When at home, do as they do in India by serving a raita as an accompaniment and a palate cooler when eating spicy foods.

- Beat yogurt and water in medium bowl, using wire whisk, until well blended. Stir in remaining ingredients.
- Refrigerate at least 30 minutes to blend flavors. Cover and refrigerate any remaining yogurt mixture up to 2 weeks.

APPLE RAITA
Raita is an elemental Indian yogurt sauce, refreshing alongside a fiery curry or even as a sauce for a plain grilled fish. Simple to prepare, it is basically seasoned yogurt. Additions may be fresh herbs, toasted spices, ginger, garlic and nearly any vegetable or fruit imaginable, from cucumber or carrot to apple or banana.

Steps:
- In a small mixing bowl, stir together yogurt, apple, ginger, chile and salt.
- Warm oil in a very small skillet over medium heat. When oil is hot, add mustard seeds and cumin seeds. Let seeds sizzle and pop, then stir in garlic and let sizzle without browning.
- Carefully pour hot contents of skillet into yogurt and stir together. Let mixture sit for 5 minutes, then taste and adjust seasoning. Serve at cool room temperature. (May be prepared up to several hours in advance.)

APPLE RAITA RECIPE
Apple Raita is yummy and creamy dish prepared by mixing apple pieces with yogurt (curd) and spices. Lightly spiced apple and yogurt dip is a perfect accompaniment for vegetable biryani and main course food items and a fruity alternative to routine boondi raita. That's not all, it can be served as dessert too.

- Take yogurt (curd) in a bowl. Add sugar and cumin powder, beat until smooth.
- Add chopped fresh apple and salt. If you do not like skin of apple then peel it before chopping.
- Mix well. Apple raita is ready.
- Transfer it to a serving bowl, sprinkle black pepper powder over it and serve chilled.

- Wash and chop the fruits.
- Wash and chop mint leaves.
- Dry roast the cumin seeds and powder.
- Take yogurt in a large mixing bowl.
- Add salt, freshly crushed peppercorns, cumin powder to the fresh cream and whisk until this curd mixture become creamy.
- Add all the chopped fruits and mint leaves and mix well. Serve chilled.
CUCUMBER YOGHURT RAITA
Very cool and refreshing side dish, goes very well with spicy curries, naan bread and even grilled meat. This can be made upto a day in advance, cover and refrigerate and stir before serving.
