CHOCOLATE-GLAZED BROWNIE CUPCAKES

10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into small pieces
1/4 cup unsweetened cocoa powder (not Dutch process)
3 ounces unsweetened chocolate, finely chopped
2/3 cup boiling water
1 1/4 cups sugar
1 teaspoon pure vanilla extract
2 large eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
2/3 cup finely chopped toasted walnuts or semisweet chocolate chips, optional
1 cup chopped semisweet chocolate (not chips)
1/2 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F and line one 12-cup standard muffin tin with paper cupcake liners.
  • Put the butter, cocoa powder and unsweetened chocolate in a large bowl. Pour over the boiling water and let stand 5 minutes. Whisk until smooth, and then whisk in the sugar, vanilla and eggs. Whisk in the flour, baking powder, salt and baking soda until just combined. Stir in the walnuts or chocolate chips if using. Divide the batter among the prepared liners so they are about three-quarters full.
  • Bake until a toothpick inserted into the center comes out with moist crumbs, 22 to 24 minutes. Cool in the tins 5 minutes, then remove and cool completely on a wire rack.
  • Put the semisweet chocolate in a medium bowl. Heat the cream in a small saucepan over medium heat until it just simmers. Pour the cream over the chocolate and let sit for 1 minute, then gently stir until smooth and glossy. Cool the glaze slightly until thickened but not hard. Spread 1 tablespoon of glaze on top of each cupcake or dip the tops of the cupcakes into the glaze.

1 cup unsalted butter, melted and cooled
2 cups granulated white sugar
4 large eggs
2 tsp vanilla extract
1 cup dutch-processed cocoa powder, spooned and leveled
1 cup all-purpose flour, spooned and leveled
1 tsp salt
1 cup unsalted butter, at room temperature
2 cups powdered sugar sifted
6 oz semi-sweet chocolate bars, melted and cooled

Steps:

  • Preheat oven to 350°F / 175°C. Line two 12 cup muffin pans with 12-14 cupcake liners and set aside.
  • Cupcakes: In a large mixing bowl, whisk together the butter, sugar, eggs, and vanilla until well combined. Sift in the flour, cocoa and salt and stir just until combined. Using an ice cream scoop, spoon the batter into the prepared liners. Fill them about 3/4 to almost full.
  • Bake for 22-26 minutes until the tops look crinkly and a toothpick inserted in the center comes out slightly dirty. Do not overbake them or they will become cakey. Remove from the oven and let cool for 10 minutes. Then remove from the pan and transfer to a wire rack and allow to cool completely before frosting.
  • Frosting: In a large mixing bowl, using an electric mixer fitted with a whisk or paddle attachment, beat butter on medium-high speed until soft and creamy, about 2-3 minutes. Sift in the powdered sugar and mix until fully combined and smooth. Add the chocolate and mix until well combined and creamy. Pipe or spread onto the cooled cupcakes and serve. Store in an airtight container in the fridge for up to 3 days.

1 box Devil's Food Cake Mix
1/2 C. melted butter (or oil)
3 eggs
2 tsp. vanilla extract
3/4 C. milk
1/2 C. sour cream
1 C. mini chocolate chips
1 C. butter (room temperature)
1/2 C. brownie mix (dry (from the box))
1/3 C. unsweetened cocoa powder
2 tsp. vanilla extract
2 Tbsp. milk (more if needed)
2-3 C. powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees and line pan with cupcake liners.
  • 2. In a large bowl, sift in cake mix.
  • 3. Add melted butter, eggs, vanilla extract, milk and sour cream. Stir until well combined and smooth.
  • 4. Stir in mini chocolate chips.
  • 5 Fill cupcake liners 3/4 full and bake for 15-20 minutes or until an inserted knife comes out clean.
  • 6. Let cool.
  • 7. Brownie Batter Frosting: Beat butter. Add brownie mix, cocoa powder, vanilla and milk and beat again. Slowly add in powdered sugar until you reach your desired consistency. Add more milk if it becomes too thick. Taste as you go, feel free to add more cocoa powder or brown mix to get your desired taste!
  • 8. Pipe onto cooled cupcakes and top with brownie pieces!

