This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

3 ripe bananas, mashed
2 eggs
1 3/4 cups flour
1 1/2 cups sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon baking soda

Steps:

  • Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
  • Add the baking soda and flour.
  • Combine well for 2-3 minutes.
  • Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

1/2 cup dark chocolate chips (or chopped walnuts, raisins, optional)

Steps:

  • Pre-heat oven to 325F. Grease a 9x5 inch loaf pan and set aside.
  • In a medium bowl, whisk the flour, cinnamon, baking soda and salt. Set aside.
  • In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.
  • Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!

3 cups sliced very ripe bananas ((about 3 medium bananas))
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
3 eggs
1/4 cup almond or peanut butter ((OR melted and cooled butter))
2 tablespoons maple syrup
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 F. Coat an 8x8-inch baking dish with nonstick spray.
  • Grind the oats in a food processor for about 30 seconds, or until they resemble a coarse flour.
  • Add the rest of the ingredients and process for about 1 minute, stopping to scrape down the sides of the processor as needed, until the batter is smooth.
  • Pour into prepared pan, smoothing with a spatula. Bake for 25-28 minutes, or until the edges are golden and a cake tester inserted into the center comes out clean. Let cool in the pan before slicing.
  • Serve chilled, at room temperature, or slightly warm.

3/4 cup sugar (or splenda)
1/4 cup vegetable oil
1 large egg white
1 large egg

1/2 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Combinen first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth.
  • Combine flour, cream of tartar, baking soda, and salt in a bowl, stirring with whisk. Add flour misture to banana mixture, stirring just until moist.
  • Spoon batter into an 8x4 inch loaf pan coated with cooking spray.
  • Bake at 350 for 40 minutes. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on rack.

2 tbsp Dates syrup
1/2 tbsp Baking soda
1 drop Vanilla essence (optional)

Steps:

  • Mash two ripened bananas using a fork in a mixing bowl until there are no lumps in it.
  • Beat in an egg and mix well with banana.
  • Add a cup of powdered oats to this mixture. Add in parts to avoid lumps. Mix well to get a slightly thick dough consistency.
  • Add baking soda, dates syrup and vanilla essence and give it a good mix.
  • Alternately, you can choose to add all the ingredients to a blender and blend them to form a dough.
  • Meanwhile, preheat the oven to 350 degrees and grease the bread pan with butter or avocado oil.
  • Pour in the dough into the bread pan and bake the bread for upto 20 mins until you see golden brown coloud.
  • Turn off the oven and allow it to cool down.
  • Note that the bread will continue to bake even when it is cooling down so do not try to overbake it - baking for longer makes the bread hard.
  • Once cooled down, you can enjoy the soft and fluffy banana bread.

3 eggs
½ cup milk of your choice
2 tbsp canola/vegetable oil
3 tbsp sweetener of your choice ((I used raw sugar but you can use honey or coconut sugar))
3 cups rolled oats
2½ tsp baking powder
1 tsp salt
1 tsp ground cinnamon
½ cup dark chocolate chips
1 tsp vanilla extract

Steps:

  • Add the bananas, eggs, milk, oil, sweetener, oats, baking powder, salt and cinnamon to a blender in that order. (Adding the wet ingredients first will allow the blender to easily blend the batter.)
  • Blend until smooth, stopping and scraping down the blender if needed.
  • When the batter is smooth, fold in the chocolate chips with a rubber spatula.
  • Pour the batter into the prepared loaf pan then transfer to the oven.
  • Bake the banana bread for 1 hour and 20 minutes, covering with foil after 30 minutes if the bread is browning too fast.
  • The banana bread is ready when it is golden brown and risen and firm to the touch. A skewer inserted should come out with moist crumbs.
  • Remove the banana bread from the oven and allow to cool for 20 minutes in the pan before removing and allowing to cool completely on a wire rack.
