4 chicken breasts
salt
pepper
1 cup long-grain rice
2 1/4 cups water
1 (10 ounce) jar salsa
1 cup cheddar cheese, shredded

Steps:

  • Spray a 9 x 13 inch baking dish with oil.
  • Add rice to baking dish. Salt and pepper chicken breasts and place on top of rice.
  • Pour water over chicken and rice. Spoon salsa over chicken.
  • Cover with foil and bake in a 350 degree oven for 1 hour. Uncover, sprinkle cheese on top and return to oven for 3 minutes.

This is a wonderful side dish for Holidays and potlucks. I make it alot and it is always devoured! Hope you enjoy! I usually triple the recipe for a 9X13 casserole!

1 (10 ounce) package frozen corn, cooked and drained
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 cup sugar
1/4 cup milk
1 egg, slightly beaten
1/3 cup cracker crumb (Ritz)
1 tablespoon butter, melted

Steps:

  • Melt butter in skillet, add flour.
  • Blend well, add milk and sugar.
  • Stir constantly until mixture is bubbly.
  • Remove from heat.
  • Place back on heat and boil 1 minute.
  • Stir in corn and egg, mix well.
  • Pour into a well greased casserole dish.
  • Mix crackers with butter and sprinkle over top.
  • Bake uncovered in 350 oven for 30-35 minutes.
  • For a 9X13 pan I triple the recipe.
  • I use two bags of the frozen corn and triple everything but the salt and topping.

Steps:

  • Preheat oven to 350 degrees. In a bowl, mix the corn kernels with the flour. Add the remaining ingredients and mix well. Pour into a baking dish and bake for 1 hour.

2/3 cup water
1/4 cup butter, cubed
3 cups fresh or frozen corn
1 can (5 ounces) evaporated milk
3/4 teaspoon plus 1-1/2 teaspoons sugar, divided
1/2 teaspoon plus 3/4 teaspoon salt, divided
3 large eggs
3/4 cup 2% milk
1/4 teaspoon pepper
3 cups cubed bread
1 small onion, chopped
1 cup Rice Krispies, slightly crushed
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. In a small bowl, mix cornstarch and water until smooth. In a large saucepan, heat butter over medium heat. Stir in corn, evaporated milk, 3/4 teaspoon sugar and 1/2 teaspoon salt; bring just to a boil. Stir in cornstarch mixture; return to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened; cool slightly., In a large bowl, whisk eggs, milk, pepper and the remaining sugar and salt until blended. Stir in bread, onion and corn mixture. Transfer to a greased 8-in. square or 1-1/2-qt. baking dish., Bake, uncovered, 40 minutes. In a small bowl, toss Rice Krispies with melted butter; sprinkle over casserole. Bake 10-15 minutes longer or until golden brown. Freeze option: Cool unbaked casserole, reserving Rice Krispies topping for baking; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 medium green bell pepper, diced
3 ribs of celery, diced
1/2 c butter
1 Tbsp sugar
1-2 medium jalapeno peppers, seeded and diced
2 can(s) cream style corn (17 oz each)
1 c grated cheddar cheese

Steps:

  • 1. Cook rice according to package directions, set aside Preheat oven to 325º Grease a 2 quart casserole dish (9" x 13")
  • 2. Saute onion, bell pepper and celery in butter until tender Combine with all other ingredients in a large bowl, mix well
  • 3. Pour ingredients into greased casserole dish and place in oven Bake at 325º for 30 minutes

1 large onion, diced
½ large green bell pepper, diced
1 (4 ounce) jar chopped pimento peppers
2 eggs
1 (8 ounce) package corn muffin mix (such as Jiffy®)
1 (4 ounce) can diced green chiles
1 (15.25 ounce) can whole kernel corn, with liquid
1 (15.25 ounce) can creamed corn
1 pint sour cream
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking pan.
  • Melt butter in a skillet over medium heat. Add onion, bell pepper, and pimento peppers and saute until tender, about 5 minutes.
  • Combine eggs, corn muffin mix, green chiles, whole corn, and creamed corn in a large bowl with the onion mixture. Stir together and pour into the prepared baking pan. Drop sour cream by the spoonful on top of the mixture; cover with Cheddar cheese.

2 cup(s) tomato juice (or tomato puree)

1 teaspoon(s) garlic powder
pinch(es) salt & pepper to taste
pinch(es) ground cumin
1 small can pikled sliced jalapenos, drained

Steps:

  • Preheat oven to 350º butter 9x13 baking dish and set aside
  • In heavy skillet, saute onion in cooking oil over medium high heat until golden yellow
  • In large mixing bowl, combine corn and all other ingredients, including sauteed onions. Mix well

1 can(s) ranch style beans****
1 pkg mahatma spanish rice mix
1 can(s) ro-tel tomatoes (optional)
1 or 2 can(s) water (use ranch style can)***
8 oz sharp cheddar, grated

  • 1. Preheat oven to 400 degrees Brown ground beef in large cast iron skillet. Drain and return to skillet
  • 2. ****You can use Bush's Chili Beans if Ranch Style Beans are not available in your area. Add beans, water and spanish rice mix (Don't cook first) Don't worry if it seems runny, the rice will soak up the water ***NOTE: IF YOU ADD THE CAN OF RO-TEL TOMATOES, ONLY ADD ONE ADDITIONAL CAN OF WATER. Mix well and sprinkle cheese over top
  • 3. Cook for approximately 35 minutes until rice is tender and cheese is browned. Taste test rice beginning about 25 minutes after cooking has begun.

2 cups chopped onions
6 whole eggs, beaten

2 cups grated aged white cheddar

  • Preheat the oven to 350 degrees F.
  • Carefully remove the corn from the cob with a knife and put in a food processor. Transfer to a large bowl. Coarsely puree with salt, pepper, and nutmeg. In a saute pan, add the oil and the onions and saute until translucent. Add the onions to the corn mixture. Add the beaten eggs, milk and half of the grated Cheddar and combine. Use 2 teaspoons of oil to coat a 13 by 9-inch baking dish. Transfer the corn mixture to the dish and top with the rest of the grated Cheddar.
