"I make this chowder for our annual Souper Bowl luncheon at work, and everybody loves it!" comments Chris Sheetz of Olmsted Falls, Ohio. "I've slimmed it down by using both reduced-fat margarine and mushroom soup." Tender chunks of red potatoes add color and texture to her thick chowder.

2 cups sliced fresh mushrooms
4 celery ribs with leaves, chopped
1 medium onion, chopped
2 tablespoons reduced-fat margarine
2 cans (10-3/4 ounces each) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 bottle (8 ounces) clam juice
1/2 cup white wine or chicken broth
6 medium unpeeled red potatoes, cubed
1/2 teaspoon salt
1/4 teaspoon white pepper
3 cans (6-1/2 ounces each) minced clams, undrained

Steps:

  • In a Dutch oven or soup kettle, saute the mushrooms, celery and onion in margarine until tender. In a bowl, whisk the soup, clam juice and wine or broth; stir into vegetable mixture. Add the potatoes, salt and pepper. Bring to a boil. , Reduce heat; cover and simmer for 25 minutes. Add clams; cover and simmer for 5-15 minutes or until potatoes are tender.

6 bacon slices, chopped
1 1/2 large onions, chopped
1 1/2 pounds russet potatoes (about 2 large), peeled, cut into 1/2-inch pieces
1 large red bell pepper, chopped
3 10-ounce cans baby clams, drained, liquid reserved
2 cups milk (do not use low-fat or nonfat)
1/2 cup bottled clam juice
2 15-ounce cans cream-style corn
3 tablespoons chopped fresh thyme or 1 tablespoon dried
Additional chopped fresh thyme

Steps:

  • Cook chopped bacon in heavy large saucepan over medium heat until fat is rendered and bacon begins to brown. Add onions and sauté until tender, about 10 minutes. Add potatoes and red bell pepper and sauté 1 minute. Add reserved liquid from canned clams, milk and bottled clam juice. Simmer chowder uncovered until vegetables are tender, about 15 minutes.
  • Add corn and clams to chowder; simmer until slightly thickened, about 5 minutes. Mix in 3 tablespoons chopped thyme. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before serving.) Ladle chowder into bowls. Garnish with additional thyme and serve.

2 teaspoons oil
1 cup chopped onion
1/2 cup chopped carrot
1/2 cup chopped green bell pepper
1 celery rib, chopped
3 garlic cloves, minced
3 cups diced potatoes
1 (15 ounce) can diced tomatoes, undrained
1 (28 ounce) can crushed tomatoes
1 (10 ounce) can baby clams, drain and RESERVE juice
1 1/2 cups clam juice, can use water, chick broth
1 teaspoon sugar
1/4 teaspoon pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1 bay leaf
1/2 teaspoon salt, about to taste

Steps:

  • In a large soup pot, heat the oil.
  • Add onions, carrots, bell pepper, celery and garlic. Cook, stirring often, for about 8 minutes.
  • Add potatoes, diced tomatoes, crushed tomatoes, reserved clam juice (from canned clams) and clam juice.
  • Stir and bring to a boil.
  • Add sugar, pepper, thyme, basil, bay leaf, and salt to taste.
  • Reduce heat and gently simmer for about 30 minutes or until potatoes are nice and tender.
  • Stir in the clams during the last 5 minutes of simmering.
  • Remove bay leaf and serve.

This is a clam chowder that I have created that helps me keep within my food intolerances but fulfill my need for yummy clam chowder. No soy, gluten, dairy, or yeast. A little thinner base than most chowders and the base is brown not white, but the recipe is yummy as all get out. Based on recipe 52272.

Number Of Ingredients 7

6 -7 pieces bacon, cut into small pieces
2 (5 ounce) cans baby clams, with juice reserved
6 -7 potatoes, cubed
2 cups brown rice milk
3 tablespoons potato starch (you can substitute Vance's DariFree to make the soup a little sweet)
1 cup chicken stock (pick one without any of your food intolerances)
1 teaspoon dried dill weed

Steps:

  • Add bacon to sauce pan and cook on medium low heat until crispy.
  • Add clam juice from both cans.
  • Add potatoes.
  • Cook and cover until potatoes are fork tender, about 15-20 minutes.
  • Stir occasionally so potatoes won't stick.
  • Combine 1 cup of rice milk with potato starch or Vance's DariFree.
  • Add rice milk, the rice milk mix, chicken stock, and dill weed.
  • Stir together.
  • Cook for about 30-45 minutes or until thickened.
  • Add the clams in the last 5 minutes of cooking.
  • Stir occasionally.
