Yield Makes 4 servings

4 bacon slices
2 tablespoons vegetable oil, divided
1 1/2 pounds chuck eye or blade steaks
1/2 cup all-purpose flour
2 cups thinly sliced onion
1 cup water

Steps:

  • Cook bacon in 1 tablespoon oil in a large heavy skillet over medium heat until crisp. Drain on paper towels, reserving fat in skillet, then crumble.
  • Meanwhile, pound steaks 1/4 inch thick between sheets of plastic wrap using flat side of a meat pounder. Snip through any gristle with kitchen shears (to prevent curling), then pat steaks dry.
  • Mix together flour, 1 teaspoon salt, and 1/4 teaspoon pepper and dredge steaks on all sides, shaking off excess.
  • Heat reserved bacon fat over medium-high heat until it shimmers, then brown steaks on both sides in batches; transfer to a plate.
  • Add onion to skillet with remaining tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook over medium heat, stirring frequently and scraping up brown bits, until softened and browned, about 10 minutes.
  • Add steaks with any meat juices and water and bring to a boil. Simmer, tightly covered, over low heat until meat is very tender, about 1 1/4 hours. If sauce is thin, transfer meat to a platter and boil until reduced to about 1 cup. Season steaks with salt and pepper. Serve with sauce and sprinkled with bacon.

1 tablespoon vegetable oil
1 large onion, cut in half and sliced 1/4-inch thick
1 can cream of mushroom soup
1 envelope beefy onion soup mix
1 can beef broth
1 cup water

Steps:

  • 1 In skillet, or Dutch oven, heat oil over medium-high heat. Saute onion until translucent; remove and set aside. 2 In same skillet, saute round steak until browned. 3 Meanwhile, stir together mushroom soup, onion soup mix, beef broth and 1 cup water until blended; add onion and pour over browned meat. Reduce heat, cover with tight fitting lid, and simmer for 45 minutes to 1 hour, or until beef is fork tender, or for Dutch oven, cover and cook in preheated 350°F oven for 1 1/2 to 2 hours.

3 pounds of round steak
1/2 cup bacon grease
3 T flour
Salt and pepper to taste

Steps:

  • Cut round steak into serving pieces
  • Heat bacon grease in cast iron skillet
  • Season meat with salt and pepper to taste
  • Brown both sides of round steak until nice and brown
  • Transfer meat to a platter.
  • Gravy
  • Scrape the any of the drippings that are sticking to the bottom of the pan. Heat drippings over medium heat.
  • Sprinkle flour onto the drippings. Quickly stir with a whisk or slotted spoon so that the flour gets incorporated in the drippings. Let the flour brown a bit, before adding liquid. (you can also start with a mixture of flour and water)
  • Whisk while slowly adding liquid like stock or water to dissolve the flour into the liquid.
  • Allow the gravy to simmer and thicken and continue to slowly add liquid until you have enough gravy to cover the browned meat.
  • Season to taste with salt and pepper. (Always taste first before adding more salt! It may not need it.)
  • Add the browned meat into the gravy, making sure the meat is covered. Cover pan and place in a low oven for several hours. May need to add some liquid to keep the meat covered.
  • Make a pan of cornbread and a pan of rice. Serve and use gravy over the meat and the rice.

1 lb cube steak (about 4-6 pieces)
1/2 c butter
2 medium onions, sliced and separated into rings
4 oz sliced mushrooms
4 Tbsp all purpose flour
2 can(s) (10 1/2 oz) beef consomme
1/2 c white wine
1/2 tsp salt
1/4 tsp pepper
hot cooked rice (optional)

Steps:

  • 1. Melt 1/4 cup of butter in pan over medium high heat. sprinkle steaks with salt and pepper and brown in butter. Remove from pan and set aside.
  • 2. Add mushroom and onion to pan drippings and cook until tender.
  • 3. Add remaining butter to pan to melt. Sprinkle flour over onion and mushrooms; stir well.
  • 4. Gradually add consomme and wine. Cook until thickened, stirring constantly.
  • 5. Place steaks in onion mixture; cover and simmer over low heat for 20-30 minutes or until steaks are tender. Serve over rice if desired.

