1 tablespoon fresh oregano, minced
2 cloves garlic, minced
1 medium yellow onion, thinly sliced
4 cups chicken stock
2 cups coarse-ground cornmeal
1 cup heavy cream
1 cup ricotta
1/2 cup freshly grated Parmesan cheese
Kosher salt and freshly ground black pepper
12 ounces ground beef
12 ounces ground pork
1/2 cup seasoned breadcrumbs
1/4 cup whole milk
1/4 cup minced fresh flat-leaf parsley, plus more for serving
2 large eggs, beaten
1 1/2 cups freshly grated Parmesan cheese, plus more for serving
6 cloves garlic, minced
Kosher salt and freshly ground black pepper
One 28-ounce can chopped tomatoes, drained
1/4 cup olive oil
1/4 cup fresh basil leaves
1 tablespoon fresh oregano leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • For the polenta: Heat the butter in a large Dutch oven over medium-high heat. Add the oregano, garlic and onions. Cook until softened and fragrant, about 5 minutes. Pour in the chicken stock along with 1 cup of water and bring to a boil.
  • Slowly add the cornmeal while whisking constantly to avoid clumping. Cook, stirring frequently, until thickened, about 20 minutes. Stir in the cream, ricotta and Parmesan. Season with salt and pepper. Cover and set aside off the heat.
  • For the meatballs: Add the beef and pork to a large mixing bowl. Add the breadcrumbs, milk, parsley, eggs, 3/4 cup of the Parmesan, half the garlic, 1/2 teaspoon salt and some pepper. Using clean hands, mix together until well combined. Use a scoop or your hands to form 20 evenly sized meatballs. Set them aside on a plate or baking sheet.
  • Add the tomatoes, olive oil, basil, oregano and remaining garlic to a 9-by-13-inch baking dish and give everything a quick stir. Transfer the meatballs to the baking dish and bake until browned, about 15 minutes. Transfer the meatballs and any pan juices to a large bowl.
  • For the casserole: Transfer the reserved polenta to the baking dish you just used to bake the meatballs. Place the meatballs on top of the polenta, reserving any liquid or tomatoes in the bowl. Sprinkle the remaining 3/4 cup Parmesan over the top of the casserole and bake until bubbly and golden brown, about 40 minutes.
  • When you are just about ready to serve, pour the pan juices into a saucepan and warm over medium heat.
  • Sprinkle the casserole with more grated Parmesan and chopped parsley. Serve with the warmed pan sauce on the side.
  • Freezer directions: Once the casserole is assembled, do not bake it. Allow the casserole to cool completely and allow the reserved sauce and tomatoes from cooking the meatballs to do the same in a separate container. This will take 45 minutes to 1 hour.
  • Wrap the casserole in plastic wrap and then foil. Put the sauce in a separate freezer-safe container. Label, date and freeze both until ready to eat.
  • To cook, allow both the casserole and sauce to thaw completely in the refrigerator, preferably overnight.
  • Preheat the oven to 425 degrees F. Bake the unwrapped casserole until bubbly and golden brown, about 40 minutes. Reheat the sauce in a saucepan over medium heat until heated through.

2 teaspoons salt
1 1/2 cups cornmeal
2 large shallots, thinly sliced

2 pints cherry tomatoes,halved
3/4 lb fresh mozzarella, cubed
10 basil leaves, coarsely torn

Steps:

  • Lightly coat a large rimmed baking sheet with 1 tablespoon oil. In a large pot, bring milk, 3 cups water and salt to boil over high heat. Whisk in cornmeal in a gentle stream and reduce heat to medium-low. Simmer, stirring often, until polenta is thick and no longer gritty, about 20 minutes. Working quickly, pour polenta into prepared pan, spreading evenly to the edges. Let stand 10 minutes; cover with plastic wrap and press polenta along sides of pan to form edges of crust. Refrigerate at least 2 hours or overnight.
  • Heat oven to 450°. Bake chilled crust until it begins to brown at edges, 45 minutes to an hour. Heat remaining 1 tablespoon oil in a large saucepan. Sauté shallots and garlic over medium-high heat until soft, 3 minutes. Add tomatoes and cook, stirring occasionally, until they begin to soften, 5 minutes. Mash with the back of a spoon and cook until thickened, 3 minutes more. Season with salt and pepper. Spoon sauce onto the crust, top with cheese and bake until cheese is bubbling, 10 to 15 minutes. Top with basil and cut into squares.

This is similar to many Baked Pasta dishes but with the distinct flavors of pizza. I created this recipe yesterday and took it to a dinner party as the main dish. It was a big hit and every woman there asked for the recipe. I decided that anything that popular should be posted here. You do not have to use the same kind of pasta I did...but should use a pasta which will remain slightly firm after boiling and baking so that it is not mushy. NOTE** I've had several people ask about when to add the spices...you can either add them to the sauce or to the sausage when you cook it. Either way works great! Since this recipe is an original creation of mine, it tickles me so very much that lots of people are enjoying it! Thanks everyone!

