VEGETARIAN FRENCH ONION SOUP



Vegetarian French Onion Soup image

An easy and delicious VEGETARIAN French Onion Soup that's vegan friendly and SO so good on cold winter nights!

Number Of Ingredients 14

3 pounds of yellow onions (about 5 large), peeled and sliced (I cut mine in half and then slice them into half moons)
4 tablespoons of olive oil
2 tablespoons of butter (use vegan where applicable)
1 teaspoon of sugar (you can use coconut sugar here if you'd prefer)
1 ½ teaspoons of salt
4 cloves of garlic, minced
8 cups of vegetable broth*
1/2 cup of red wine**
1 tablespoon of Worcestershire***
2 bay leaves
1 tablespoon of fresh thyme (can use dried if desired)
1/2 teaspoon freshly ground black pepper
4 slices of French bread (or something similar), cut into thick slices
1 cup of Gruyere cheese, freshly grated (optional or sub for vegan cheese)

Steps:

  • Deglaze the pot by stirring in the red wine and use a wooden spoon to scrap any bits and flavor from the sides and bottom of the pot. Stir in the veggie broth, worchestire sauce, bay leaves, thyme, and black pepper. Bring the mixture to a simmer, cover, and cook for 30 minutes. Stir every few minutes.
  • Pre-heat the oven to 400 degrees F. Brush or spray the slices of bread with oil or cooking spray and place on a baking sheet. Toast for 10 minutes, flipping halfway through. You want the bread to be lightly toasted. Once done, set aside.
  • Season soup to taste with additional salt and pepper as needed. Ladle the soup into oven proof bowls, top with the toasted bread, and even sprinkle the cheese across the 4 bowls. Place the bowls on a large baking tray and broil in the oven until the cheese is melted and bubbling around the sides.**
  • Serve immediately and ENJOY!

2 tablespoons avocado oil or other neutral oil
4 large (8 to 10 cups) yellow onions, cut into 1/8-inch slices
1/2 cup dry white wine, like Sauvignon Blanc
2 tablespoons all-purpose flour
8 cups mushroom broth
3 sprigs fresh thyme
2 dried bay leaves
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 tablespoon vegan Worcestershire sauce
2 teaspoons balsamic vinegar
1 (12-inch) French baguette, cut into 1-inch slices
6 slices (about 6 ounces) Swiss cheese
1 1/2 cups (about 6 ounces) shredded gruyere cheese

Steps:

  • Finish the soup: Stir in the Worcestershire sauce and balsamic vinegar. Scoop out the thyme stems and bay leaves and discard them.
  • Meanwhile, preheat the broiler. Set the oven rack to the top, closest to the broiler, and turn the broiler on high. Line a large, rimmed baking sheet with aluminum foil. Arrange six oven-safe bowls or soup crocks on the baking sheet.

Most French onion soup recipes call for beef stock, but substituting mushroom broth instead creates a surprisingly rich soup, full on flavor - without the meat. Could become a staple recipe in vegetarian or meat-loving households! A long cooking time and savory ingredients mean this soup is pretty darn rich. Add in the toasted baguette slices and all that gooey Gruyere... this soup is definitely the main course. Serve alongside a crisp, green salad.

2 tablespoons salted butter
2 tablespoons olive oil
2 large red onions, thinly sliced
2 large sweet onions, thinly sliced
2 teaspoons kosher salt
1 teaspoon white sugar
4 cups mushroom broth (such as Pacific Foods™)
⅔ cup fino dry sherry
1 tablespoon vegan Worcestershire sauce (such as The Wizard's)
2 teaspoons dried parsley
2 teaspoons herbes de Provence
2 bay leaves
1 tablespoon balsamic vinegar
1 (1 ounce) piece Parmesan cheese rind
salt and ground black pepper to taste
8 French baguette slices
¾ cup grated Gruyere cheese
½ cup grated Parmesan cheese

Steps:

  • Melt butter and olive oil in a pot over medium heat. Add red onions and sweet onions; sprinkle with kosher salt and sugar. Cook, stirring frequently, until onions are very tender and caramelized, about 45 minutes.
  • Pour mushroom broth, sherry, Worcestershire sauce, parsley, herbes de Provence, and bay leaves into onion mixture. Bring to a simmer and cook over medium-low heat for 45 to 60 minutes.
  • Reduce heat to low and remove bay leaves. Pour balsamic vinegar into soup and adjust seasoning. Mix well.
  • Place Parmesan cheese rind in the center of the pot and submerge, but do not stir. Cook soup for an additional 20 minutes.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Arrange bread slices on a baking sheet.
  • Broil bread slices in the preheated oven for 2 to 3 minutes per side. Remove from the oven and set aside.
  • Carefully remove cheese rind from the pot and discard.
  • Fill 4 oven-safe bowls evenly with soup and sprinkle each with a light layer of grated Gruyere cheese and Parmesan cheese. Top each with 2 bread slices and sprinkle each with remaining Gruyere cheese and Parmesan cheese. Place bowls on a baking sheet.
  • Broil soup in the preheated oven until cheese is browned and bubbling, 3 to 5 minutes.

