- Spray 9 1/2-inch deep-dish glass pie plate with cooking spray. Arrange bread cubes in bottom of pie plate. Spoon apples evenly over bread; sprinkle with ham and cheese.
- In medium bowl, beat eggs, half-and-half and pepper with wire whisk until well blended. Carefully pour over apples, ham and cheese. Cover; refrigerate at least 6 hours or overnight.
- Heat oven to 350°F. Bake uncovered 40 to 45 minutes or until top is lightly browned and center is set. Let stand 10 to 15 minutes before serving.

CARAMEL APPLE STRATA
Steps:
- In a small saucepan, combine brown sugar, butter and corn syrup. Bring to a boil over medium heat, stirring constantly. Cook and stir 2 minutes or until thickened. Set aside., In a small bowl, combine apples, lemon juice, sugar and pie spice. Arrange half of the bread slices in a greased 13x9-in. baking dish. Top with apples; drizzle with half of the caramel sauce. Sprinkle with pecans; top with remaining bread., In a large bowl, combine eggs, milk, salt and vanilla. Pour over top. Cover and refrigerate overnight. Cover and refrigerate remaining caramel sauce., Remove strata from refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting., In a microwave, heat the reserved sauce. Drizzle warm sauce over strata.

- Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
- In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
- Preheat oven to 325 degrees F (165 degrees C).
- Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

- Place 6 of the bread slices in 13x9-inch baking pan sprayed with cooking spray. Cover with layers of half each of the sausage, apples and process cheese. Repeat layers.
- Beat eggs, milk and seasonings with wire whisk until well blended. Pour over process cheese slices. Gently press remaining 6 bread slices into liquid to completely cover bread slices; cover. Refrigerate several hours or overnight.

- Preheat oven to 325°F.
- Place bread in a single layer in the bottom of a 9x9 inch baking dish.
- Place sausage and apple in a large skillet, cover and cook over medium heat for 5 minutes.
- Uncover and cook 3 minutes or until the sausage are lightly browned, the apples are soft and the pan juices evaporate.
- Spoon the apple sausage mixture over the bread and top with cheese.
- Place eggs and milk in a bowl and whisk to combine.
- Pour mixture over cheese, let stand 5 minutes or cover and refrigerate overnight.
- Bake 30 minutes (35-40 if refrigerated) or until eggs are set in the center.
- Cut into squares before serving.

- Grease an 8-inch square baking dish.
- Place apples, butter, brown sugar, 1/2 tablespoon cinnamon, and salt into a skillet over medium heat. Saute until sugar bubbles, about 5 minutes. Set aside.

- Lightly spray an 8x8 casserole dish, then arrange the bread slices, standing up and next to each other. Between each slice, add a Canadian bacon slice, and a few thin slices of apple. Sprinkle about 1/3 of the grated cheese between the slices.
- In a large mixing bowl, combine the eggs, milk, mustard and a pinch of salt. Whisk whisk whisk until totally incorporated. Pour the mixture over the bread in the casserole dish, and sprinkle with the remaining grated cheddar cheese. If needed, push the tops of the bread down into the mix, to make sure everything touches the egg/milk mixture. Cover and refrigerate for at least 4 hours. Overnight if you can!
- Preheat oven to 350. Uncover and and bake for an hour an a half, checking at the one-hour mark. If the top of the bread and cheese are starting to brown, lightly tent with foil to make sure it doesn’t burn. Bake until the eggs and milk are set, about an hour and a half.