1 lb bow tie pasta
1 lb Jimmy Dean sausage, 'country mild' (or other flavor if desired)
1 large onion, medium size chopped (cooked with sausage)
2 (26 ounce) jars spaghetti sauce (I used Bertolli's Tomato & Basil)
1/2 lb cubed cooked ham
1/2-1 lb of sliced pepperoni
3 (8 ounce) bags of shredded mozzarella cheese

1 teaspoon garlic powder
1 teaspoon dried oregano

Steps:

  • Cook pasta in boiling water until al denté.
  • Cook sausage, garlic powder and oregano with onions until the juices run clear.
  • In a lightly greased 9x13x3 inch pan, pour a small amount of sauce to lightly coat bottom.
  • Layer ingredients in the order listed below.
  • 1st layer-1/3 of the pasta, 1/3 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, sausage and onions.
  • 2nd layer-1/2 of the remaining pasta, 1/2 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, ham.
  • 3rd layer-all remaining pasta, all remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese,all the pepperoni(completely covering the entire top with pepperoni).
  • Bake at 375°F for 40 minutes.
  • Let sit for 5 minutes before serving.

2 cups polenta
2 tablespoons ground flaxseeds
1 teaspoon ground turmeric (optional)
Sea salt
4 cups finely chopped tomatoes
1 cup finely chopped onions
2 cloves garlic
1 teaspoon dried marjoram
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
¼ teaspoon ground black pepper
½ (6-ounce) can tomato paste
1 tablespoon white wine vinegar
Sea salt
8 ounces mushrooms, thinly sliced (about 2 cups)
2 medium zucchini, thinly sliced (about 2 cups)
2 medium red bell peppers, finely chopped
¼ cup nutritional yeast, plus more for serving, if desired
¼ cup finely chopped fresh basil

Steps:

  • To prepare the crust, line the sides of two 8-inch round baking pans with strips of parchment paper. Set aside.
  • In a large saucepan, combine 8 cups water with the cumin; bring to a boil. Add the polenta in a slow stream, whisking continuously to prevent lumps from forming. Add the flaxseed, turmeric (if using), and salt to taste. Cook over medium-high heat until the mixture starts to bubble. Cover the pan, reduce the heat to medium, and simmer 15 to 20 minutes, or until the polenta has absorbed all the water and reached a spreadable consistency.
  • Divide the polenta evenly between the two prepared pans. Keeping the parchment paper in place, spread the polenta in the pans, making the edges a bit higher than the center. Let cool to room temperature, and refrigerate for at least 1 hour. The crust can be prepared a couple of days in advance; if refrigerating for more than an hour, cover in plastic wrap.
  • While the crust chills, prepare the sauce: Place the tomatoes, onions, garlic, marjoram, thyme, rosemary, oregano, and black pepper in a large saucepan. Cover and cook over medium-low heat for 30 minutes. Add the tomato paste, vinegar, and salt to taste. Cook, uncovered, until the sauce thickens and the water evaporates, about 20 minutes. Set aside.
  • To prepare the topping, cook the mushrooms in a dry skillet over medium heat, stirring occasionally, until mushrooms are soft and the liquid they release is almost completely evaporated, 5 to 7 minutes. Add the zucchini and cook for 5 minutes. Remove from the heat and set aside.
  • Remove the polenta crusts from the refrigerator, and let them stand for 20 minutes to bring them to room temperature. Preheat the oven to 350°F.
  • In a saucepan, cook the bell peppers over medium heat until softened and the liquid they release has evaporated, about 10 minutes. Add the nutritional yeast, and cook for 1 minute. Transfer the mixture to a small plate to cool. Just before use, mix in the chopped basil.
  • Spread half the pizza sauce on each crust. Spread the mushrooms and zucchini evenly on top. Sprinkle with the bell pepper and basil mixture. Bake until heated through, about 30 minutes. Slice and serve hot. For extra cheesy flavor, sprinkle nutritional yeast on top.