4 (4-oz to 6-oz each, about 1-inch thick) sirloin steaks, ( at room temperature)
garlic salt, (to taste)
fresh cracked black pepper, (to taste)
2 tablespoons vegetable oil
2 tablespoons butter, (divided)
2 yellow onions, (sliced)
3 cloves garlic, (minced)
1 teaspoon Italian Seasoning
½ cup low sodium beef broth
2 teaspoons Worcestershire sauce
¼ cup heavy cream or half and half
chopped fresh parsley

Steps:

  • Pat dry steaks with paper towels; season steaks with garlic salt and pepper.
  • Heat vegetable oil and 1 tablespoon butter in a large cast iron skillet over medium-high heat.
  • Add steaks to the hot skillet and cook until browned and cooked to desired doneness; about 3 to 4 minutes per side for medium-rare steak. DO NOT crowd the skillet; cook two steaks at a time if skillet isn't big enough.
  • Remove cooked steaks from skillet; set aside and keep covered.
  • Set skillet back over medium-heat and melt remaining butter.
  • Add in sliced onions and season with a pinch of salt; continue to cook for 10 to 12 minutes, or until onions are soft and caramelized. Stir frequently.
  • Stir in minced garlic and season with Italian seasoning; cook for 10 seconds.
  • Slowly add in beef broth and Worcestershire sauce; using a wooden spoon, scrape up the browned bits from the bottom of the pan. Bring mixture to a boil.
  • Whisk in heavy cream and cook for 1 more minute.
  • Reduce heat to medium-low; return steaks to the skillet and continue to cook for 2 more minutes, or until steaks are heated through, and sauce has thickened.
  • Remove from heat.
  • Garnish with parsley and serve.

1/2 cup flour
1 teaspoon salt
1 teaspoon black pepper
2 lbs top round steaks or 2 lbs bottom round steaks, about 3/4 inch thick
1 tablespoon vegetable oil
3 large onions, thinly sliced
2 bay leaves
3 sprigs fresh thyme or 1/2 teaspoon dried thyme, crumbled
1/4 cup beer
1 cup beef stock or 1 cup beef broth

Steps:

  • Mix the flour, salt and pepper together.
  • Pound this mixture into the meat well.
  • Cut the meat into 4-6 pieces.
  • Heat the oil in a heavy skillet and cook the steaks in batches over medium-high heat until brown on both sides.
  • Remove the meat and reduce the heat to medium.
  • Add the onions and cook until limp and golden.
  • If the pan is dry, add a few tablespoons of water to the skillet.
  • Lay the meat over the onions and add the bay leaves, thyme, beer and beef stock.
  • Cover tightly and reduce the heat to low.
  • Simmer gently for 30-40 minutes until the meat is very tender.
  • Do not let it boil.
  • Remove the bay leaves and adjust the seasoning with salt and pepper.
  • If the sauce is too thin, remove the meat and raise the heat; boil until the liquid thickens slightly.
  • Serve the steaks topped with the onions and sauce.
  • This is good served with either mashed potatoes or buttered noodles.

Southern style beef steaks smothered in a savory onion, pepper, and mushroom gravy.

1 1/2 lbs gravy steak (Chuck steak, sirloin tender steak, beef tips, etc.)
2 TBS Worcestershire sauce
1 TBS seasoning salt
1 1/2 cup all purpose flour
1 TBS onion powder
1 TBS garlic powder
1 TBS poultry or steak seasoning
1/4 cup vegetable oil
2 TBS butter
1 cup sliced mushrooms
1 bell pepper sliced
1 medium onion sliced
3 TBS flour (from the same 1 1/2 cup flour used earlier)
1/3 cup sherry cooking wine
3 cups beef stock
1 beef bouillon cube
2 heaping TBS sour cream
Salt and pepper to taste
Green onions to garnish

Steps:

  • Cut steak into large chunks
  • Toss steak in Worcestershire sauce and the seasoning salt
  • In a shallow dish, pour in the flour, onion powder, garlic powder, and seasoning. Stir.
  • Dredge the steak pieces in the flour. Coat all sides well; shake off excess
  • Reserve the flour for later
  • Heat oil in a skillet
  • Add in the steak and brown on each side; 2-3 mins per side
  • Remove the steak
  • Add the butter into the skillet
  • When the butter melts, add in the onion, bell pepper, and mushrooms
  • Sprinkle with a pinch of salt
  • Sauté until veggies soften; about 3 mins
  • Sprinkle 3 TBS of the reserved flour used for dredging the steak
  • Stir until the flour is no longer visible
  • Pour in the sherry; stir
  • Add in the beef stock and beef bouillon cube
  • Bring to a simmer
  • Return the steak back into skillet
  • Reduce heat to medium low
  • Stir, cover with the lid, and cook for 1 hour or until steak is tender.
  • Add in the sour cream and stir until it dissolves
  • Taste and add salt and black pepper as needed.
  • Garnish with green onions
  • Serve over garlic mashed potatoes or rice.
  • Enjoy!

