HOLIDAY BANANA BREAD
Banana bread that's crisp on the top, moist in the middle, and with a special Yuletide twist. This recipe makes 3 loaves, so use a big bowl when you're mixing these ingredients. Also, pardon the metric, but it's cleaner this way. For those who don't use metric: 325 mg sugar = 1 5/8 cups + 1/4 teaspoon 210 mL liqueur = 1/2 cup + 1/3 cup + 2 1/2 teaspoons 115 mL syrup = 1/3 cup + 1/8 cup + 1 teaspoon These eliminate the need for additional liquid in the recipe. You may add chopped walnuts or chocolate chips if you wish, but I don't think they're necessary.

Steps:
- Grease and flour three loaf pans and preheat oven to 350 F (175 C).
- Cream together butter and sugar.
- Little by little, add in the liqueur and gingerbread syrup. When all the liquid is added, it should resemble mayonnaise.
- Add bananas, baking soda, baking powder and salt. Blend well.
- Taste the mixture at this point; you should be able to taste the banana and gingerbread syrup in equal measure. Adjust to taste ad libitum.
- Blend in eggs.
- Blend in flour.
- Add chopped nuts or chocolate chips, if you so choose.
- Pour into greased and floured pans.
- Bake all three pans at 350 for 55 minutes or until toothpick inserted in the center comes out clean.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.
YULETIDE BANANA BREAD
Rich but relatively fuss-free, this is no ordinary banana loaf! Regina Albright of Southaven, Mississippi fills her quick bread with macadamia nuts, raisins and coconut to create a memorable treat.

- In a food processor or blender, process 1/2 cup macadamia nuts until ground; set aside. Chop remaining nuts; set aside. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, salt and ground nuts; stir into creamed mixture just until moistened. Fold in bananas, raisins, coconut and chopped nuts
- Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 65-70 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; gradually add to creamed mixture. Beat in bananas just until combined. Stir in the walnuts, chocolate chips and cherries., Pour into a greased 9x5-in. loaf pan.
