This is an eggless chocolate chip cookie that is crisp with a terrific flavor; easy to make, too.

½ cup packed brown sugar
½ cup white sugar
¼ cup margarine or butter
¼ cup shortening
½ cup plain nonfat yogurt
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the brown sugar, white sugar, margarine and shortening until light and fluffy. Stir in yogurt and vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until incorporated, then mix in chocolate chips. Drop by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown. Cool for a minute on the cookie sheets before removing to wire racks to cool completely.

1 cup plus 2 tablespoons all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 tablespoons cold butter
1/2 cup fat-free plain yogurt
1 teaspoon sugar
1/2 teaspoon fat-free milk

Steps:

  • In a bowl, combine flour, baking powder, salt and baking soda; cut in butter until crumbly. Combine yogurt and sugar; stir into the dry ingredients just until moistened. Turn onto a floured surface; knead 4-5 times. Place on a baking sheet that has been coated with cooking spray; pat into a 6-in. x 4-in. rectangle. Cut into six square biscuits (do not separate biscuits). Brush tops with milk. Bake at 450° for 12-15 minutes or until golden. Serve warm.

1 1/4 cups brown sugar
1/2 cup nonfat plain yogurt
2 egg whites
1 tablespoon lemon peel, grated
1/2 teaspoon vanilla extract
2 cups oats, uncooked
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 cup powdered sugar

Steps:

  • Beat butter and sugar until fluffy. Add yogurt, egg whites, lemon peel and vanilla. Mix until well blended. Gradually add combined remaining ingredients except powdered sugar, mix well.
  • Cover and refrigerate 1 to 3 hours.
  • With lightly floured hands, shape dough into 1 inch balls, place on prepared cookie sheet. Using bottom of glass coated with sugar, press into inch thick circles.
  • Bake at 180ºC for 10 to 12 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheet, remove to wire rack. Sift powdered sugar over warm cookies. Cool completely.

Vanilla bean 1
Eggs (around 1) ½ cup
Sunflower seed oil ¼ cup
Low-fat Yogurt white ½ cup
Sugar ½ cup
Lemon peel 1
Powdered sugar to taste

Steps:

  • To prepare these yogurt cookies , start by placing the flour 1 , salt 2 and baking powder for desserts 3 in a bowl.
  • Now add the sugar 4 and the egg 5 . Stir with a spatula 6
  • and add the yogurt 7 . Stir some more, add the sunflower oil 8 and continue mixing the ingredients together. Add the seeds from one vanilla pod 9 ,
  • the lemon zest 10 , and knead with your hands 11 to obtain a homogeneous dough 12 .
  • Now take around 1 oz of dough 13 , roll it out and join both tips to create a small donut 15 .
  • Place the cookies onto a tray lined with parchment paper, a few inches apart from each other as they will grow in size when baked 16 .
