This soup was a lunch time staple for me while I was on Weight Watchers. I am a little picky with my veggies but this is the version I make for myself. Feel free to add any of your favorite free veggies.

Steps:
- Add all the ingredients into a large pot or slow-cooker.
- Feel free to add any other Zero Points Vegetables (Weight Watchers).
- Simmer until Veggies are cooked.
- Season to taste.
- Note: Depending on my mood I will exchange the Beef broth for Fat-Free Chicken Broth or Fat-Free Vegetable Broth.

WEIGHT WATCHERS CROCK POT FRENCH ONION SOUP
GREAT French Onion Soup that adheres to Weight Watcher Members "low points" recipes. POINTS value is 4 points per serving.

Steps:
- Heat the oil in a large dutch oven over medium heat. Add onions and salt; cook, first tossing with tongs, and when they begin to wilt, stirring occasionally with a spoon, until pale golden brown and very soft, about 35 minutes.
- Stir in the flour and cook, stirring occasionally, until the flour is lightly browned, about 2 minutes.
- Transfer the onions to a 5 or 6 quart slow cooker. Add thyme sprigs and pepper. Pour the broth over the onions. Cover and cook until the flavors are blended 4-5 hours on high or 8-10 hours on low. Discard thyme sprigs when done.
- Combine the cheese and thyme leaves in a bowl. Spread the cheese mixture over the bread slices. Ladle the soup into bowls, top each serving with a bread slice.

Steps:
- Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.
- Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.
- Simmer for a about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
- I have tried different variations. Leaving out green beans. Adding chopped green onions in addition to the yellow onion.
- All very good. You can customize it a bit.

MY MOTHER'S VERSION: WEIGHT WATCHER'S 0 POINTS VEGETABLE SOUP
Back in 1993 my DM and I became lifetime members of WW. She revised the 0 point soup recipe. She won 1st place with it at her Office "Soup Cookoff" one year. I just dug it out because now I need it again. Zaar is not kind to your waist line. I also have revised her revision. It called for a can of Cajun stewed tomatoes which I can no longer locate. I now use 1 tsp Cajun spice but food.com won't accept it. Also changed a few other items to my liking.

Steps:
- Spray large saucepan with cooking spray.
- Saute' onion, carrots and celery until tender, approximately 5 minutes.
- Combine beef broth, tomatoes, cabbage, bouillon cubes, garlic, Cajun spice, and basil in the saucepan.
- Bring to a boil; reduce heat; simmer approximately 30 minutes.
- Add zucchini, continue simmering for another 10 minutes.
- Serve hot.
- Note: Use fat free saltines for 1 point for 7 squares!

WEIGHT WATCHERS (WW) ZERO POINT CARROT AND GINGER SOUP
This came from a leaflet in a Weight Watchers meeting. I have replicated it as the original recipe but i found for my tastes I liked a little more ginger and a little less water to make it thicker. It freezes well and is ideal for when the munchies strike. I think this would also be nice if the ginger was replaced with cumin or chili and the stock with coconut milk (although this would add a points value)

Steps:
- Heat the onion and ginger in a pan with 6 tbsp of the stock.
- When the onion has softened slightly add the carrots and stock.
- Simmer for 20 minutes.
- Liquidise the soup and season if desired.
- Place the soup back in the pan and add the mini pasta shapes.
- Simmer for a further 5 minutes.
WEIGHT WATCHERS ROASTED VEGETABLES - 0 POINTS!
Very easy and delicious side dish; goes well with the WW Sauteed Shrimp. ZERO POINTS! *Note - recipe calls for 1 medium or 1 large squash and zucchini - all depends on your preference. I use large myself.

- Preheat oven to 450ºF. Coat 2 large baking sheets with cooking spray.
- Arrange peppers, squash, zucchini, onion and artichokes on prepared baking sheets, flesh side up, and coat vegetables with cooking spray; sprinkle with thyme, salt and black pepper.
- Roast until vegetables are tender and golden brown, about 20 to 25 minutes. Chop vegetables into bite-size pieces and serve. Yields about 3/4 cup per serving.

- Cook the onions over a medium heat for about 30 - 40 minutes stirring every 3 to 5 minutes. You are wanting the onions to brown and caramelize but you do not want them to stick to the bottom of the pan and burn.
- Towards the end of the cooking time you may need to stir them every minute or so to stop them sticking and you can turn the heat down a little.
