MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

- Preheat the oven to 350 F. Coat an 8x8-inch baking dish with nonstick spray.
- Grind the oats in a food processor for about 30 seconds, or until they resemble a coarse flour.
- Add the rest of the ingredients and process for about 1 minute, stopping to scrape down the sides of the processor as needed, until the batter is smooth.
- Pour into prepared pan, smoothing with a spatula. Bake for 25-28 minutes, or until the edges are golden and a cake tester inserted into the center comes out clean. Let cool in the pan before slicing.

- Preheat oven to 350.
- Combinen first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth.
- Combine flour, cream of tartar, baking soda, and salt in a bowl, stirring with whisk. Add flour misture to banana mixture, stirring just until moist.
- Spoon batter into an 8x4 inch loaf pan coated with cooking spray.
- Bake at 350 for 40 minutes. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on rack.

- Mash two ripened bananas using a fork in a mixing bowl until there are no lumps in it.
- Beat in an egg and mix well with banana.
- Add a cup of powdered oats to this mixture. Add in parts to avoid lumps. Mix well to get a slightly thick dough consistency.
- Add baking soda, dates syrup and vanilla essence and give it a good mix.
- Alternately, you can choose to add all the ingredients to a blender and blend them to form a dough.
- Meanwhile, preheat the oven to 350 degrees and grease the bread pan with butter or avocado oil.
- Pour in the dough into the bread pan and bake the bread for upto 20 mins until you see golden brown coloud.
- Turn off the oven and allow it to cool down.
- Note that the bread will continue to bake even when it is cooling down so do not try to overbake it - baking for longer makes the bread hard.
- Once cooled down, you can enjoy the soft and fluffy banana bread.
