1 to 2 tablespoons whole milk
1 teaspoon poppy seeds

Steps:

  • Bread: Preheat oven to 350 degrees. Butter a 10-by-5-inch loaf pan. Line with parchment, leaving an overhang on two long sides, then butter and flour paper.
  • Whisk together flour, sugar, cocoa, baking powder, salt, and baking soda. In another bowl, stir together butter, eggs, vanilla, and zucchini. Stir into dry mixture, then fold in chocolate. Pour into pan, smoothing top with a spatula. Bake until a skewer inserted into the center comes out clean, about 1 hour 20 minutes. Let cool 20 minutes on a wire rack, then remove from pan and cool completely.
  • Glaze: In a small bowl, combine sugar and milk. Whisk until smooth. Pour glaze over bread, then sprinkle with poppy seeds. Let stand until set, about 20 minutes, then cut into slices to serve. Bread will keep, unglazed, at room temperature for up to 3 days.

2½ teaspoons ground cinnamon

2 cups grated zucchini (you'll need two medium zucchinis; do not wring out the liquid)
2 sticks (1 cup) unsalted butter, melted and slightly cooled

Steps:

  • Preheat oven to 325°F and set rack in middle position. Generously grease two 8½ x 4½-inch loaf pans with nonstick cooking spray.
  • In a medium bowl, combine the flour, cinnamon, nutmeg, baking soda, baking powder and salt. Use a whisk to mix well.
  • In a large bowl, whisk the eggs with the sugar. Add the grated zucchini, melted butter, and vanilla extract; using a wooden spoon or rubber spatula, stir to combine.
  • Add the dry ingredients to liquid ingredients and mix until just combined. Add the nuts and currants, then divide the batter evenly into the prepared pans. Bake for 60 to 65 minutes, or until a cake tester comes out clean. Set the pans on a wire rack and let cool for about 10 minutes, then turn the loaves out onto rack to cool completely.
  • Note: You can also add chocolate chips to this bread. I typically use between ¾ to 1 cup chocolate chips instead of nuts and currants. Whatever combination you use, just be sure total add-ins (nuts, currants, chips) do not exceed 1½ cups.
  • Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.

This fluffy zucchini bread recipe is made healthier with whole grains, honey (or maple syrup) and coconut oil instead of butter. It is easily made vegan and/or gluten free (see notes). Recipe yields 1 loaf.

Optional: 3/4 cup roughly chopped raw walnuts or pecans
1/3 cup melted coconut oil or extra-virgin olive oil*
1/2 cup honey or maple syrup
2 eggs
1/2 cup milk of choice or water
1 teaspoon baking soda
1 teaspoon ground cinnamon + more to swirl on top
2 teaspoons vanilla extract
1/2 teaspoon fine-grain sea salt
1/4 teaspoon ground nutmeg
1 1/2 cups grated zucchini (you'll need 1 small-to-medium zucchini, about 7 ounces-gently squeeze out excess moisture over the sink before stirring it into the batter)
1 3/4 cups white whole wheat flour or regular whole wheat flour

Steps:

  • Preheat oven to 325°F. Grease a 9" x 5" loaf pan to prevent the bread from sticking. If you'll be toasting the nuts, line a small, rimmed baking sheet with parchment paper for easy cleanup.
  • Toast the nuts: Once the oven has finished preheating, pour the chopped nuts onto your prepared baking sheet. Bake until the nuts are fragrant and toasted, about 5 minutes, stirring halfway.
  • In a large mixing bowl, combine the coconut oil and honey. Beat them with a whisk until they are combined. Add the eggs and beat well. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 20 seconds in the microwave.)
  • Add the milk, baking soda, cinnamon, vanilla, salt and nutmeg, and whisk to blend. Switch to a big spoon and stir in the zucchini (be sure to squeeze excess moisture out of the zucchini first). Add the flour and stir just until combined. Some lumps are ok! Gently fold in the toasted nuts now, if using.
  • Pour the batter into your greased loaf pan and sprinkle lightly with additional cinnamon. If you'd like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean and the center of the loaf springs back to the touch. Let the bread cool in the pan on a wire rack. Use a serrated knife to cut individual slices.
  • This bread is moist, so it will keep for just 2 to 3 days at room temperature. Store it in the refrigerator for 5 to 7 days, or in the freezer for up to 3 months or so. I like to slice the bread before freezing and defrost individual slices, either by lightly toasting them or defrosting them in the microwave.

2 Eggs ((lightly beaten))

1 Teaspoon Ground Cinnamon (- 5 milliliters)

Steps:

  • Unplug the bread machine.
  • Remove the bread pan from the unplugged bread machine.
  • Grate the zucchini into small shreds.
  • Lightly beat the eggs.
  • Pour the vegetable oil & eggs into the bread pan and then add the other ingredients (except the grated zucchinis & chopped walnuts which are added later). Try to follow the order of the ingredients listed above so that liquid ingredients are placed in the bread pan first and the dry ingredients second.
  • Put the bread pan with all of the ingredients (except zucchinis & walnuts) back into the bread machine and close the bread machine lid.
  • Plug in the bread machine.
  • Enter the bread machine settings (Sweet Quick Bread, Light Color, 2 lb) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make zucchini breads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as zucchini bread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct zucchini bread setting used by your SPECIFIC bread machine model or the zucchini bread could be under or overcooked.
  • After the first bread machine mixing cycle and before the second mixing (final mixing), add the grated zucchini & chopped walnuts (or mini chocolate chips). This is when the machine "pauses" and the mixing paddle stops for several minutes between mixing cycles. Some bread machines will also give off a "beep" to tell you when to add extra ingredients (i.e. nuts) to the mixing process. Read your bread machine manual for more details.
  • When the bread machine has finished baking the zucchini bread, unplug the bread machine.
  • Remove the bread pan and place it on a wooden cutting board (without removing the zucchini bread from the bread pan). Use oven mitts when removing the bread pan because it will be very hot!
  • Optional - Use a long wooden skewer to test if the zucchini bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
  • After removing the bread pan from the bread machine, you should let the zucchini bread stay within the warm bread pan on the wooden cutting board for 10 minutes (as this finishes the baking process). Wear oven mitts.
  • After the 10 minute "cooldown", you should remove the zucchini bread from the bread pan and place the zucchini bread on a wire cooling rack to finish cooling. Use oven mitts when removing the bread.

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups sugar
1 cup vegetable oil
3 large eggs, beaten
3 cups grated zucchini
1/2 cup frozen grated coconut, thawed
1/2 cup walnuts, chopped
1/4 cup maraschino cherries

Steps:

  • Preheat the oven to 325 degrees F. Grease two 5-by-9-inch loaf pans with cooking spray.
  • In a mixing bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Mix the sugar, oil and beaten eggs in a separate bowl and add to the flour mixture. Stir in the grated zucchini, coconut, nuts and cherries.
  • Pour the batter into the loaf pans and bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Cool for 10 minutes before removing the loaves from the pans. Turn the breads out onto wire racks to cool completely.

  • Bake for about 45 to 55 minutes or until a toothpick inserted in the center comes out with a few crumbs clinging. The top will dome slightly and the edges will just be pulling away from the edges of the pan. Cool pan on rack for 10 minutes, then unmold loaf onto cooling rack, peel parchment away and cool loaf thoroughly. Zucchini bread is ready to eat or wrap in plastic wrap and store at room temperature for about 3 days. You can also slip the wrapped loaf into a heavy zip-top bag and freeze for up to a month.
