3 tablespoons dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon pepper
½ teaspoon salt
1 teaspoon dried basil
1 tablespoon green onion
1 tablespoon green onion
½ teaspoon dried minced garlic
½ teaspoon dried minced onion

Steps:

  • Slice green pepper.
  • In a medium size bowl, combine Greek yogurt, dried parsley, garlic powder, onion powder, pepper, salt, dried basil, and green onions. Mix until well combined.
  • To prepare the platter, cut an assortment of your favorite vegetables into the shape they are easiest to dip with. (We used cauliflower, cucumber, green bell pepper, broccoli, celery, yellow bell pepper, carrots, red bell pepper, radishes, and cherry tomatoes.)
  • Surrounding a bowl, lay vegetables on top of a bed of kale and fill the bowl with the dip.
  • Optional: Sprinkle with some green onions, dried minced garlic, and dried minced onion.
  • Enjoy!

1 cup chopped shallots (about 2 large shallots; 1/3 pound)
Kosher salt
1 teaspoon balsamic vinegar
1 cup 2-percent Greek yogurt
1/4 cup 1-percent milk
1/4 cup chopped fresh chives
Freshly ground black pepper
Cut-up vegetable sticks, low-salt pretzels or pita chips, for serving

Steps:

  • Heat the olive oil in a small skillet over medium heat. Add the shallots and 1/2 teaspoon of salt and cook, stirring frequently, until translucent and soft, about 5 minutes. Add 1/4 cup of water and the balsamic vinegar, reduce the heat to medium and cook, stirring occasionally, until the shallots are browned and caramelized, 12 to 15 minutes.
  • Combine the shallots, yogurt, milk, chives, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl and stir until blended. Cover and chill for 30 minutes before serving. The dip will keep, refrigerated, overnight.

This easy yogurt feta dip is one of my favorite back-pocket appetizers-it's just as fitting at a fancy dinner party as it is at a casual potluck. The dip is creamy but light and can be served with veggies or chips (I usually do both!). Be sure to use whole milk Greek yogurt for the best flavor and texture (if buying Fage brand, it's labeled 5%). The fresh herbs (scallions, dill and tarragon) give the dip its flavor. If you can't find tarragon, substitute mint or parsley (but do try to find tarragon; it's so good here!).

1 garlic clove (grated)
1 tablespoon fresh lemon juice
1 cup plain whole-milk Greek yogurt
2 tablespoons milk
1/4 cup crumbled feta cheese
1/4 teaspoon Aleppo style pepper or pinch red pepper flakes
1 teaspoon honey
2 tablespoons finely chopped scallions
1 tablespoon chopped dill
1 teaspoon chopped tarragon
Salt and freshly ground black pepper
Good quality extra virgin olive oil, for serving
Chips and/or veggies, such as carrots, cucumbers, radishes, blanched asparagus, fennel wedges and/or sugar snap peas, for serving

Steps:

  • In a bowl, combine the garlic and lemon juice. Let sit 5 to 10 minutes (this will mellow out the garlic flavor).
  • Add the yogurt, milk, feta, Aleppo style pepper, honey, scallions, dill and tarragon. Season well with salt and pepper. If you have some time, let the dip sit for 30 minutes to let the flavors mend (if not, it's still good if served immediately!). Before serving, transfer the dip to a serving bowl, and drizzle with olive oil. Serve with chips or veggies.
