Servi la zuppa di lenticchie e castagne versandola nei piatti individuali in cui puoi disporre una fetta di pane casereccio raffermo; completa con un giro di olio extra vergine di oliva, una macinata di pepe nero e un pizzicone di prezzemolo tritato. - Make soup: Rinse squid under cold running water and pat dry.
- If squid are large, halve ring of tentacles, then cut longer tentacles crosswise into 2-inch pieces.
- Pull off flaps from squid bodies and cut into 1/4-inch-thick slices. Cut bodies crosswise into 1/4-inch-thick rings.
- Pat shrimp dry and sprinkle with pepper and 1/4 teaspoon salt.
- Heat oil in a wide 6- to 8-quart heavy pot over moderately high heat until hot but not smoking, then sear shrimp in 2 batches, turning over once, until golden but not cooked through, about 2 minutes per batch.
- Transfer shrimp with a slotted spoon to a bowl.
- Add garlic, red pepper flakes, and oregano to pot and sauté, stirring, until golden, about 30 seconds.
- Add wine and 1/2 cup water and bring to a boil. Stir in clams and cook, covered, over moderately high heat until shells open wide, checking frequently after 6 minutes and transferring as opened with a slotted spoon to bowl with shrimp. (Discard any unopened clams after 8 minutes.)
- Stir in mussels and cook, covered, over moderately high heat until shells open wide, checking frequently after 3 minutes and transferring as opened with a slotted spoon to bowl with shrimp. (Discard any unopened mussels after 6 minutes.)
- Put oven rack in middle position and preheat oven to 425°F
- Add stock to pot along with remaining 4 cups water, tomatoes with juice, sugar, and remaining 1/2 teaspoon salt and simmer, uncovered, 15 minutes.
- Make toasts while stock simmers: Arrange bread slices in 1 layer on a baking sheet, then drizzle with oil and season with salt.
- Bake, turning over once, until golden, about 10 minutes total. Transfer toasts to a rack to cool slightly, then rub lightly with cut sides of garlic and sprinkle with parsley.
- Finish soup: Add halibut to stock and cook at a bare simmer, covered, until just cooked through, about 2 minutes.
- Stir in squid and reserved shellfish, then remove from heat and let stand, covered, 1 minute. Stir in basil and parsley and serve immediately, with toasts alongside for dipping.

- Iniziare a preparare la Zuppa di ceci e castagne mettendo a bagno il giorno prima i ceci per ammorbidirli. Passato il tempo necessario, risciacquateli sotto l'acqua corrente e scolateli quindi metteteli a lessare in in acqua per un'ora circa con una foglia di alloro e un rametto di rosmarino.
- A parte intanto mettere a cuocere in abbondante acqua le castagne per circa 30-35 minuti. Fatele raffreddare sotto l'acqua per velocizzarvi e pulitele. Ridurre le castagne in pezzetti ed aggiungerle ai ceci, e continuare la cottura.
- In una padellina versarci un goccio di olio e mettere la cipolla tritata ed appassire, appena pronta aggiungerla alla zuppa. Verso fine cottura prendere due cucchiaiate di ceci e con l'aiuto di un frullatore ridurle in crema.
- Aggiungere questa crema alla zuppa per addensarla. Togliere la foglia di alloro e il rosmarino, aggiustare di sale e pepe. La vostra Zuppa di ceci e castagne è pronta per essere servita.
