These have to be one of the BEST cupcakes I've ever made!! The chocolate extract REALLY makes it, so it's worth finding. As well as the little hint of almond. For the frosting, I've actually used a little less powdered sugar and it was plenty sweet (1 1/2-3/4 cup)

1 cup soymilk
1 teaspoon apple cider vinegar
1 1/4 cups all-purpose flour
1 cup granulated sugar
2 tablespoons cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup canola oil
2 tablespoons red food coloring
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 teaspoon chocolate extract
1/4 cup margarine, non-hydrogenated, softened (Earth Balance)
1/4 cup vegan cream cheese, softened (Tofutti, Better Than Cream Cheese)
2 cups powdered sugar, sifted
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees and line muffin pans with liners.
  • Whisk together the soy milk and vinegar and set aside to curdle.
  • Sift the flour, sugar, cocoa, baking powder, baking soda, and salt into a large bowl and mix.
  • Add the oil, food coloring, chocolate extract, Vanilla extract and almond extract to the curdled soy milk. Whisk well to combine.
  • Make well in center of dry ingredients and gently fold wet ingredients into dry, mixing until large lumps disappear.
  • Do not over mix, oryour cupcakes will turn out gummy - small lumps are okay.
  • Fill cupcake liners about three-quarters full as these cupcakes will rise fairly high.
  • Place in hot oven and bake 18-20 minutes until done, or until toothpick inserted in cetner comes out clean.
  • Cool cupcakes in the pan for five mintues, and then transfer to a cooling rack or surface to cool completely.
  • For frosting:.
  • Using a hand mixer, cream together margarine and cream cheese until just combined, then whip in the powdered sugar in 1/2 cup batches.
  • Scrape down the sides and mix until smooth and creamy.
  • Mix in the vanilla.
  • Keep tightly covered and refrigerated until ready to use.

1 teaspoon Baking Soda
1/2 teaspoon Salt
1 Tablespoon Cocoa Powder (Unsweetened)
1 cup Vegan Buttermilk
2 teaspoons Vanilla Extract
1/2 cup Canola Oil ((120ml) or Vegetable Oil)
1 Tablespoon Distilled White Vinegar
1 teaspoon Red Gel Food Color
1/2 cup Vegan Butter ((112g))
4 cups Powdered Sugar ((480g))
1 Tablespoon Cocoa Powder (Unsweetened)
1 teaspoon Vanilla Extract
1/4 teaspoon Red Gel Food Color (*See Notes)
2-3 Tablespoons Soy Milk

Steps:

  • Preheat the oven to 350°F (180°C). Line a cupcake tray with cupcake liners. Set aside.
  • Sift the flour into a mixing bowl. Add the sugar, baking soda, salt and cocoa powder and mix together.
  • Prepare the vegan buttermilk by adding 1 Tbsp lemon juice into a measuring jug and then adding soy milk up to the 1 cup (240ml) line and allowing to sit for a minute to curdle into buttermilk.
  • Add the vegan buttermilk, vanilla extract, oil, vinegar and red gel food color to the mixing bowl and whisk briefly with a hand whisk to combine into a batter. Don't over-mix.
  • Divide the batter evenly between the cupcake liners.
  • Place into the oven and bake for 20 minutes or until a toothpick inserted into the center of one of the cupcakes comes out clean.
  • Allow to cool completely before frosting.
  • Add vegan butter, powdered sugar, cocoa powder, vanilla extract, red gel food coloring and 2 Tbsp soy milk to the bowl of your stand mixer. Starting at slow speed, gradually increase speed until the frosting is thick and smooth. If needed, add the extra soy milk.
  • Pipe the frosting on top of your completely cooled cupcakes and serve.

