HONEY BROWN ROLLS OR LOAVES
This bread is just like the bread served at several famous casual dining chains. It's very moist, sweet and just hard to stop eating! Great with soup.

Steps:
- Place the water, sugar, butter, honey, bread flour, whole wheat flour, vital wheat gluten, cocoa powder, instant coffee granules, salt, and yeast into the pan of a bread machine in the order recommended by the manufacturer. Set the machine for the dough setting, start, and allow machine to complete cycle.
- Remove the bread pan with dough from the machine, and set pan into warm water (about 90 degrees F, 32 degrees C). Cover the top of the pan with a towel, and allow the bread to rise in the pan until doubled, about 1 hour.
- Turn the dough out onto a floured work surface, punch down, and divide into 12 equal pieces for rolls, or 3 pieces for small loaves. Form the dough into balls. Line a baking sheet with parchment paper, and place rolls on the prepared baking sheet. Sprinkle with sesame seeds. Place the baking sheet into a warm place, and allow to rise until bread is doubled, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Spray the inside of the preheated oven with water, and immediately place rolls in oven. Bake until rolls are light golden brown, 15 to 20 minutes. For loaves, bake until browned and they sound hollow when tapped, 20 to 25 minutes.

HONEY DINNER ROLLS
I first made these in 2000. These are my favorite dinner rolls! I got the recipe out of a cookbook that famous country singers contributed to. This was sent in by Steve Wariner. You'll have no room for dinner after you start eating these! I make my rolls a bit bigger, so of course my yield is considerably less then recipe states.

Steps:
- Combine 2 cups flour and yeast in a large mixer bowl. Heat milk, honey, margarine and salt just until warm (115 to 120°F) and margarine is almost melted, stirring constantly. Add to flour mixture; add eggs.
- Beat at low speed of electric mixer for 30 seconds; scrape sides of bowl constantly. Beat for 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.
- Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 mins). Shape into a ball. Place dough in a greased bowl, then turn it once. Cover dough and let rise in a warm place till double (about 1 hour). Punch dough down; divide in half. Cover again; let rest 10 minutes.
- Cut each dough half into 18 equal pieces. Roll into balls, and place in greased 2 1/2-inch muffin pans. Let rise until doubled (about 30 mins).
- Bake in a 375°F oven for 12 to 15 minutes. Remove from pan. Cool on a wire rack.
- Makes 36 rolls.
HONEY WHEAT BREAD LIKE OUTBACK
You know that bread they serve at Outback Steakhouse? Well, topsecretrecipes.com has got the recipe pretty close. If you want the exact color, you will have to use food coloring, but the taste is very good. Serve warm with whipped butter.

Steps:
- Place all ingredients in a bread machine in the order listed above and use the dough setting.
- When it is done, let it rise for about an hour.
- When the dough is twice its original size, punch it down and split it into rolls.
- If you want authentic Outback size, make about 8 tubular loaves.
- I prefer to make 12 rolls.
- The dough is sticky, so make sure you use a well-floured cookie sheet and plenty of flour on your hands.
- Sprinkle the entire surface of the loaves with cornmeal and then let them rise again.
- Bake for 20-24 minutes at 350.

When I was searching for a moist bread that wouldn't crumble when thinly sliced, a friend urged me to try her grandmother's age-old recipe. It slices perfectly.

Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top.
