ZUCCHINI OATMEAL MUFFINS
A delicious sweet muffin filled with shredded zucchini, oats, brown sugar and cinnamon.

Steps:
- Preheat oven to 350 degrees and line a 12-cup muffin pan with muffin liners. (optional)
- In a medium bowl, stir together the zucchini, brown sugar, sugar, vegetable oil, eggs and vanilla.
- In a separate bowl, add the flour, oats, baking powder, baking soda, salt, and cinnamon. Stir until well combined.
- Mix the wet ingredients with the dry ingredeints and stir until well combined.
- Scoop the batter into the muffin pan, filling each cup 2/3 of the way full.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
- Cool in the pan for 10 minutes, then remove muffins from the pan and allow to cool completely on a wire cooling rack.

ZUCCHINI OATMEAL BREAD
Yummy zucchini bread made a little more healthy with the addition of oatmeal. This makes a very moist and healthy bread! Prep time does not include the cooling time after cooking!

Steps:
- Combine the first 8 ingredients in a large mixing bowl; make a well in the center of the mixture. Set aside.
- Combine eggs, oil, and vanilla in a bowl; beat with a wire whisk until blended. Stir in zucchini and walnuts. Add to the dry ingredients, stirring just until moistened.
- Spoon batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove bread from the pan, and let cool completely on a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 muffin pans.
- Whisk warm water and flaxseed together in a large bowl. Mix in sugar, applesauce, oil, and vanilla extract. Stir in zucchini until well combined.
- Sift oat flour, all-purpose flour, baking powder, cinnamon, nutmeg, salt, and baking soda into a bowl. Stir in raisins and combine with the zucchini mixture until batter is just mixed.
- Transfer batter into muffin cups using 1/4 cup measure.
- Bake in the preheated oven until a knife inserted into a muffin comes out clean, 50 to 55 minutes.

This recipe is from my mother-in-law and it's the only way to get my husband to eat bananas and my kids to eat zucchini. I make them into muffins because they get eaten faster than the bread. But it's great either way.

- Mix bananas, white sugar, zucchini, applesauce, eggs, brown sugar, and vanilla extract together in a bowl. - Mix dry ingredients together in large bowl. Mix eggs, oil and shredded zucchini together and pour over dry ingredients. Mix until moinstened.

These are moist, but not heavy. They are very easy. I use the food processor to chop the zucchini and measure the oil before the molasses so that the molasses just slides right out. I developed this recipe to get my quota of Oat Bran and use my zucchini.

OATMEAL ZUCCHINI MUFFINS
This is a low-fat oatmeal muffin that I added zucchini to. I changed the baking time to 25-30 minutes, I found the center to be a little undercooked at 20 minutes, but it could be because I used frozen shredded zucchini and it was pretty watery...not sure.