1/4 cup prepared hot fudge sauce
2 tablespoons rainbow colored sprinkles
12 jarred maraschino cherries with stems, drained and patted dry

Steps:

  • Preheat the oven to 350 degrees F and line one 12-cup standard muffin tin with paper cupcake liners.
  • In a large bowl, combine the butter, cocoa powder and chocolate. Pour the boiling water over and let stand 5 minutes. Whisk until smooth, and then whisk in the sugar, vanilla and eggs. Steps:

  • 1. Preheat oven to 350F. Line a standard 12-cup muffin tin with cupcake liners.
  • 2. Whisk flour, baking powder, and salt together in a medium bowl.
  • 3. For cupcakes: Beat eggs and sugar in a medium bowl using a mixer until light and foamy, about 2 minutes. Beat in butter and vanilla. Gradually pour in butter and then vanilla. Reduce speed to and mix in half of dry ingredients. Beat in milk. Add remaining dry ingredients and beat to combine. Do not over mix.
  • 4. Pour about 1/3 cup batter into each cup in muffin tin. Bake until a tester, inserted in center of cakes, comes out clean, 20 to 25 minutes. Cool on a rack. in tin, for 10 minutes, Release cupcake and cool completely.
  • 5. For icing: Place chocolates in a medium heatproof bowl. Bring a saucepan filled with 1 inch or so water to a very slow simmer; set bowl over, but not touching, water. Stir chocolate occasionally until melted and smooth.
  • 6. Add confectioners' sugar, milk, butter, vanilla extract, and salt and beat with a mixer until smooth and creamy. Pipe icing onto cupcakes using a large star tip. Top with sprinkles. Serve.

3 large eggs, at room temperature, separated
Cream Cheese Frosting, recipe follows, or about 2 cups frosting of your choice
Colorful sprinkles
8 ounces cream cheese, at room temperature
2 3/4 cups confectioners' sugar
2 teaspoons heavy cream, at room temperature
3/4 teaspoon vanilla extract
1/4 teaspoon grated orange zest

Steps:

  • Place a rack in the middle of the oven and preheat to 375 degrees F. Line the muffin pan with paper cupcake liners.
  • In a standing mixer fitted with the paddle attachment, combine the butter and sugar and mix on low speed until just incorporated. Raise the speed to high and mix until light and fluffy, about 10 minutes. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)
  • Meanwhile, in a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a small bowl, whisk together the milk and vanilla, and also set aside.
  • Add the egg yolks to the creamed butter one at time, waiting for each one to be fully incorporated before adding the next.

Raise the speed to medium and mix briefly until a smooth batter is formed. Transfer the batter to a large bowl.
  • Thoroughly clean the bowl of the mixer and put the egg whites inside. Whip the egg whites on high speed, using the whisk attachment, until stiff peaks are formed.
  • Working in 3 batches, using a rubber spatula, fold the egg whites into the batter, until just incorporated. Divide the batter evenly among the cups in the muffin pan. Bake, rotating the pan once, until golden brown and a toothpick inserted in the center of the cakes comes out clean, about 30 minutes.
  • Remove the cakes from the oven and cool completely.
  • Using a palette knife or rubber, spread some of the frosting all over the tops of the cakes and decorate with the sprinkles.
  • In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer in a large bowl, mix the cream cheese and sugar on low speed until incorporated. Increase the speed to high, and mix until light and fluffy, about 5 minutes. (Occasionally turn the mixer off, and scrape the down the sides of the bowl with a rubber spatula.)
  • Reduce the speed of the mixer to low. Add the heavy cream, vanilla, and zest. Raise the speed to high and mix briefly until fluffy (scrape down the bowl occasionally). Store in the refrigerator until somewhat stiff, before using. May be stored in the refrigerator for 3 days.
