Steps:
- Place chicken in a Dutch oven; add water. Bring to a boil; reduce heat. Simmer, covered, 10-15 minutes or until chicken juices run clear. Remove chicken; cut into 1/2-in. cubes and set aside., In a large skillet, heat oil over medium-high heat. Add onion, celery and garlic; cook and stir until tender., Add to cooking juices in Dutch oven. Stir in tomatoes, tomato sauce, salsa, zucchini, carrots, corn, chilies, cumin, chili powder and basil. Bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until vegetables are tender. Add chicken; heat through., If desired, serve with cheese and tortilla chips. Soup may be frozen for up to 3 months.

I found this recipe in Celebrate the Rain - the Junior League of Seattle's cookbook. I haven't tried it yet but it sounds delicious.

Steps:
- Heat the oil in a large stockpot over medium-high heat. Add the onion and sauté until tender and aromatic, about 3 to 5 minutes,then add the garlic and sauté 1 minute longer.
- Stir in the curry and sauté for 1 minute, then add the chicken, red bell pepper, ginger, and red pepper flakes and stir for 2 minutes.
- Add the broth, tomatoes, and apple and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
- Add the orzo and currants to the soup and simmer until the orzo is tender, about 10 minutes.
- Season the soup to taste with salt and pepper and ladle it into bowls.
- Garnish with cilantro and a dollop of yogurt or sour cream.
- You can make the soup a day ahead up to step 4 and cover and refridgerate it and then bring it to a simmer before you continue.

- Put chicken in a Dutch oven or big soup pot and add water; bring water to a boil.
- Cover and bring chicken to a simmer for 10-15 minutes until chicken juices are clear.
- Take chicken out of water and cube into 1/2 inch pieces; place chicken back into water, but do not have heat on.
- In another skillet, cook the onion, celery and garlic in oil over medium heat until tender; add to the chicken and water.
- Add the next 11 ingredients to chicken and sauted vegetables and bring to a boil.
- Reduce heat and cover, simmering for about 20-30 minutes or until zucchini and carrots are tender.
- Serve with cheese on top, tortilla chips and sour cream, if desired. Soup can freeze up to 3 months.

ZESTY CHICKEN SOUP WITH TOMATOES AND RICE
This is a zesty North African soup. The chicken can be served in the soup or reserved for other uses. If you'd like a leaner soup, omit the oil. Instead of sauteing the onion and chicken, simply add them to the water and continue cooking the soup as below.

Steps:
- Heat oil in a large, heavy soup pot or stew pan.
- Add onion and saute over medium heat until golden.
- Add chicken, sprinkle with salt and pepper and saute 7 minutes.
- Add water, tomatoes, garlic, paprika and turmeric and and bring to a simmer.
- Skim foam from surface.
- Cover and simmer 45 minutes, skimming fat occasionally.
- Add squash and cook for 10 minutes or until zucchini and chicken are tender.
- In a separate saucepan, bring 4 cups water to a boil and add salt.
- Add rice and cook uncovered over medium-high heat for 15 minutes or until just tender.
- Drain well.
- Rinse with cold water if cooking it ahead, and drain well.
SPICED CHICKEN SOUP

- In a large stockpot or Dutch oven over medium heat, add the olive oil. Next, add the carrots, celery, garlic, bay leaf and onions. Saute until the vegetable begin to wilt, about 5 minutes. Next, add the cherry peppers and lemon peel and continue to saute for another 2 minutes. Add in the chicken stock and chicken pieces and sprinkle with smoked salt, if using, and pepper. Bring the soup to a gentle simmer and cook, about 30 minutes.
- Remove the chicken to a plate and wait until the pieces are cool enough to handle. Either with 2 forks or with your hands, pull the meat from the bone and shred, taking care to remove any cartilage. Once all of the meat is pulled from the bone, add the meat back to the soup and discard the bones.
- In the meantime, add the potatoes to the soup, cover and continue to cook and additional 15 minutes. Taste the soup again for seasoning, adding more salt and pepper, if necessary. Add in the noodles. Serve the soup in warmed bowls. Garnish with a squeeze of lemon and some parsley.
THAI CHICKEN SOUP

- Heat the vegetable oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes. Add the garlic and curry paste and cook, stirring, 1 to 2 minutes. Add the chicken broth, coconut milk and fish sauce; cover and bring to a boil.