150 grams unsweetened dairy-free milk, room temperature
1/2 tbsp apple cider vinegar
188 grams all-purpose flour or 1-to-1 gluten free flour with 1 tbsp cornstarch or arrowroot powder
1 tbsp cocoa powder
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
57 grams vegan butter, melted and cooled to room temperature
125 grams granulated sugar or coconut sugar
125 grams unsweetened dairy free yogurt, room temperature
1 tsp vanilla extract
1/2 oz vegan red food coloring or 2 tbsp beet powder
1 cup vegan cream cheese, room temperature*
1 cup vegan butter, room tempearture
3 cups powdered sugar
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350F. Line a 12-cup cupcake tin with liners. Measure out all ingredients before beginning. In a small bowl, combine the dairy free milk and apple cider vinegar. Mix together and set aside to curdle.
  • In a small bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and sea salt. Set aside.
  • In a medium bowl, use a whisk or hand mixer to mix together the melted vegan butter, sugar, dairy free yogurt, vanilla, and red food coloring. Mix until completely combined. Then add in the flour and curdled dairy free milk, and whisk the flour into the batter just until combined.
  • the cupcakes: Divide the batter evenly into each cupcake liner, filling each cupcake about 2/3 of the way full. Place the cupcake tin into the oven to bake for about 25-27 minutes, or until a toothpick comes out clean. Remove the cupcakes from the oven.
  • Allow the cupcakes to cool in the cupcake tin for 10 minutes. Then transfer them to a cooling rack to cool completely before making the vegan cream cheese frosting.
  • Add vegan butter and vegan cream cheese to a large bowl and beat together with a hand mixer. Add in 1 cup of powdered sugar at a time, continuing the beat the mixture until it's a thick buttercream. Add in vanilla and continue to beat until desired texture.
  • Spoon the vegan cream cheese frosting into a piping bag and frost each cupcake. Serve and enjoy!

2 1/2 cups unbleached flour
1 1/2 cups turbinado or other raw sugar
8 tablespoons margarine
1 cup soymilk
1/2 cup unsweetened applesauce
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon vinegar
2 ounces vegan red food coloring (or beet juice)
1 cup confectioners' sugar
8 ounces vegan cream cheese
8 tablespoons margarine
1 teaspoon vanilla
1/2-1 cup vanilla soymilk

Steps:

  • Preheat oven to 350 degrees. In a cup pour the milk and add the lemon juice. Let sit while preparing the next dew ingredients. This makes buttermilk. Cream together the margarine, vegan sugar and then add the applesauce and flour.
  • In a small bowl mix together cocoa and food coloring to form a slight paste. Add it to the creamed mixture. Mix the salt and flour together and add it to the batter alternating with the buttermilk in three batches, mixing after each addition. Add vanilla extract. Mix in baking soda and vinegar. Pour batter into 2 greased cake pans (I used round) and bake for 40 minutes or until toothpick comes out clean.
  • Frosting:.
  • Mix softened cream cheese and margarine together. Add vegan sugar vanilla and soymilk. Mixture will be very soft (almost a glue-like texture). After cake cools slightly put one layer on a plate and pour some frosting over so that it runs down the sides. Let cool a little more and add the next layer and repeat process.

¼ cup refined coconut oil, solid
1 ¾ cups all-purpose flour

½ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
4 teaspoons red food coloring, plus more for decorating
⅓ cup unsweetened applesauce

Steps:

  • Preheat the oven to 350°F (180°C).
  • Grease a 12-cup muffin tin or line with paper liners.
  • In a liquid measuring cup or small bowl, combine the almond milk and lemon juice, stir with a fork, and set aside for 5-8 minutes until it appears curdled.
  • In a large bowl, cream together the sugar and coconut oil with an electric hand mixer until smooth.
  • Add the the flour, cocoa powder, baking soda, baking powder, salt, vanilla, apple cider vinegar, red food coloring, applesauce, and almond milk mixture, and stir with a rubber spatula until well combined.
  • Use an ice cream scoop to fill each muffin cup about ¾ of the way.
  • Bake for 20- 25 minutes, until a toothpick inserted in the center of a cupcake comes out clean
  • Make the frosting: In a large bowl, cream the vegan butter with an electric hand mixer until smooth. Add the vegan cream cheese. Sift in half the powdered sugar and beat to combine. Sift in the rest of the powdered sugar and beat again.
  • Fold in the vanilla and lemon zest with a rubber spatula until well combined.
  • Scoop about 2 tablespoons of frosting onto each cupcake and smooth out with a butter knife. Use a wooden skewer and more red food coloring to decorate to your liking.
  • Enjoy!
