40 grams Currants
300 grams yellow Lentils
500 milliliters Vegetable broth
0.5 tsp Turmeric
salt
1 Tbsp Cumin
1 Tbsp Coriander
50 grams Macadamia Nuts
1 organic Lime
0.5 handful fresh mint
100 grams Snow peas
200 grams Cherry tomatoes
1 shallot
5 Tbsps olive oil
300 grams Greek Yogurt (0.1% fat)

Steps:

  • Soak currants in a bowl of hot water soak, drain later.
  • Briefly rinse lentils with cold water in a colander. Then bring lentils to a boil in a pot with broth, turmeric and season with some salt. Simmer for about 10 minutes over low heat until tender. Drain and let cool in a bowl. Toast cumin seeds and coriander seeds in a frying pan, then crush in a mortar and mix with lentils.
  • Coarsely chop macadamia nuts and toast in a dry frying pan until golden brown.
  • Rinse lime in hot water, wipe dry and finely grate zest. Squeeze juice from lime. Rinse mint, shake dry, pluck leaves from stem and chop finely.
  • Rinse snow peas and pull threads. Rinse tomatoes and cut in half. Peel shallot, finely chop and sauté in a pan with 1 tablespoon hot oil. Add snow peas and tomato and cook for 1-2 minutes. Then add tomato mixture, nuts, drained currants and spices to the lentils, mix and season with lime juice, olive oil and salt.
  • For the dip, mix yogurt in a bowl with mint and 1 teaspoon lime zest.
  • Serve couscous in a bowl and with yogurt dip.

I made this recipe the other day, instead of using rice , I used Couscous, and it was really good. Basically it is cooked the same as the lentils and Rice Recipe (Mujadarah) only subsituting couscous for Rice.

1 cup lentils
1/2 cup couscous
2 large onions (sliced 1/2 inch slivers)
1/4 cup olive oil or 1/4 cup vegetable oil
4 cups chicken broth or 4 cups vegetable broth
salt (to taste)
1/2 teaspoon black pepper
1 teaspoon cumin
1 dash cayenne (optional)

Steps:

  • Saute onions with olive oil (stirring occasionally) until golden brown. Reserve 4 tablespoons of browned onions for garnish.
  • Meanwhile place lentils, water (or broth) salt,and black Pepper in a different saucepan and cook for around 20 minutes or until lentils are tender.
  • Add Couscous, browned onions, cumin, and dash of cayenne to the lentils, stir, cover and simmer for about 5-10 minutes or until water is absorbed.
  • Place Lentils and Couscous in serving dish and garnish with 4 tablespoons of reserved browned onions.
  • This recipe is best when served with Tomatoe Salad. See my recipe for Tomatoe Salad.

1 cup lentils, uncooked
4 garlic cloves, crushed
1 teaspoon cumin, ground
1/2 teaspoon salt
1/8 teaspoon pepper
1/16 teaspoon ground cinnamon
1 bay leaf
3 cups water
2 teaspoons vegetable oil
2 cups onions, cut in thin slices
1/2 cup couscous, uncooked

Steps:

  • Place the lentils in a medium saucepan.
  • Add garlic, spices, and 3 cups of water. Bring to a boil over medium heat, stirring occasionally.
  • Reduce heat to low, cover, and simmer 40 minutes, stirring once halfway through cooking time.
  • While lentils are cooking, bring 1 cup of water to a boil in a small saucepan.
  • Remove from heat, stir in couscous, cover, and set aside for 15 minutes.
  • Heat oil in a large nonstick skillet over medium heat. Add onion and cook, stirring frequently, until onion is nicely browned, about 10 minutes.
  • Add lentils to skillet and mix well.
  • Remove and discard bay leaf. Serve lentils over couscous.

JEWELLED COUSCOUS

400g couscous
2 tbsp lemon-infused oil
500g soft dried apricot , chopped
1 cucumber , deseeded and chopped
1 large yellow pepper , deseeded and chopped
140g pitted black olive , chopped
140g sundried tomato , chopped
small bunch parsley , chopped
12 cherry tomatoes , halved

Steps:

  • Place the couscous in a bowl and cover with 700ml boiling water. Cover with cling film and leave for 10 mins, until all the liquid has been absorbed.
  • Pour over the oil and some seasoning, mix and fluff up the couscous with a fork.
  • Gently stir through the remaining ingredients and serve.

