2 small zucchini, cut into 1/4-inch slices
2 small yellow summer squash, cut into 1/4-inch slices
1 medium onion, thinly sliced

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 2 tablespoons drippings. , In the drippings, saute the zucchini, yellow squash and onion for 6-8 minutes or until crisp-tender. Sprinkle with bacon.

My grandmother used to make this as I was growing up. I never liked squash but have grown to love this dish. I have tweaked it over the years as my grandmother never seasons anything.

4 -6 zucchini, sliced
1 lb bacon
1 small onion, chopped
3 -4 tomatoes, quartered
garlic, minced, to taste
salt & pepper, to taste

Steps:

  • Cut bacon into approximately 1-inch size pieces and fry until crisp. Add chopped onion and sauté for a few minutes to lightly brown.
  • Add sliced zucchini, minced garlic, salt, pepper and stir.
  • Cover and lower heat. Simmer on low heat, stirring occasionally until squash gets soft.
  • Add quartered tomatoes and simmer for 5-10 minutes more.

1/2 teaspoon minced garlic
3 large zucchini squash, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese

Steps:

  • Heat the olive oil in a medium skillet over medium heat. When hot, add the garlic and saute for 2 minutes, or until fragrant; don't let it brown. Add the squash, salt and pepper and cook until the squash is tender but still slightly crisp, about 5 minutes. Transfer the squash to a serving dish and sprinkle with the Parmesan cheese.

1 teaspoon Italian seasoning

Steps:

  • Heat the oil and butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until just softened, about 5 minutes. 1 lb rotini pasta or 1 lb bow tie pasta, cooked according to package directions
1 -2 large onion, coarsely chopped
3 -4 zucchini (~8 inch) or 2 zucchini and 2 yellow squash, coarsely chopped
1/4-1/2 lb bacon, cooked and crumbled
1 -2 tablespoon olive oil
1/2 cup shredded asiago cheese, divided
1/3-1/2 cup grated parmesan cheese
fresh ground black pepper, to taste

Steps:

  • Heat olive oil in a very large skillet (I like to use my cast iron chicken fryer), and begin to saute onion on medium-high heat.
  • When onion is half cooked add squash and saute, stirring frequently until onion is browned and squash is nearly cooked.
  • Add bacon, Parmesan, and black pepper. Cover and let rest 3-5 minutes to soften cheese.
  • Toss with hot pasta and 1/4 cup Asiago cheese. Turn into serving dish. Top with remaining Asiago Cheese.

  • Over medium heat, add butter and EVOO to pan, let it get hot.
  • Add zucchini and squash.
  • Stir to coat veggies with oil and butter.
  • Sprinkle Mrs Dash generously over veggies.

  • Uncover the last 5 minutes to allow water to evaporate.

1/4 cup cornmeal
1/8 cup flour
1/2 teaspoon pepper

6 ounces crookneck yellow squash, in 1/4 inch slices
2 tablespoons canola oil

Steps:

  • In large skillet, cook bacon on medium heat until crisp. Reserve drippings in skillet. Remove bacon; drain on paper towels; Crumble and set aside.
  • Add onion to bacon drippings and saute until soft and slightly golden. Remove onion and set aside. Reserve drippings in skillet.
  • Mix cornmeal, flour, pepper, and salt in bowl. Dredge each piece of squash in cornmeal mixture covering both sides. Place on plate.
  • Heat bacon drippings and canola oil on medium-high heat. Add enough yellow squash and zucchini slices to cover bottom of pan. Cook until centers and edges are brown, about 2 to 3 minutes per side. Drain.
  • Repeat until all squash is fried. Place in serving bowl; toss with onion and garnish with bacon pieces.

  • Cut bacon into thin slices (with knife or kitchen scissors). Thinly slice red onion. Cut zucchini in bite sized chunks. Peel carrot and cut into chunks. Set aside.
  • Place bacon pieces in skillet with thin slices of red onion. You don't need to spray skillet, because the bacon will provide it's own "oil" as it cooks. Sauté on medium heat until bacon is crisp and fat (bacon grease) is rendered into skillet.
  • Add green and yellow zucchini (cut into bite sized chunks), and carrot to skillet. Season with a pinch or two of salt and pepper (to taste). Stir and cook in the bacon "drippings" for 4-5 minutes on medium heat, stirring occasionally, until zucchini is slightly browned, and tender-crisp (NOT soggy!). The reason to put the garlic in at the last minute is so that it does not burn (which makes the garlic taste bitter- no one wants THAT!).
  • Sprinkle grated sharp cheddar cheese over the top of the veggies. Do NOT stir. Turn off heat. Place a skillet lid over top of skillet for about a minute (this will melt the cheese). Remove skillet lid, and you will see the cheese has melted. Use a spatula and transfer veggies to individual serving plates. Serve hot... and enjoy!
