2 tablespoons cornstarch
1 (14 ounce) can Swanson chicken broth (1 3/4 cups)
1 tablespoon soy sauce
1/2 teaspoon ground ginger
1 tablespoon olive oil
4 cups cut-up vegetables (I use carrots, brocolli, & peppers)
2 (5 ounce) cans premium chunk chicken, drained
4 cups hot cooked rice

Steps:

  • In bowl mix cornstarch, broth, soy and ginger until smooth. Set aside.
  • In medium skillet over medium heat, heat oil. Add vegetables and stir-fry until tender-crisp.
  • Stir cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly. Add chicken and heat through. Serve over rice.
  • TIP: * Use a combination of broccoli flowerets, sliced carrots and green or red pepper strips.

This is one of my favorite stir-fry recipes. Simple, quick, and easy. Serve over rice.

6 ounces skinless, boneless chicken breast, cut into small pieces
2 tablespoons soy sauce
2 tablespoons dry sherry
1 tablespoon cornstarch
1 tablespoon vegetable oil
1 cup broccoli florets, cut into pieces
1 large green bell pepper, cut into squares
1 zucchini, cut into rounds and quartered
3 cloves garlic, minced
½ cup chicken broth
1 tablespoon vegetable oil
6 green onions, chopped

Steps:

  • Mix chicken, soy sauce, sherry, and cornstarch in a bowl.
  • Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat; cook and stir broccoli, bell pepper, zucchini, and garlic for 2 to 3 minutes. Add chicken broth, cover, and simmer until vegetables are tender, 4 to 5 minutes. Transfer vegetables and sauce to a large bowl and wipe skillet clean.
  • Heat remaining 1 tablespoon vegetable oil over medium-high heat; cook and stir chicken until meat is no longer pink in the center, about 5 minutes. Stir in vegetables; continue to cook and stir for 2 to 3 minutes more. Sprinkle with green onions.

Bite-sized pieces of chicken and crisp-tender vegetables all coated in a flavorful stir-fry sauce in this easy Chicken Stir Fry.

1/4 cup cold water
2 tablespoons cornstarch
1/2 cup low sodium chicken broth
1/3 cup low sodium soy sauce
1/4 cup brown sugar
2 tablespoons Shaoxing wine ( (or dry sherry))
1 tablespoon sesame oil
1 tablespoon minced fresh ginger
1 tablespoon minced fresh garlic
1/4 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil (, divided)
1 pound boneless, skinless chicken breast (, cut into small 1-inch bite-sized pieces)
Salt and pepper (, to taste)
2 cups broccoli florets
1 red bell pepper (, seeds and membrane discarded, cut into 1-inch pieces)
1 medium onion (, cut into 1-inch pieces)
2 scallions (, diced small)
Cooked white rice (, for serving)

Steps:

  • In a small bowl, combine all the ingredients for the sauce. Set aside.
  • Warm one tablespoon of the vegetable oil in a large nonstick skillet or wok over medium-high heat.
  • Add chicken and season with salt and pepper. Sauté for 5-6 minutes or until cooked through. Transfer to a plate and keep warm.
  • Reduce heat to medium and add remaining tablespoon of oil to the skillet.
  • Add broccoli, bell pepper, and onion; sauté, stirring occasionally, until slightly charred and crisp tender, about 3-4 minutes.
  • Return cooked chicken back to the skillet; toss to combine.
  • Give the stir-fry sauce a stir, pour over chicken and vegetables and combine. Bring to a boil to thicken.
  • Remove from heat and stir in the scallions.
  • Serve over hot cooked rice.

1 tablespoon peanut oil
2 to 3 cloves garlic, minced
1 tablespoon minced fresh ginger
1 pound boneless, skinless chicken breasts, cut into strips
1 medium onion, diced
2 cups sliced carrots
1 red bell pepper, seeded and sliced into thin strips
2 cups sugar snap peas
1 (15-ounce) can baby corn, drained
2 cups broccoli florets
1/4 cup reduced-sodium soy sauce
2 teaspoons cornstarch
1 cup reduced-sodium chicken broth

Steps:

  • Heat oil in a wok or large skillet over medium-high heat. Add garlic and ginger and cook 1 minute. Add chicken and cook 3 to 4 minutes, until starting to brown, stirring constantly. Add onions, carrots, and peppers and cook 1 minute. Add snap peas, corn and broccoli and cook 2 minutes. Add soy sauce and cook 2 minutes, until vegetables are crisp-tender.
  • Dissolve cornstarch in chicken broth in a small bowl and add to wok. Simmer 2 minutes, until sauce thickens. Serve over rice.