2 tablespoons olive oil
6 large onions
2 garlic cloves, minced
1 teaspoon sugar
3 tablespoons flour
4 (14 1/2 ounce) cans vegetable broth
2 cups red wine, dry
salt
pepper

Steps:

  • Begin by slicing your onions to the thickness of your preference.
  • In a large pot, heat oil over medium heat.
  • When oil is hot add onions and cook until soft.
  • Add the garlic and sugar and continue to cook. You will need to stir frequently. Continue cooking for approximately 20 minutes or until the onions are an amber color.
  • Stir in flour and cook 2-3 minutes while tossing the onions.
  • Start to add the broth. You may need to wisk to keep the flour from lumping up.
  • Bring to a boil.
  • Stir occasionally, watch for soup to thicken. If soup does not thicken appropriately mix approximately another tablespoon of flour with enough water to make a runny paste and whisk into soup.
  • Add wine and season with salt and pepper to taste.
  • Reduce heat to low setting and cover.
  • Let simmer 10 minutes and it will be ready to serve.

My MIL keeps Kosher but didn't grow up that way - one of her favorite food memories from childhood was having french onion soup with her grandmother on Sundays in downtown St. Louis. I came up with this recipe to help her capture a childhood memory, in the process it has become a family favorite. Enjoy!

1/2 cup butter
6 cups sweet onions, diced (5-6 medium to lg onions)
4 (1 ounce) packages Lipton Onion Soup Mix (or house brand)
2 (32 ounce) boxes vegetable stock
1 (750 ml) bottle port wine (or any heavy red wine)
1/2 cup Worcestershire sauce
1 teaspoon black pepper
1 tablespoon dried garlic or 3 fresh garlic cloves, minced
1 tablespoon italian seasoning
1 tablespoon dried parsley
1 loaf French bread or 1 loaf Italian bread, thick sliced
2 cups grated gruyere cheese

Steps:

  • In a large saute pan melt the butter and add diced onions, cook until the onions are caramelized.
  • In an 8 qt crock pot mix all the ingredients together, put on high and let come to a boil - approximately 3 1/2 hours, then turn down to low and let simmer until ready to eat.
  • When ready to eat take sliced bread and put on a baking sheet cover with cheese and melt the cheese on the bread. Serve individual bowls of soup and then put the cheese bread on top of the soup ~ enjoy.

2 teaspoons unsalted butter
1 tablespoon vegetable oil
5 large onions, halved and thinly sliced (about 3 lbs)
3 garlic cloves, minced
1/2 teaspoon salt
2 tablespoons all-purpose flour
6 cups roasted vegetable broth or 6 cups low sodium vegetable broth
1/3 cup dry sherry
1 teaspoon Dijon mustard
1 teaspoon sherry wine vinegar
6 slices sourdough bread, toasted (1/2 inch thick)
2/3 cup gruyere or 2/3 cup jarlsberg cheese, shredded

Steps:

  • Heat butter and oil in heavy, large saucepan over medium heat. Add onions, garlic and salt, and cook 5 minutes, stirring often. Reduce heat to very low, and cook, stirring occasionally, 50 to 60 minutes, until onions are very tender and brown.
  • Stir in flour, and cook 3 to 4 minutes, stirring constantly. Blend in broth, sherry and mustard. Cover, and simmer 15 minutes, stirring occasionally. Stir in sherry vinegar.
  • Preheat broiler, ladle soup into six heat-proof bowls. Top each with slice of toast and grated cheese. Broil until cheese is bubbly and golden, about 1 to 2 minutes. Serve hot.

  • Thinly slice the onions about 1/8-inch thick (we used a French cut by slicing stem to root; go to minute 1:40 of the linked video for a tutorial). In a soup pot, heat the butter over medium high heat. Add the onions and sauté for 8 to 10 minutes, stirring often, until very soft and just starting to brown on the bottom. Reduce to medium-low heat and stir in the kosher salt. Cook for 40 to 45 minutes, stirring every 5 to 10 minutes and adjusting the heat so they continue to cook slowly without burning. The onions will change from raw to golden to light brown to very dark brown, and reduce in volume by about 1/4. (Make ahead tip: Make the caramelized onions in advance and refrigerate until ready to make the soup. Reheat in a pan and go to step 3.)
  • Slice the mushrooms. Wash and cut the carrot in half length-wise, then into large chunks. Cut the celery into large pieces. Smash and peel the garlic. In a second pot, heat the butter over medium heat. Add the mushrooms and sauté until browned, about 6 to 7 minutes. Add 8 cups water, kosher salt, vegetables, tomato paste, garlic powder, onion powder, and Worcestershire sauce. Bring to a boil and simmer for 30 minutes. (Make ahead: Make the broth in advance and refrigerate until serving. Then warm before proceeding to Step 3.)
  • When onions are very reduced and dark brown, stir in the sherry and deglaze the pan by scrape all the bits off the bottom of the pan. Sprinkle with the flour and stir until the onions are coated. Strain the homemade broth into the onions (discarding the vegetables). Add the remaining 1 cup water and bring to a simmer for 2 minutes.
  • Place the soup into 6 oven-safe small bowls or ramekins. Preheat a broiler to high or an oven to 400 degrees Fahrenheit. Top with bread slices (about 1/2-inch thick), 1 slice Swiss or Gruyere cheese, and 1 tablespoon grated Parmesan per bowl. Broil 1 to 3 minutes (or bake for 20 minutes) until the cheese is melted and browned. Place on a plate and serve immediately, taking care since the bowls are very hot.