This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

1 (2 1/2 pound) tenderized round steak, cut into 6 pieces
salt and ground black pepper to taste
1 cup all-purpose flour, divided
1 teaspoon garlic powder, or to taste
½ cup cooking oil, divided
1 large onion, sliced
1 cup water
1 teaspoon beef base (such as Better than Bouillon®)
1 teaspoon Worcestershire sauce
2 cups milk

Steps:

  • Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
  • Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
  • Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
  • Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
  • Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
  • Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
  • Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.

Reconnecting when I was adult, she cooked her infamous dish from memory, but I watched and recreated to paper. Serve with Recipe # 27361. Simply pure southern comfort food!

1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon onion powder
4 pieces cube steaks (butcher tenderized)
1 cup flour
1/2 cup oil
2 cups water
1 beef bouillon cube
1 large yellow onion, sliced rings

Steps:

  • In small bowl mix 4 seasonings.
  • Place flour in a flat surfaced dish (save unused flour for smothering).
  • Sprinkle front and back side of each steak piece and rub deep into groves of steak.
  • Heat oil to medium high in skillet (cast iron is best).
  • Dredge each piece in flour, press in with finger tips. Re-dredge in flour again and place carefully in hot oil for 1 minute and then turn back heat to medium.
  • Fry steak 4-5 minutes on each side. Remove, drain on a separate plate.
  • Remove all but 2-3 Tbs of oil, over medium high heat, sprinkle with 3 Tbs flour, whisking until well mixed and roux browns.
  • Add water, bouillon cube and remaining seasoning. Mix until gravy begins to thicken slightly. Test taste for spice as this is the time to adjust (salt or water).
  • Replace steak back in gravy and spread onion rings over the tops.
  • Cover and simmer 30-40 minutes.

Number Of Ingredients 11

¼ cup vegetable oil
3 pounds chuck eye or blade steaks
1 cup all-purpose flour
2 teaspoon salt or more to taste
1 teaspoon black pepper
1/2 teaspoon red pepper or cayenne pepper (optional)
1 teaspoon garlic powder
1 teaspoon onion powder
3 cups thinly sliced onion
4 cloves garlic (minced)
1 ½ cups beef broth or water

Steps:

  • Cut steak into serving portions, then pat steaks dry, set aside.
  • In a small bowl, combine salt, black pepper, red pepper, garlic powder, onion powder; mix well and divide seasoning in half and place one half of the seasoning into a large baking dish.
  • Use the remaining half of seasoning and season the portioned steaks on both sides.
  • Mix together flour and seasonings in the baking dish, and dredge steaks on all sides, shaking off excess.
  • In a cast iron or heavy bottomed skillet, heat vegetable oil over medium-high heat until it shimmers, then brown steaks on both sides in batches; transfer to a plate.
  • Add onion to skillet and a little more oil (if necessary - about 1 tablespoon), 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook over medium heat, stirring frequently and scraping up brown bits, until the onion is softened and golden browned, about 10 minutes.
  • Stir in the minced garlic and continue to saute, stirring constantly, for about 30 seconds.
  • Add steaks with any meat juices and beef broth, and bring to a boil.
  • Simmer, tightly covered, over low heat until meat is very tender, about 1 1/4 hours. If sauce is thin, transfer meat to a platter and boil the sauce until reduced to about 1 ½ to 2 cups.
  • Season sauce to taste with salt and pepper.
  • Serve steak, gravy and onions over creamy mashed potatoes or hot cooked rice.

One 2-pound round steak or venison backstrap (about 1/4-inch-thick)
Ground white pepper to taste
2 teaspoons olive oil
2 medium white onions, sliced
1 to 1 1/2 cups water
1 beef bouillon cube

Steps:

  • Trim the meat and cut it into 1-by-3-inch slices. Sprinkle with white pepper. Preheat a large nonstick skillet over high heat. Add the oil. In batches if necessary, brown the meat on all sides, about 3 minutes. Add the onions, enough of the water to cover the bottom of the pan by 1/4 inch, and the bouillon cube. Cover, reduce the heat to medium-low, and simmer until tender, 20 to 40 minutes, depending upon the cut of meat.

A good, good for you, easy Steak recipe. I used my electric skillet for this dish.

1-2 lb top sirloin steak
1 sweet onion, sliced
1/2 c celery, chopped
water
1/2 tsp ea. of black pepper, granulated garlic, and granulated onion to season steak
pinch of course sea salt
1/4 tsp cumin
1/2 c butter, unsalted
1/2 c flour

Steps:

  • 1. I used an electric skillet for this dish. Add a little olive oil to skillet and brown steak on both sides. Add about 2 cups of water, celery and onion (you can add some sliced carrots too if preferred). Cover with lid and simmer on very low. On the electric skillet I turn the knob till the light just comes on, it will then cut off and on and as it simmers. Check skillet about every 30 minutes and turn steak and add more water if needed. When steak is done you want 2 cups of broth. Cook till will depend on thickness of steak. My steak was about 1-1 1/2" thick. Most any cut of steak will work.
  • 2. Once steak is tender (I wanted mine to the shredded point) remove steak, veggie and broth. Melt 1/4-1/2 c of butter and add the same amount of flour to make a roux. Let flour brown just a little to remove the raw taste. Add broth back to pan and mix well and allow to thicken. Add steak back into gravy and I used a potato masher to "smash" my steak and shred it.
  • 3. Serve over mashed potatoes, rice or bread for an open face steak sammie.