6 cups chicken stock, plus more if needed
2 1/2 cups coarse polenta
Salt and coarse black pepper
Salt and coarse black pepper
6 tablespoons butter, plus more for dotting casserole
1/2 cup dried porcini mushrooms (a couple of handfuls)
About 1/3 cup EVOO
1 1/2 pounds cremini or white mushrooms, sliced
2 tablespoons finely chopped fresh thyme
2 shallots, finely chopped
1/2 cup dry white wine or 1/4 cup Marsala or sherry
2 cloves garlic, grated
1/4 cup flour
2 1/2 cups milk
Freshly grated nutmeg, as needed
1 1/2 cups grated Parmigiano-Reggiano

Steps:

  • Heat 5 cups of the chicken stock in a saucepot to a low boil; add the polenta and season with salt and pepper. Reduce the heat to simmer and cook, stirring and adding more stock as needed to keep the mixture loose, until thickened and soft, 40 to 45 minutes. Stir in 2 tablespoons of the butter, pour the polenta onto nonstick baking sheets (1 large or 2 small), spread into a 1/4- to 1/2-inch thick even layer and cool totally. Cut into rectangular shapes to easily remove for layering.
  • Cover the dried porcinis with the remaining 1 cup chicken stock and 1/2 cup water in a small pot; bring to a simmer and cook to reconstitute. Remove the tender mushrooms and chop. Reserve the mushrooms and their liquid.
  • Heat the EVOO in a large, deep skillet. Add the fresh mushrooms and cook until dark and tender, about 15 minutes. Add the thyme and shallots, season with salt and pepper and cook, stirring, for 2 to 3 minutes. Deglaze the skillet with the wine. Add the stock and porcinis with some of their liquid (be careful to avoid any grit) and reduce the heat to low.
  • To make the bechamel, melt the remaining 4 tablespoons butter in a saucepot, add the garlic and swirl a minute or two. Whisk in the flour and cook for 1 minute. Whisk in the milk, season with salt, pepper and nutmeg and cook until thickened. Add half of the cheese.
  • Place a layer of the polenta in a medium casserole dish and top with half of the mushrooms and bechamel. Repeat the layers, and then end with a layer of polenta. Dot with butter and top with the remaining cheese.
  • Cool and store for a make-ahead meal, or bake to serve. Bake at 375 degrees F from room temperature until brown, bubbling and hot through, about 50 minutes.

1 teaspoon extra virgin olive oil
1/2 cup tomato paste, mixed with
2 tablespoons water
1/2 cup red pepper, sliced (about 1/2 medium pepper)
1/2 cup green pepper, sliced (about 1/2 medium pepper)
1/4 cup small red onion, sliced (about 1/2 small onion)
1/8 cup mushroom, sliced (about 8)
3 -4 ounces vegan sausage links, cooked
2 tablespoons sliced black olives
3 garlic cloves, sliced

Steps:

  • Preheat the oven to 425.
  • spray two 8 or 9-inch round cake pans with nonfat cooking spray
  • Line the bottoms of each pan with circles of parchment paper.
  • To make polenta, put the water, cornmeal, salt, and seasonings into a large microwavable casserole dish or 1-quart measure.
  • Cook at full power for 4 minutes.
  • Stir well and cook again at high power for 2 more minutes.
  • Stir again and cook at high power for another 2 minutes.
  • Remove from the microwave, stir in the olive oil, and beat with a spoon until completely smooth.
  • Spread the polenta evenly in the bottom of the two pans.
  • Place the pans in the oven and bake for 12 minutes.
  • While the crust is cooking, prepare your toppings.
  • Sauté the vegetables lightly in a non-stick pan until onion begins to soften.
  • After 12 minutes, take the crusts out of the oven and invert them onto a large baking sheet, side by side.
  • They should fall right out of the pan with the parchment paper stuck to them. Peel away the parchment.
  • Spread each crust with pizza sauce (don't use too much or they will be soggy) and top with veggies and vegan sausage.
  • Sprinkle with chopped garlic.
  • Return to the oven for about 10 minutes, until toppings look done.
  • Lift off the baking sheet carefully using a large spatula and your hand--they are not sturdy like regular pizza, so be careful not to let your toppings slide off.
  • Cut into fourths and serve.

Steps:

  • Cook noodles according to package directions.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium-high heat, brown the ground beef with the onion, garlic and green bell pepper. Drain excess fat. Stir in the noodles, pepperoni, pizza sauce and milk, and mix well. Pour this mixture into a 2-quart casserole dish.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes.

Using ready made polenta makes this pizza easy to prepare. It is also lower in carbs then a regular dough pizza. As with any pizza the toppings are endless, so be creative.

