CURRY VEGETABLE BASMATI RICE

Vegetables and basmati rice are cooked with curry powder that will pair so well with any chicken, beef or fish dish.

1 cup (105 grams) basmati rice
2 1/2 cups (591 ml) water
1 tablespoon unsalted butter
1 1/2 cups (170 grams) yellow onion, chopped
6 ounces (170 grams) red pepper, chopped
3 ounces (84 grams) cauliflower, cut into small florets
3 ounces (84 grams) green beans, cut into 1/2 inch pieces
1 clove garlic, grated
1 teaspoon fresh ginger, grated
1/4 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon cumin
1/4 teaspoon ground cardamom
1 teaspoon salt
1 cup (140 grams) frozen peas

Steps:

  • To a large frying pan heat the butter over medium heat. When melted and slightly bubbling, add the onions, red pepper, cauliflower and green beans. Sauté until softened, about 10 minutes.
  • Add the garlic, rice, ginger, turmeric, coriander, cumin, cardamom (spices are listed as curry powder in the video) and salt. Stir and cook for 1 minute. Add 2 cups (472 ml) water, mix well. Bring to a simmer, cover and cook until the liquid is absorbed and the rice is tender. Add a little more water if needed. Stir in the peas and serve.

1/2 cup uncooked long grain rice
1/3 cup chopped onion
1 tablespoon olive oil
1 cup reduced-sodium chicken broth or vegetable broth
1/2 teaspoon curry powder
1/4 teaspoon salt
1/8 teaspoon ground turmeric
1/3 cup frozen corn, thawed
1/3 cup frozen peas, thawed
1/4 cup slivered almonds, toasted

Steps:

  • In a small saucepan, cook rice and onion in oil until rice is lightly browned and onion is tender. Stir in the broth, curry powder, salt and turmeric. Bring to a boil. Reduce heat; cover and simmer for 12 minutes. , Stir in corn and peas. Cover and simmer 3-6 minutes longer or until rice and vegetables are tender. Sprinkle with almonds.

1 teaspoon vegetable oil
1 cup cubed yellow squash
1 medium onion, thinly sliced and separated into rings
3/4 cup thinly sliced carrot
1 garlic clove, minced
6 cups water
1 tablespoon chicken bouillon granule
1 1/2 teaspoons curry powder
1 teaspoon ground coriander
1/4 teaspoon ground cumin
1 cup fresh broccoli florets
1 cup fresh cauliflower floret
1/2 cup long-grain rice, uncooked

Steps:

  • Coat a dutch oven with cooking spray; add oil. Place over medium-high heat until hot. Add squash, onion, carrot and garlic; sauté until vegetables are crips-tender.
  • Stir in water, bouillon, curry powder, coriander, and cumin. Bring mixture to a boil; cover, reduce heat, and simmer 30 minutes.
  • Add broccoli, cauliflower and rice. Cover and cook an additional 25 to 30 minutes or until rice is tender. Ladle soup into individual bowls.

My 3 y.o. loves it too (with less curry powder) Don't be too precious about the ingredients - just add whatever veg you have on hand.

3/4 cup cooked brown rice or 3/4 cup cooked long-grain rice
60 g butter
1 egg
1/4 cup parmesan cheese (grated)
1 tablespoon butter, extra
1 onion
1 carrot
1 zucchini
1 small red capsicum, chopped finely
1 teaspoon curry powder
1/4 teaspoon turmeric
50 g broccoli (cut into florets)
1/2 cup sour cream
1/2 cup milk
1/4 cup parmesan cheese, grated (extra)
2 eggs, lightly beaten

Steps:

  • Preheat oven to 180 degrees Celsius.

I got this recipe from a British friend 40 years ago. Choose any vegetables you like to add to the simple curried white sauce. Add the chicken (or shrimp, or lamb or whatever), serve over rice and you have a complete meal.

1/2 cup butter
2 medium onions, chopped
8 ounces mushrooms, sliced
1 cup celery, sliced
2 teaspoons curry powder
6 tablespoons flour
1 teaspoon sugar
1/4 teaspoon ground ginger
2 cups chicken broth or 2 cups chicken bouillon
1 cup milk
2 cups cubed cooked chicken
1 teaspoon lemon juice
cooked rice

Steps:

  • Sautee vegetables in butter until tender.
  • Add curry powder, salt, sugar, ginger, and flour, stirring until completely mixed and bubbley.
  • Stirring constantly, add chicken broth slowly enough to keep the mixture from lumping.
  • Continue stirring until mixture thickens.
  • Add milk, chicken and lemon juice, heating to a serving temperature.
  • Serve over hot rice (we like brown rice, but choose your favorite).

This recipe was given to me by a lovely neighbour many years ago. It was one of her favourites whenever her vegetarian daughter and her family visited. It could be adapted to use whatever vegetables are on hand. The potatoes with rice seem strange but they go surprisingly well!

1 cup rice
1 onion, chopped
2 tablespoons butter
2 tablespoons curry powder
1 carrot, sliced
4 small zucchini, sliced
2 sticks celery, sliced
125 g mushrooms, sliced
2 -3 large potatoes, diced
4 cups cheese sauce (packet sauce is fine)
1 cup cheese, grated
1/2 cup breadcrumbs

Steps:

  • Cook the rice and onion together.
  • Drain well and place the rice and onion at the base of a large casserole dish.
  • Sauté the curry powder in the butter for a couple of minutes.
  • Add the carrot, zucchinis and celery and cook gently for 8 minutes.
  • Add the mushrooms and cook for another 2 minutes.
  • Cover the rice with the vegetables.
  • Cook the potatoes until just tender and place over the vegetables.
  • Make four cups of cheese sauce and pour over the vegetables.
  • Cover with grated cheese and breadcrumbs (mixed).
  • Cook in a moderate over for about 30 minutes.
