IRRESISTIBLE CHICKEN CURRY



Irresistible Chicken Curry image

This Indian-inspired chicken curry is rich, creamy and saucy. Serve it with rice or naan bread so that you have something to pick up all of the creamy sauce. We do not recommend substituting the yogurt or cream in this recipe since they add richness and flavor to the sauce.

1 to 1 ½ pounds boneless, skinless chicken thighs or breast
1 1/2 teaspoons fine sea salt
1 teaspoon ground cumin
3/4 teaspoons ground coriander
1/2 teaspoon ground turmeric
1/4 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper, optional for heat, add an extra 1/4 teaspoon for medium-spicy
6 medium cloves garlic, peeled
A 1-inch cube of fresh ginger, peeled
1 medium onion, roughly chopped
1 1/2 cups water
3 tablespoons vegetable oil or use ghee
2 tablespoons tomato paste
4 tablespoons full-fat plain unsweetened yogurt
1 teaspoon Garam Masala, see notes
3 tablespoons heavy cream
Handful cilantro leaves, chopped, optional for serving

Steps:

  • Cut the chicken into 1-inch pieces, and then add to a bowl. If you'd like to leave the chicken uncut or if you are using bone-in chicken pieces, the chicken can be left whole.
  • Scatter 1/2 teaspoon of the salt, 1/2 teaspoon ground cumin, 1/4 teaspoon ground coriander, 1/4 teaspoon ground turmeric, 1/4 teaspoon black pepper and 1/4 teaspoon cayenne pepper over the chicken. Toss well and set aside to marinate for at least 20 minutes.
  • Make ahead: The chicken can be left to marinate up to 24 hours, keep it covered and stored in the refrigerator.
  • Add garlic, ginger, onion and 1/2 cup of water to a blender or food processor. Blend until mostly smooth. An immersion blender with cup attachment can also be used.
  • Heat the oil or ghee in a wide skillet (with lid) over medium-high heat. Arrange the marinated chicken into the pan so that it is in one layer and brown on both sides. Remove the chicken from the pan and place the skillet back onto the heat.
  • Add the onion-ginger mixture and cook, stirring often, until all of the water has evaporated, about 5 minutes.
  • Stir in the remaining 1/2 teaspoon ground cumin, 1/2 teaspoon coriander and 1/4 teaspoon turmeric over the onion-ginger mixture, and cook for about 20 seconds. Stir in the tomato paste, turn the heat down to medium-low and then cook another minute.
  • Add the yogurt, a tablespoon at a time, stirring it into the sauce before adding anymore.
  • Return the chicken pieces and any accumulated juices to the pan along with the remaining cup of water and 3/4 teaspoon of salt. Bring to a boil, turn the heat down to a simmer, and then cover with a lid. Simmer, covered, for 20 minutes.
  • Remove the lid and stir in the Garam Masala and cream. Taste the sauce and add the final 1/4 teaspoon of salt if you feel that it is needed (we almost always add it).
  • Turn the heat back up to medium-high and cook, stirring gently every now and them, until the sauce has reduced a bit and thickened, 3 to 5 minutes. Serve with fresh cilantro scattered on top.

We loaded it with spices, like cardamom, cinnamon, ginger, coriander and cumin, thinly sliced onions and chopped tomatoes for a full range of flavors. Use basmati rice when serving - it's the perfect base for soaking up all the curry's goodness. Recipe developed by Food Network Kitchen.

8 skinless, bone-in chicken thighs and drumsticks (4 of each; about 3 pounds total)
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
4 green cardamom pods
1 1-inch piece cinnamon stick
1 whole clove
2 onions, thinly sliced
1 tablespoon grated fresh ginger
4 cloves garlic, grated
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 teaspoon Kashmiri chili powder or hot paprika
1/2 teaspoon ground turmeric
3 small plum tomatoes, diced
1 pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
Cooked basmati rice, for serving
Chopped fresh cilantro, for topping

Steps:

