BACON HASH BROWN CASSEROLE

Bacon Hash Brown Casserole image

I got this recipe from one of those community cookbooks that my mother-in-law gave me. I modified it slightly to suit our personal tastes. I hadn't made it for a long time but made it this Christmas Eve to serve with cabbage rolls - it was a HUGE hit. So, I thought I would share. There are several hash brown casseroles already posted but none with bacon.

Categories     Potato

Time 1h30m

Yield 8-10 serving(s)

Number Of Ingredients 7

2 lbs frozen hash browns
1 (10 ounce) can low-fat cream of chicken soup
1/2 cup margarine
2 cups light sour cream
8 ounces cheddar cheese, shredded
1/2 lb bacon
salt & pepper, to taste

Steps:

  • Thaw hash browns for 30 minutes.
  • While hash browns are thawing, prepare the bacon: Using clean scissors, cut the bacon into thin strips horizontally. Fry until crispy or desired doneness. (The scissor method saves the hassle of trying to crumble the bacon after it is cooked.).
  • In a large bowl, mix together soup & sour cream & salt and pepper.
  • Add melted margarine & mix well.
  • Add the cheese & bacon and then the hash browns. Continue mixing until well combined.
  • Spread mixture into 9 X 13 pan, lightly coated with cooking spray.
  • Bake for 1 hour at 375 degrees.

KALE AND BACON HASH BROWN CASSEROLE

Kale and Bacon Hash Brown Casserole image

With bacon, eggs and hash browns in the baking dish, this sounds like breakfast - but it works just as well as lunch or dinner. This recipe from Joanna Gaines, the reigning queen of Southern home design, is a good example of how she works: Texas tradition but with some modern touches. You can use other kinds of frozen potatoes, like waffle fries, or add par-boiled fresh potatoes to the skillet with the kale and garlic.

Time 1h30m

Yield 8 servings

Number Of Ingredients 12

1 tablespoon unsalted butter, at room temperature
6 slices bacon
1/2 medium yellow onion, finely diced
4 cups lightly packed chopped kale (about 3 ounces)
1 garlic clove, minced
12 large eggs
1 cup whole milk
1 tablespoon Dijon mustard
6 ounces shredded mozzarella (about 1 1/2 cups)
6 ounces shredded Gruyère (about 1 1/2 cups)
1 (20-ounce) bag frozen hash browns, thawed and patted dry
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oven to 350 degrees. Grease a 9-by-13-inch baking dish with the butter.
  • In a large skillet, cook the bacon over medium-low until crispy, 8 to 10 minutes. Transfer the bacon to a plate lined with paper towels and set aside. When cool enough to handle, roughly chop bacon.
  • Pour off all but 2 tablespoons of the bacon grease from the pan. Heat the skillet over medium, add the onion, and sauté until soft and lightly browned, 2 to 4 minutes. Add the kale and garlic and sauté until the garlic is tender and fragrant, another minute. Remove from the heat and stir in the chopped bacon.
  • In a large bowl, whisk together the eggs, milk and mustard. Add 1/2 cup mozzarella, 1/2 cup Gruyère, the hash browns, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine.
  • Stir the kale mixture into the eggs, then pour into the buttered dish. Top evenly with the remaining mozzarella and Gruyère. Cover with foil.
  • Bake for 45 minutes. Remove the foil and bake, uncovered, until the top is lightly browned and bubbly, another 15 minutes. Serve hot. (Cooled casserole will keep, covered, in the refrigerator for 3 to 5 days.)

Provided by Giada De Laurentiis

Categories     main-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 9

8 ounces bacon, diced
1/2 red onion, diced
2 cups frozen hash browns, thawed
1 3/4 teaspoons kosher salt
1 bunch Tuscan kale, chopped
10 large eggs, at room temperature
1/2 cup heavy cream or whole milk, at room temperature
4 ounces sharp white Cheddar, grated (about 1 1/2 cups loosely packed)
4 ounces mozzarella, grated (about 1 cup)

Steps:

  • Preheat the broiler to high and position a rack in the top third of the oven.
  • Put the bacon in a 12-inch nonstick ovenproof skillet and place over medium heat. Cook, stirring often with a rubber spatula, until the bacon is crispy and golden brown, about 10 minutes. Remove the bacon to a plate with a slotted spoon and remove all but 2 tablespoons of the bacon fat from the skillet. Add the red onion to the skillet along with the hash browns. Stir in 1/2 teaspoon salt and spread the mixture evenly over the bottom of the skillet. Cook, undisturbed, until the potatoes are beginning to brown and get crispy, about 3 minutes. Stir the potato mixture with a rubber spatula. Re-spread the mixture evenly on the bottom of the skillet and cook, undisturbed, to brown a bit more, another 2 minutes. Add the kale and another 1/2 teaspoon salt and cook until the kale is wilted, another 2 minutes. Stir in the reserved bacon.
  • Meanwhile, whisk together the eggs, heavy cream and remaining 3/4 teaspoon salt in a medium bowl. Add the grated cheeses. Add the egg mixture to the skillet and stir to combine. Cook, stirring occasionally with a rubber spatula, until the mixture looks like loose scrambled eggs, about 2 minutes. Cook, undisturbed, to set the bottom, about 1 minute longer. Place the skillet under the broiler until the top is golden brown and the eggs are set, 3 to 4 minutes. Allow to cool for 5 minutes before slicing into wedges and serving.

HASH BROWN CASSEROLE WITH BACON, ONIONS, AND CHEESE

Hash Brown Casserole With Bacon, Onions, and Cheese image

This is surprisingly good for a lower-fat recipe. I actually had reduced-sodium bacon, reduced fat sour cream and cheese (only because it was on sale), but I used regular condensed cream of mushroom soup. I will post this as written, but feel free to substitute with items that are not low-fat or non-fat. I used a non-fat cheddar because I didn't have the four cheese blend, but I must confess that regular cheese melts better, and I prefer the texture. I'm not familiar with the classic melts for cheese blend, but my guess is it melts like regular cheese. I wanted it for breakfast so I skipped refrigerating overnight, and it still tasted delicious. This would be a great recipe to prepare in the evening to have ready for breakfast the next day. Recipe courtesy of Cooking Light.

HASH BROWN CASSEROLE WITH BACON AND CHEDDAR

Hash Brown Casserole With Bacon and Cheddar image

Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife! Enjoy!

Time 1h20m

Yield 6 squares, 6 serving(s)

Number Of Ingredients 8

8 ounces bacon
1/2 medium onion, chopped
1 red bell pepper, chopped