This is a very tasty and healthy meal which I often make, I prefer to make it with the chilli sauce, normal soy sauce can be substituted for thick soy sauce. It's a real winner amongst family & friends.

2 tablespoons thick soy sauce
3/4 cup chicken stock
1 tablespoon cornflour (cornstarch)
1 teaspoon chili sauce (optional)

500 g chicken thigh fillets, thinly sliced
1 onion, sliced
2 cups snow peas or 2 cups sliced carrots, etc
400 g hokkien noodles

Steps:

  • Heat oil in wok or frying pan, stir-fry chicken pieces, onion & carrot over moderate heat for 5 minutes.
  • Add the rest of the vegetables and noodles, cook for a further 3 minutes.
  • Combine first five ingredients, pour combined sauce over the stir-fry. Toss gently until heated through and thick.
  • Serve.

2 tablespoons soy sauce
1/4 cup chicken broth
1 (1 lb) bag stir fry vegetables (bok choy, broccoli, snap peas, celery, cabbage)
3 1/4 ounces shiitake mushrooms

Steps:

  • Heat oil in pan on med high heat. Add garlic and saute until fragrant, 10 seconds. Add chicken broth and soy sauce, then add all the stir fry veggies and the mushrooms. Cook on high until crisp tender. Broth should have reduced a bit.

2 teaspoons sesame seeds
2 boneless skinless chicken breasts
1 tablespoon cornstarch
2 1/2 teaspoons oil
1 bunch bok choy, stalks and leaves cut in half lengthwise then in pieces crosswise. leaves and stalks separated
2 small red peppers, cut into strips
1/3 cup stir-fry sauce
1/3 cup orange juice
1/3 cup water
1 teaspoon orange zest

Steps:

  • Cook sesame seeds on large nonstick pan over medium heat until golden. Set aside. Cut chicken into chunks.
  • Put chicken and cornstarch into a ziptop bag. Seal and shake to coat chicken.
  • Heat 2 tsp oil in the same pan until hot and add chicken. Stir fry 5 minutes until opaque in center. Remove to large plate.
  • Heat remaining oil in pan and add bok choy stalks and red pepers.Stir fry for 5 minute.
  • Add leaves , stir fry 2 minutes.
  • Mix remaining ingredients, stir into pan , return chicken , stir until simmering.
  • Serve with rice and sprinkle with sesame seeds.

2 tablespoons vegetable oil
1/2 teaspoon salt
4 ounces bamboo shoots
2 stalks celery
8 ounces boneless skinless chicken breasts
6 ounces mushrooms
1/8 red pepper
1 medium onion
1 teaspoon gingerroot
1 garlic clove
6 ounces chicken broth
2 teaspoons soy sauce
3 tablespoons water
2 tablespoons cornstarch
1/2 cup almonds

Steps:

  • Measure and prepare all ingredients prior to beginning to cook.
  • Slice chicken breasts into bite-size pieces, set aside.
  • Drain bamboo shoots.
  • Cut celery on the bias.
  • Slice mushrooms.
  • Cut onion into 8ths- separate pieces.
  • Mince fresh ginger root and garlic together, set aside.
  • At about 350F, toast almonds for about 2 minutes.
  • Set aside.
  • Stir together the broth & soy sauce.
  • In a separate bowl, stir together the water and corn starch.
  • At medium high heat, heat oil and salt in wok until hot.
  • Add salt, stir to dissolve.
  • Stir in garlic and ginger, cook about 10 seconds.
  • If you scorch these, turn off heat, dump and re-do this step.
  • Add chicken.
  • Cook and stir until almost done, about 5 minutes.
  • Add onions, red pepper and celery, stir for about 1 minute, then add mushrooms.
  • Cook and stir another minute.
  • Add bamboo shoots.
  • Stir in broth mixture, cover and reduce heat.
  • Simmer about 3-5 minutes, or until vegetables are done.
  • Stir in water-cornstarch mixture, heat until thickened.
  • Top with toasted almonds, serve over rice.