  • Season the chicken all over with salt and pepper. Heat 2 tablespoons vegetable oil in a large Dutch oven over high heat. Add the chicken in a single layer and brown 3 to 4 minutes per side. Remove to a plate.
  • Reduce the heat to medium high and add the remaining 2 tablespoons vegetable oil to the pot along with the cardamom pods, cinnamon stick and clove. Cook, stirring, until the whole spices are toasted, about 20 seconds.
  • Add the onions, season with 1/2 teaspoon salt and cook, stirring, until soft and browned, 8 to 10 minutes. Add the ginger and garlic and cook, stirring, until golden, about 2 minutes. Add the coriander, cumin, chili powder and turmeric; cook, stirring and scraping the pan, until the ground spices are toasted, about 30 seconds.
  • Add the tomatoes and cook, stirring, until they break down, 4 to 5 minutes. Return the chicken and any juices to the pot. Stir in 1 1/4 cups water and bring to a boil. Reduce the heat to medium low, cover and simmer until the chicken is almost cooked through and the sauce has thickened slightly, about 12 minutes.
  • Tuck the potatoes among the chicken pieces, submerging them as much as possible; season with 1/2 teaspoon salt. Cover and simmer until the chicken is tender and the potatoes are just cooked through, 18 to 20 minutes. Uncover and simmer, turning the potatoes, until the curry is thickened, 8 to 10 minutes.
  • Thin the curry with water, if necessary; season with salt. Serve with rice and top with cilantro.

12 ounces ghee (clarified butter)
1/2 lb onion, sliced
4 ounces fresh ginger, grated
8 garlic cloves, crushed
1 pint water
2 teaspoons turmeric

2 teaspoons garam masala
3 teaspoons ground cumin
1/2 teaspoon black pepper, ground
1 teaspoon hot chili powder

Steps:

  • Melt the ghee in a large heavy pan, and fry half of the onions till golden.
  • Liquidise the ginger garlic and the rest of the onions with the water.
  • Add the liquid to the pan of fried onions and cook for 10 minutes.
  • Now add all of the spices to the pan and cook for a further 10 minutes.
  • Add the chicken and yogurt, cook slowly till the chicken is very tender.
  • Serve with rice, dhal and a cooling side dish.

1/2 lb angel hair pasta or 1/2 lb spaghettini pasta
1 tablespoon vegetable oil
1/4 lb chicken breast, cut into chunks (or you can substitute herbal flavour tofu)
2 garlic cloves, finely chopped
1 tablespoon chopped fresh gingerroot
3 green onions, finely chopped
1 tablespoon curry powder
1/2 teaspoon hot chili paste
2 leeks, trimmed and thinly sliced
1 carrot, grated
1 sweet red pepper, thinly sliced
1/4 lb bean sprouts
1/3 cup vegetable stock or 1/3 cup water
2 tablespoons soy sauce
1 tablespoon granulated sugar
1 tablespoon sesame oil
1 tablespoon rice wine (sherry OK)

Steps:

  • Place rice noodles in large bowl, cover with very hot tap water and soak for 10 minutes.
  • Drain well.
  • (If you are using regular pasta, cook in pot of boiling water until tender).
  • In small bowl, combine stock, soy sauce, sugar, sesame oil and rice wine.
  • Heat vegetable oil in large non-stick wok on medium-high heat.
  • Stir-fry chicken chunks for a few minutes until slightly browned; check the seasoning (do the same if using tofu).
  • Remove and reserve.
  • Add garlic, ginger and green onions to wok.
  • Cook for 30 seconds.
  • Add curry powder and chili paste and cook for 10 to 20 seconds longer.
  • Add leeks, carrot and red pepper.
  • Cook until barely wilted.
  • Add bean sprouts and reserved sauce and bring to a boil.
  • Add chicken/tofu and noodles and cook together until hot and well combined.
  • Serve hot.