1/2 teaspoon cayenne
2 1/4 pounds thin top round steak, sliced into strips about 1/4-inch thick
1 1/2 tablespoons Essence, recipe follows
1/2 teaspoon freshly ground black pepper
1 tablespoon freshly chopped parsley leaves
1/4 cup vegetable oil
3 tablespoons all-purpose flour
White rice, for serving, optional
3 cups chicken broth, divided
6 cups sliced onions
2 cups sliced red and green bell peppers
3 teaspoons salt
1 tablespoon dried oregano
2 1/2 tablespoons paprika
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper

Steps:

  • Combine the meat with the Essence and flour in a mixing bowl and toss to combine.
  • Heat the oil in a large cast iron Dutch oven or high-sided skillet over medium-high heat and brown the meat, in batches, until browned on all sides, 4 to 5 minutes. Add 2 cups of the chicken broth and stir, scraping the bottom and sides of the pan to loosen any browned particles. Add the onions, bell peppers, salt, cayenne, and black pepper. Cook, stirring frequently, for 6 to 8 minutes, or until the vegetables are wilted. Reduce the heat to medium. Cover and cook, stirring occasionally, for 15 minutes. Add the remaining cup of broth and continue to cook, uncovered, for about 1 hour longer, or until the meat is very tender and the gravy is thickened and flavorful. Add the parsley and serve immediately over white rice, if using.

Smothered Steak and Gravy is a delicious and comforting steak recipe. A pan seared seasoned steak that is then topped with a homemade onion gravy mixture. Serve your smothered steak with all your favorite sides.

3-4 Small Steaks (Ribeye, Top Round, Cubed Steak, etc)
2 teaspoons Seasoning Salt
1 Tablespoon oil
1/4 cup all purpose flour
3 Tablespoons butter (divided)
2 small onions (diced)
3 cloves garlic (sliced)
1/2 cup beef stock (as needed)
1/4 cup heavy cream

Steps:

  • Heat oil and 2 tablespoons of butter in a skillet over medium-high heat. Pat your steaks dry and then season with the season salt. Do both sides.
  • Dredge your steaks in all purpose flour lightly then sear in a hot skillet. You will cook 4-6 minutes per side, to your desired doneness.
  • Remove steaks from the pan, and in the rest of the butter and onions. Next, saute for 4-5 minutes to soften. Then toss in the garlic, and cook another minute or until you smell the garlic.
  • Stir in the beef broth and then heavy cream. Whisk well, scraping the bottom of the pan to remove any stuck on bits.
  • Once the sauce boils, reduce heat, and cook for another 5 minutes or until the gravy begins to thicken.
  • Place your steaks back in the gravy mixture, and smother them. Then serve your smothered steak with your favorite sides.

  • Heat a skillet over medium high heat. Break the ground chuck into large chunks. Press it together firmly to help it hold it's shape making large meatballs. You can make them round, but I tend to leave mine in rounded rectangles. Season the meat liberally with salt, pepper, & garlic powder.
  • Place the meat in the center of the hot skillet. Spread the sliced onions around the outside perimeter of the skillet, & season with salt & pepper. Drizzle about 3 tablespoons of Worcestershire sauce over the meat & onions. Sear the meat on each side, only turning to brown another side. Push the meat & onions to one side of the skillet, tilting the skillet so that the pan drippings collect on the opposite side. Whisk in the flour, & cook for 1-2 minutes.
  • In a small bowl, mix together the brown gravy mix with the water & remaining 2 tablespoons Worcestershire sauce. Pour the mixture into the skillet & stir it into the meat and onion mixture. Cover & cook on low heat for 15 minutes, or until the meat is cooked through.

  • In a skillet, heat 1 tbsp (15 mL) of the clarified butter over medium-high heat. Add steak, in pieces, if necessary, and brown on both sides. Transfer to slow cooker stoneware.
  • Reduce heat to medium and add remaining tbsp (15 mL) of butter to pan. Add onion and celery and cook, stirring, until softened, about 5 minutes. Add sea salt and peppercorns. Add stock and bring to a boil, stirring to scrape up brown bits from bottom of pan.