1 cup lentilles du Puy* (French green lentils) or brown lentils
3 tablespoons white-wine vinegar
1 1/4 cups water
1 cup couscous
1/2 teaspoons salt
1/4 cup olive oil (preferably extra-virgin)
1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/2 cup finely chopped fresh mint leaves
1 bunch arugula, stems discarded and leaves washed well, spun dry, and chopped
2 cups vine-ripened cherry tomatoes, halved
1/4 pound feta, crumbled (about 1 cup)
*available at specialty foods shops and some supermarkets

Steps:

  • In a small saucepan simmer lentils in water to cover by 2 inches until tender but not falling apart, 15 to 20 minutes, and drain well. Transfer hot lentils to a bowl and stir in 1 tablespoon vinegar and salt and pepper to taste. Cool lentils completely, stirring occasionally.
  • In a saucepan bring water to a boil and add couscous and salt. Remove pan from heat and let couscous stand, covered, 5 minutes. Fluff couscous with a fork and transfer to a large bowl. Stir in 1 tablespoon oil and cool completely, stirring occasionally.
  • In a small bowl whisk together garlic paste, remaining 2 tablespoons vinegar, remaining 3 tablespoons oil, and salt and pepper to taste. Stir lentils and dressing into couscous. Chill salad, covered, at least 3 hours and up to 24.
  • Just before serving, stir in remaining ingredients and season with salt and pepper.

LENTIL AND COUSCOUS SALAD

This is great for a picnic or barbecue. Use the indigo lentils that they sell in bulk containers at Wild Oats, Whole Foods type markets if you can find them. Recipe was originally in the Boston Globe many years ago but I've changed it a bit over the years.

1/2 cup red onion, chopped finely
1/4 cup lemon juice
2 tablespoons red wine vinegar
1 cup lentils
5 cups water
1/3 cup extra virgin olive oil, plus
1 tablespoon extra virgin olive oil
1 cup couscous
4 tablespoons fresh parsley, chopped
4 tablespoons of fresh mint, chopped
3 scallions, white and light green part only, sliced thin
salt and pepper

Steps:

  • Combine red onion, lemon juice and vinegar in large bowl with a pinch of salt.
  • Put lentils and 4 cups of water in pot and bring to boil then simmer for 20 minutes or til lentils are soft.
  • Take off heat and let rest for 5 minutes.
  • Drain and add to onion mixture along with the 1/3 cup of olive oil.
  • Toss well.
  • Bring 1 cup of water to boil, add couscous, take off heat, cover and let stand for 5 minutes.
  • Fluff up the couscous by raking with a fork and adding slowly the 1 T of olive oil. Try to get rid of the clumps.
  • Add the couscous to the lentil mixture along with the parsley, mint and scallions.
  • Salt and pepper to taste.

1 tablespoon ghee (clarified butter, see Tips, below)
2 rounds pita bread, each cut into 9 wedges
1 pound dried yellow lentils
1 medium tomato, quartered and seeded
1 medium potato, peeled and cut into 1 inch slices
1 medium carrot, peeled and cut into 1 inch slices
2 teaspoons salt
1 tablespoon corn oil
1 large onion, finely chopped
3 cups beef stock or canned beef broth
1 teaspoon ground cumin
1 tablespoon chopped fresh parsley

Steps:

  • In large skillet over medium heat, heat ghee. Working in batches of 6, sauté pita pieces until crisp, about 4 minutes per side. Drain on paper towels and set aside.
  • Wash lentils well in several changes of water until water runs clear. Drain. In large saucepan, combine lentils and enough water to cover by 2 inches. Add tomato, potato, carrot, and salt and bring to boil. Cover and simmer 30 minutes, skimming any foam that forms on top.
  • Remove from heat. Strain, reserving cooking liquid. In blender, purée solids, adding enough reserved liquid to make mixture smooth. Set aside.
  • In medium pot over moderately high heat, heat corn oil. Add onion and sauté until golden, about 10 minutes. Add puréed lentils, beef stock, and cumin. Simmer until soup thickens, about 10 minutes. Season with salt and pepper to taste.
  • Ladle soup into bowls and sprinkle with chopped parsley. Serve with fried bread wedges.

Add fresh basil, cooked lentils and cooked couscous and cook just until at serving temperature. Season to taste.