This easy staple chicken curry is a fantastic recipe for family dinners. It's made with just a handful of ingredients and is enriched with creamy yogurt

2 tbsp sunflower oil
1 onion, thinly sliced
2 garlic cloves, crushed
thumb-sized piece of ginger, grated
6 chicken thighs, boneless and skinless
3 tbsp medium spice paste (tikka works well)
400g can chopped tomatoes
100g Greek yogurt
1 small bunch of coriander, leaves chopped
50g ground almonds
naan breads or cooked basmati rice, to serve

Steps:

  • Heat the oil in a flameproof casserole dish or large frying pan over a medium heat. Add the onion and a generous pinch of salt and fry for 8-10 mins, or until the onion has turned golden brown and sticky. Add the garlic and ginger, cooking for a further minute.
  • Chop the chicken into chunky 3cm pieces, add to the pan and fry for 5 mins before stirring through the spice paste and tomatoes, along with 250ml water. Bring to the boil, lower to a simmer and cook on a gentle heat uncovered for 25-30 mins or until rich and slightly reduced. Stir though the yogurt, coriander and ground almonds, season and serve with warm naan or fluffy basmati rice.

450ml milk
4 large eggs
250g plain flour
2 tbsp sunflower or vegetable oil

Steps:

  • Up to 3-4 hrs before cooking, mix together the milk, eggs, flour and 2 tsp salt in a food processor or blender until you have a smooth batter. If you don't have a food processor or blender, whisk the eggs into the flour and salt, then gradually whisk in the milk until smooth. Transfer to a jug, cover and leave at room temperature for at least 15 mins.
  • Heat oven to 220C/200C fan/gas 7 and brush 12 holes of a muffin tin with the oil. Heat the tin in the oven for 5 mins, then carefully lift out and quickly pour the batter into the holes. Bake in the oven for 5 mins, then reduce oven temperature to 200C/180C fan/ gas 6 and cook for a further 30 mins until puffed, risen and golden.

This is a tried & tested recipe that I cook for family and friends on a regular basis, I have spent years learning how to make the best curries and this is my favourite. Nothing out of a jar just fresh ingredients, this is honestly better that what you get from most Indian restaurants.

500 g chicken
4 tablespoons vegetable oil
2 large onions
8 garlic cloves
1 tablespoon ginger
500 ml hot water (Aprox Amount)
2 teaspoons curry powder (any good one will do)
1 1/2 teaspoons paprika
1 1/2 teaspoons turmeric
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon cumin
1 teaspoon flour, I use Grama flour but any will do
1 teaspoon chili powder
1/2 teaspoon ground fenugreek (optional)
4 tablespoons vegetable oil
3 garlic cloves
1 teaspoon ginger
1 (8 ounce) can chopped tomatoes
1 teaspoon salt
1 bay leaf
1 stick cinnamon
1 chicken stock cube
200 ml orange juice
4 -8 tablespoons ghee (optional)
2 tablespoons of chopped coriander

Steps:

  • Cook Chicken, or other meat.
  • You can grill, fry or oven cook meat in any way you like. I often fry in oil adding a little turmeric and garlic. Once cooked set the pre-cooked meat aside.
  • Base Sauce.
  • Chop onions, ginger and Garlic roughly and fry in oil until cooked, add hot water, just enought to cover onions and garlic, you may not need all 500ml. Then simmer for 20 minutes.
  • After 20 minutes take off heat let cool then blend with either a hand blender or in traditional blender, then set aside.
  • Spice Mix.
  • While the base sauce is cooling this is a good time to prepare you spice mix, just put all the spices in one bowl and mix together.
  • The Curry.
  • Heat oil to medium heat, and fry garlic and ginger for about 2 - 3 minutes, towards the end of the 3 minutes turn the heat down to very low.
  • Once the oil, garlic and ginger have cooked and cooled a little add the spice mix a spoon at a time, you want to make a paste when the oil blends with the spices, so you may not need all the spice mix or you may need to add more oil.
  • Once you have a runny oily paste turn the heat up very slightly, be very careful because if the spices burn the whole dish will be ruined. The trick is not to fry the spices just heat them sufficiently enough to bring out all the aromas and flavours, this should take only a few minutes.
  • Then add the tomatoes, curry base, orange, salt, bay leaf, cinnamon, chicken stock cube and pre cooked chicken stirring the dish well.
  • Let simmer for at least 20 mins but can be left for hours.
  • 5 mins before you are ready to serve add the coriander and Ghee then dish up, I would recommend to serve with chapattis or basmati rice.

