ZAUGG FAMILY FAVORITE BREAD
After making bread for many years - and experimenting with different ingredients and family tastes - I believe this tops the cake! I have discovered while working with whole wheat and bread making that you have to let the wheat flour "sponge" so the bread doesn't end up heavy. This recipe combines white flour, wheat flour and oatmeal. For us, it's a great way to use leftover cooked oatmeal from breakfast. My kids and DH go through approximately 7 loaves a week!

Steps:
- In a large bowl add yeast, gluten, salt, sugar, oatmeal, whole wheat flour and water. Mix well.
- Cover. Let this mixture sit for 30-40 minutes. This is called sponging.
- Add vegetable oil and mix well.
- Add enough white flour to make a non-sticky soft dough. Knead 10 minutes.
- Place in greased bowl and let rise until double. About 30 minutes.
- Punch dough down.
- Divide dough between 4 greased bread pans. Cover and let rise for 20 minutes.
- Bake at 400 degrees for 30 minutes.
- Cool on wire racks.
- Note: If you are grinding your own wheat - adjust the coarsness of the flour for different textures. Enjoy!

FAMILY FAVORITE CHILI
The name says it all...this has always been my family's favorite, even though there are a lot of shortcuts. It is simple to make, tasty and fast. What else can you ask for? To serve, I ladle it into a large bowl and garnish it with lots of shredded cheddar cheese and jalapenos. I insert tortilla chips all around the edge of the bowl for either scooping up some of the chili with (nacho-style) or eating along with the chili itself.

Steps:
- In Dutch oven over medium heat, brown ground beef, breaking it up as it cooks. Drain off fat.
- Stir in chili seasoning mix, water, tomatoes, and kidney beans.
- Bring to a boil, stirring frequently.
- Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
- When serving, garnish with shredded cheese and jalapeno slices. Serve with tortilla chips.

Steps:
- Heat oven to 350ºF.
- Spread zucchini onto clean kitchen towel; roll up towel, then wring over sink to remove as much liquid as possible. Set aside. Combine flour, baking powder and baking soda.
- Beat cream cheese, mayo and sugar in large bowl with mixer until blended. Add egg; mix well. Gradually add flour mixture, mixing well after each addition. Stir in zucchini, apricots and nut mix.
- Pour into 8x4-inch loaf pan sprayed with cooking spray.
- Bake 40 to 45 min. or until toothpick inserted in center comes out clean. Cool 5 min. Remove from pan to wire rack; cool completely.

I do all our home canning and this recipe is geared towards using those jars! I am able to use canned tomatoes and black beans so the ingredients will reflect either pints or quarts for measurements. This recipe freezes well.

- In a large bowl, dissolve yeast in water. Add the flours, and salt. Stir until well blended. The dough should be shaggy and sticky. Let rise overnight, at least 12-18 hours, for best results.
- Flour a work surface. Fold dough over itself once or twice. Place the dough, seam side down, on a floured kitchen towel. Cover with another floured kitchen towel.Let the dough rise at room temperature for 1-2 hours.
- Preheat the oven 20 minutes before the dough is ready to 475 degrees. Put the dutch oven into the oven. When dough is ready, take out the dutch oven, and then using the kitchen towels, flip the dough into the pot, seam side up. Shake the pot if the dough loses it's shape.
- Cover and bake for 30 minutes. Uncover and bake for 15-20 minutes, or until the dough is turned golden brown. Cool on a wire rack, and enjoy!

- Heat 2 cups of the milk to boiling point.
- Add the meal slowly, stirring until thick.
- Remove from heat and slowly add to the beaten eggs.
- Add the butter and remaining milk.
- Sprinkle baking powder and salt on top and stir.
- Bake in a greased casserole dish for 55 minutes at 350°F.
- When done, it should still be soft enough in the center that you need to serve it with a spoon, but brown on the outside edges.