1 (18 ounce) package polenta (pre-cooked)
2 teaspoons italian seasoning (divided)
1 tablespoon filtered water
1 tablespoon arrowroot
2 tablespoons wheat flour
1 teaspoon garlic powder
1/2 cup romano cheese (grated)
4 slices smoked tempeh (cut into small pieces)
1 cup prepared spaghetti sauce (You could also use pizza sauce)
1/2 cup broccoli, heads (thinly sliced)
3 scallions (cut in small slices)
1 roasted pepper (I used the the sweet roasted ones in a jar)
1 cup goat mozzarella cheese (shredded)

Steps:

  • Preheat your oven to 450'F.
  • Spray a 12 inch pizza pan with oil.
  • Remove the polenta from its package and drain off the water. Cut it up in pieces and put into the food processor.
  • Process the polenta. It will be crumbly. Add in the water, arrowroot flour, Italian herbs, garlic powder and 1/4 cup Romano cheese. Process again until a doughy mixture is obtained.
  • Using a spatula, scoop the polenta onto the oiled pizza pan. Spray your hands with oil and pat the polenta into the pizza pan making sure you get it evenly as possible.
  • Bake it in your preheated oven for 15 minutes.
  • While its cooking, cut up your broccoli heads, scallion and pepper.
  • When the polenta crust is done remove and top with the spaghetti sauce, tempeh, pepper, broccoli and scallions, cheeses and Italian herbs.
  • Put back into the oven for 25 minutes.
  • Remove when done, let stand for 5 minutes before serving.

12 ounces bulk hot Italian sausage (or links removed from casings)
12 ounces lean ground beef
16 ounces chopped onions
4 garlic cloves, finely chopped (or more to taste)
1 (28 ounce) can whole tomatoes in puree
1 (1 lb) eggplant, cut into 1/2-inch pieces
4 cups water
1 3/4 cups chicken broth (1 14 to 14 1/2-ounce can)
1 1/2 cups cornmeal
1/2 teaspoon salt
3/4 cup freshly grated pecorino romano cheese or 3/4 cup parmesan cheese, plus
freshly grated pecorino romano cheese (for topping) or 3/4 cup parmesan cheese (for topping)

Steps:

  • In 5- to 6-quart Dutch oven, cook sausage and ground beef on medium-high 5 to 6 minutes or until browned, stirring and breaking up meat with side of spoon. With slotted spoon, transfer meat mixture to medium bowl.
  • To same Dutch oven, add onion; cook on medium 8 to 10 minutes or until tender. Stir in garlic; cook 30 seconds. Add tomatoes with their puree; heat to boiling on high, breaking up tomatoes with side of spoon. Reduce heat to medium-low and simmer, uncovered, 10 minutes. Add eggplant and meat; cover and cook 5 minutes on medium. Uncover and cook 10 minutes longer or until eggplant is tender, stirring occasionally.
  • Meanwhile, preheat oven to 400 degrees F. In microwave-safe 4-quart bowl, with wire whisk, combine water, broth, cornmeal, and salt. Microwave on High 15 to 20 minutes or until cornmeal mixture is very thick. After first 5 minutes of cooking, whisk vigorously until smooth (mixture will be lumpy at first); whisk 2 more times during remaining cooking time. Remove from microwave, whisk in Romano.
  • Spoon 2 cups hot polenta into each of two 1 1/2-quart shallow casseroles. Spread polenta over bottom and up sides of casseroles. Spoon filling over polenta. Spread remaining polenta around casserole edge to form a rim. Sprinkle with a couple tablespoons additional grated Romano, Parmesan, or Asiago.
  • Bake one casserole 30 minutes or until hot. Let stand 10 minutes for easier serving. (Freeze the other one for later.).
  • Makes 8 servings (in 2 casserole dishes).
  • Note: if you want to lower the fat content, use turkey Italian sausage. Make sure to use quality sausage - I've used my favorite, our freshly made Merguez, and good sausage really makes a difference.

1 (14 ounce) can cherry tomatoes
¼ cup fresh basil
2 cloves garlic
1 tablespoon red wine
⅛ teaspoon salt
3 cups water
½ teaspoon salt
¾ cup polenta
1 cup grated Pecorino Romano cheese
2 tablespoons butter
1 medium zucchini, thinly sliced
1 ½ cups finely shredded Italian-style cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
  • Combine cherry tomatoes, basil, garlic, red wine, and 1/8 teaspoon salt for marinara in the bowl of a food processor. Pulse a few times to puree. Set aside.
  • Bring water and 1/2 teaspoon salt to a boil in a medium saucepan over medium-high heat. Whisk in polenta slowly, whisking constantly to ensure there are no lumps. Bring back to a boil; reduce heat to low and cook, stirring occasionally, for 5 minutes. Remove from heat and stir in Pecorino Romano cheese and butter.
  • Pour half of the polenta into the prepared casserole dish. Top with half of the sliced zucchini, overlapping slices slightly. Top zucchini with half of the marinara sauce, then sprinkle with half of the Italian-style cheese. Repeat layers one more time. Cover.
  • Bake in the preheated oven for 30 minutes. Uncover and continue to bake until cheese on top is slightly brown, about 10 minutes more. Remove from the oven and let stand for 5 minutes before serving.
