1 1/2 pounds pinto beans
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
3 thick-cut slices of bacon, cut into thirds
3 cloves garlic
2 bay leaves
1 medium onion, diced
1 red bell pepper, diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl, cover with cold water and let soak overnight.
  • Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

I learned to make pinto beans from my Grandma, who came from Oklahoma. I've added to the recipe, and my Mother used to say mine were the best beans she'd ever tasted. Serve the Southern way - with cornbread and steamed greens.

1 pound dried pinto beans
6 cups water, or more as needed to cover
1 smoked ham hock
1 teaspoon kosher salt
1 tablespoon brown sugar
1 (6.5 ounce) can tomato sauce

Steps:

  • Cover pinto beans with water in a large bowl. Soak beans for 4 hours, changing water every 30 to 45 minutes. Drain.
  • Bring 6 cups water to a boil in a large pot. Add pinto beans, ham hock, and kosher salt to the pot. Pour in more water if needed to cover ingredients by at least 1 inch.
  • Reduce heat to medium-low and simmer until beans are just tender, 2 to 3 hours.
  • Remove ham hock from beans; cut meat from the bone, chop the ham, and return to pot.
  • Stir tomato sauce and brown sugar into the beans. Continue to simmer until beans are tender and flavors are blended, about 1 more hour.

This is my recipe that I have adapted for yummy pinto beans cooked in the crock pot! This is a perfect and very simple dish for a cold day!

1 (16 ounce) package dried pinto beans
1 (8 ounce) jar salsa, mild, medium, hot whatever you prefer (the chunkier the better)
1 -2 teaspoon dried onion flakes
1 -2 teaspoon onion powder
1 -2 teaspoon garlic powder
salt
4 1/2 cups water
1/2 lb andouille sausage (if not Andoullie any kind of spicy sausage will work)

Steps:

  • Rinse and sort beans to get any unwanted material out.
  • Soak Beans overnight 1 lb to 6 cups of water, I usually add a little bit of salt to my soak. The package also lists directions for a quick soak but I prefer to soak mine overnight.
  • Drain beans after soaking. You may use the same water you soak them in, it adds flavor and contains nutrients but, it causes an increase in flatulants.
  • Place the beans in the crock pot followed by the jar of salsa and 4 1/2 cups of water.
  • Stir in onion powder, garlic powder and dried onion flakes.
  • Add sausage (I cut mine into 1/2 inch round pieces).
  • Cook on low for 8 hours or on high for 4. Stir occasionally and add more water if neccessary.
  • Add salt to taste and Enjoy with cornbread! Yummy!

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

1 pound dried pinto beans, rinsed
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
½ pound bacon, cut into 1/2-inch pieces
1 yellow onion, chopped
1 tablespoon chili powder, or to taste
1 tablespoon ground cumin, or to taste
1 ½ teaspoons garlic powder, or to taste
½ bunch fresh cilantro, chopped
salt to taste

Steps:

  • Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.
  • Drain beans, return to pot, and pour in fresh water to cover; add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, reduce heat to low, and simmer for 3 hours.
  • Stir cilantro and salt into bean mixture; simmer until beans are soft, about 1 more hour.
