Steps:
- Preheat your Oklahoma Joe Highland Smoker to 275F indirect cooking. Add wood chunks for extra smoke flavor if desired.
- In your firebox, add a cast iron skillet to warm. Add the bourbon first and let simmer for 3-4 minutes. Next, add the rest of the glaze ingredients and let simmer, stirring occasionally, until it has thickened. Once done, pull off and let cool for 5 minutes.
- Lay your slices of bacon onto a cooking sheet (preferably with a grate). Lather each piece in the maple syrup glaze, crumble brown sugar over top, and lightly season with your BBQ seasoning.
- Add the bacon to the smoker and cook for about 25-35 minutes or until the outside has begun to caramelize and the fat begins to render. Once it is looking good, flip the bacon over and then glaze, crumble brown sugar and lightly season the opposite side. Continue cooking for another 25-35 minutes until it has caramelized.
- When done, pull the bacon out and let cool for 5-10 minutes (please let cool as it can be very hot!). Top with sliced jalapeños and enjoy!

- Preheat your oven to 350 degrees F. In a large bowl, mix together the brown sugar, maple syrup, whole grain mustard, black pepper, and chili powder.
- Add your bacon to the bowl with the brown sugar mixture. Evenly coat each piece of bacon. Line a half sheet pan with aluminum foil, add a cooling rack, and place your bacon on the rack. This way, the fat will drop down to the bottom as the bacon cooks.
- Place your bacon in the oven for 15 minutes. At that time, flip each piece of bacon over and return to the oven for 10 mins. After 10 mins, flip the bacon over again and return to the oven for 10 minutes. Your bacon should look nicely caramelized. Remove it from the oven and allow it to cool completely.

- Spread the sugar mixture over all the pieces of bacon, making sure to cover every spot. If you have enough, turn the bacon over and coat the other side as well.
- Bake at 350F for 20 minutes. The bacon should be crispy but not burnt. You might need to bake for a few minutes longer. I suggest doing this in 2 minute intervals because the sugar will start to burn very quickly if left in too long.

- Preheat the oven to 350°F and set a rack in middle position. Line a baking sheet with aluminum foil for easy clean-up, and set an oven-proof rack over top.
- Meanwhile, in a small bowl, stir together the brown sugar, syrup, and chipotle powder. Set aside.
- Remove the pan from the oven and flip the bacon slices. Using a small spoon, spread the sugar-syrup mixture evenly over the bacon. Place the pan back in the oven and continue cooking for 20-35 minutes more. (The cooking time will depend on the brand of bacon you use and how crispy you like it. I recommend cooking it as long as possible without burning it, so that the sugar mixture dries out; otherwise the bacon can be a little sticky.) Using tongs, transfer the bacon to a piece of parchment paper or a platter in a single layer to prevent sticking. Let cool for 10-15 minutes, then serve (the bacon will crisp up as it cools).

- Preheat oven to 400 degrees. Line two large rimmed baking sheets with heavy aluminum foil. If you have a broiler pan or cooling racks you can use to elevate the bacon, do this.
- Arrange thick cut bacon strips in a single layer on baking sheets. Evenly spoon brown sugar mixture over bacon strips. You might need to do this in batches, depending on your oven.
- Bake on middle rack for 20 minutes. Keep an eye on bacon, sugar can burn easily. The goal is for bacon strips to be almost crispy, but still a little chewy. The natural fats will be sizzling and bubbling around them.