Impress with this tandoori masala-spiced Indian dish with peppers, coconut and fresh coriander

6 tbsp tandoori masala powder
2 tbsp ginger paste
2 tbsp garlic paste
500g pot coconut yogurt, plus extra to serve
4 onions , 2 cut into wedges, 2 chopped
2 peppers , cut into large chunks
1 ¼kg skinless chicken thigh , cut into large chunks
1 tsp olive oil
big bunch coriander , stalks chopped
2-3 tsp hot chilli powder
680ml jar passata
160ml can coconut cream
rice and naan bread , to serve

Steps:

  • In a very large bowl, mix half the spice mix, 1 tbsp each of the pastes, three-quarters of the yogurt and some salt. Stir in the onion wedges, peppers and chicken, then leave to marinate overnight in the fridge.
  • Fry the chopped onions in the oil until really soft. Add the remaining spice mix and pastes, the coriander stalks and chilli powder. Cook for 1 min, then stir in 100ml water and the passata. Simmer for 15 mins, then add the coconut cream and remaining yogurt. Leave chunky or blitz with a blender.
  • Heat oven to 220C/200C fan/gas 7. Spread the chicken and veg on a baking tray. Roast for 15-20 mins until cooked and slightly charred. Tip into the sauce. Serve with rice, naan, extra yogurt and coriander leaves.

A rustic and authentic quick Indian one-pot packed with tonnes of hot Asian spices and fragrant coriander.

1 large onion
6 garlic cloves, roughly chopped
50g ginger, roughly chopped
4 tbsp vegetable oil
2 tsp cumin seeds
1 tsp fennel seeds
5cm cinnamon stick
1 tsp chilli flakes
1 tsp garam masala
1 tsp turmeric
1 tsp caster sugar
400g can chopped tomatoes
8 chicken thighs, skinned, boneless (about 800g)
250ml hot chicken stock
2 tbsp chopped coriander

Steps:

  • Roughly chop 1 large onion, transfer to a small food processor, and add 3 tbsp of water - process to a slack paste. You could use a stick blender for this or coarsely grate the onion into a bowl - there's no need to add any water if you are grating the onion. Tip into a small bowl and leave on one side.
  • Put 6 roughly chopped garlic cloves and 50g roughly chopped ginger into the same food processor and add 4 tbsp water - process until smooth and spoon into another small bowl. Alternatively, crush the garlic to a paste with a knife or garlic press and finely grate the ginger.
  • Heat 4 tbsp vegetable oil in a wok or sturdy pan set over a medium heat.
  • Combine 2 tsp cumin seeds and 1 tsp fennel seeds with a 5cm cinnamon stick and 1 tsp chilli flakes and add to the pan in one go. Swirl everything around for about 30 secs until the spices release a fragrant aroma.
  • Add the onion paste - it will splutter in the beginning. Fry until the water evaporates and the onions turn a lovely dark golden - this should take about 7-8 mins.
  • Add the garlic and ginger paste and cook for another 2 mins - stirring all the time.
  • Stir in 1 tsp garam masala, 1 tsp turmeric, and 1 tsp caster sugar and continue cooking for 20 secs before tipping in a 400g can chopped tomatoes.
  • Continue cooking on a medium heat for about 10 mins without a lid until the tomatoes reduce and darken.
  • Cut 8 skinless, boneless chicken thighs into 3cm chunks and add to the pan once the tomatoes have thickened to a paste.
  • Cook for 5 mins to coat the chicken in the masala and seal in the juices, and then pour over 250ml hot chicken stock.
  • Simmer for 8-10 mins without a lid until the chicken is tender and the masala lightly thickened - you might need to add an extra ladleful of stock or water if the curry needs it.
  • Sprinkle with 2 tbsp chopped coriander and serve with Indian flatbreads or fluffy basmati rice and a pot of yogurt on the side.