ZESTY CHICKEN MEATBALLS

- In a large bowl, gently mix the chicken, garlic, egg, bread crumbs, Worcestershire, paprika, onion powder, oregano, thyme, brown sugar, lemon zest, 2 healthy pinches of salt and a few grinds of pepper in a bowl. Form into mini meatballs, slightly smaller than a golf ball; it should make 28 to 30 meatballs. Warm the butter and oil in a large pan over medium-high heat. Transfer the meatballs to the pan and do not disturb for 3 minutes to brown well. Turn, cooking another 3 minutes without disturbing. Keep cooking until browned and cooked on all sides, but still juicy and plump with a spring to the touch. Transfer to a paper towel-lined plate to drain. Serve atop Collard Green Pesto Linguine, if desired.
- Bring a large pot of salted water to a boil over medium heat. Blanch collards until bright green, about 1 minute. Transfer immediately to an ice bath to shock, saving the boiling water for cooking the pasta. Remove the collards from the ice water and pat dry with paper towels before transferring them to a food processor.
- Add the linguine to the pot of salted boiling water and cook according to package instructions.
- Meanwhile, in a dry skillet, over low heat, toast the pecans until fragrant. Transfer to the food processor with Parmesan, olives and garlic. With food processor running, slowly drizzle in olive oil until pesto comes together. Taste for seasoning, and add salt and freshly ground black pepper, to taste.
- To serve, put enough pesto to coat the pasta into a large serving bowl. Drain the pasta and quickly add it to the bowl. The water still clinging to the pasta will loosen up the pesto. Toss to coat. Add more pesto, if needed. Transfer the pasta to a serving bowl and garnish with Parmesan sprinkled over the top.
SPICY TORTILLA SOUP

- Heat oven to 350 degrees F. Cut tortillas into 1/2-inch-thick strips and arrange them on a cookie sheet in a single layer. Bake them 5 to 10 minutes, or until crispy.
- In a large saucepan, bring the chicken broth and chicken bones to a boil. Reduce heat to low; cover and simmer for 20 minutes. Place a colander over a second large saucepan and strain the broth through it. When the bones are cool enough to handle, pick off the remaining meat and add it to the strained broth. Stir in the onion, tomatoes, jalapenos, and lime juice. Heat about 5 minutes more to blend flavors.
- Cut the corn from the cobs and add it to the soup. Divide the baked tortilla strips among 4 bowls. Ladle in the soup and serve with bowls of cilantro leaves, cubed avocado, and crumbled cheese to use as toppings at the table.

I created this dish one night just fiddling around. Everyone who tries it loves it, even those who hate spicy foods. My husband swears it is like Moroccan food, so I suggest serving it over cous cous.

- Put water, onions, chicken, and potatoes into a large pot and bring to a boil.
- Add in all seasonings stir well, then lower heat and cook on lowest setting for around 2-3 hours. Check flavor every hour, and add more of seasonings if desired.

- Stir lemon grass, garlic, and ginger together in a large stock pot over medium-high heat. Stir in chicken broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.

- Cut the chicken meat into 1/4" cubes. In a heavy stock pot, heat the oil over medium-high heat.
- When the oil is hot, add the chicken, cooking about 5 minutes stirring frequently. If it sticks or part burns, it just gives the soup flavor.
- Add the onion and garlic. Cook for about 5 more minutes or until everything is browning.
- Add the cayenne pepper and ginger. Go slow with the cayenne pepper, adding a little at first and adding more to taste.
- Stir for about a minute, then add the chicken stock.
- Bring to a boil, then reduce heat to low and simmer for at least 20 minutes.
- In a separate pot, bring pot of water to a boil and cook noodles for 1 minute less than the package directions recommend. Drain.
- turn off the pot of soup and let stand for 5 minutes.
- Only add the noodles to each bowl at serving time. Don't add ahead of time because the noodles will get too soft. Once the noodles are added to the soup, allow to sit for a few minutes for noodles to absorb the flavor of the soup.
- Extra noodles and soup should be stored separately in fridge.
