YEAST CORN BREAD LOAF

Yeast Corn Bread Loaf image

The golden brown crust, tender texture and mild cornmeal flavor make Yeast Corn Bread Loaf, from Fred Barnsdale of Pahokee, Florida, worth the effort. It's easy to slice, too.

Provided by Taste of Home

Time 55m

Yield 1 loaf (16 slices).

Number Of Ingredients 8

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°), divided
1 cup yellow cornmeal
1/4 cup nonfat dry milk powder
3 tablespoons butter, softened
2 tablespoons sugar
1-1/2 teaspoons salt
2-1/4 to 2-3/4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in 1/4 cup warm water. Add the cornmeal, milk powder, butter, sugar, salt, 1-1/4 cups flour and remaining water. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; shape into a loaf. Place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack to cool.

Categories     Savory Bread Machine Loaves and Yeast Rolls

Time 3h

Number Of Ingredients 10

1/2 cup milk (114 gr)
1 egg (large, 50 gr)
1 tablespoon vegetable oil (12 gr)
1/4 teaspoon salt (2 gr)
1 box Jiffy Cornbread Mix (8.5 oz )
1-1/4 cup 150 grams unbleached flour (150 gr)
1-1/2 teaspoon bread machine yeast (4.5 gr)
2 packages of 8 bun-size hotdogs
1 egg ((large) 50 gr)
1 tablespoon water (14 gr)

Steps:

  • Heat milk to lukewarm. Add to bread-machine pan along with remaining ingredients in order listed.
  • Select the "dough" cycle and start. Open the machine and check the dough after 10 minutes. It should stick to the sides, then pull away. If too wet and sticky, add flour 1 tablespoon at a time. If too dry and thumping against the side of the pan, add a teaspoon of milk or water until dough sticks, then pulls away cleanly.
  • When dough cycle completes, remove dough to a floured surface. Roll into 9 x 13-inch rectangle.
  • Cut into 16 strips the short way. Make one cut down the middle of the 16 strips to make 32 strips. See the picture above.
  • Roll one strip around each hot dog. Lay onto a greased cookie sheet or a silicone mat with ends tucked under.
  • Cover corn dogs and set in a warm place to rise about 15 minutes.
  • Preheat oven to 375 degrees.
  • Combine egg and water for the glaze. Lightly brush glaze onto each dog taking care not to use so much glaze that it drips on to the cookie sheet as it will burn.
  • Bake minini 12 minutes until golden.

YEAST-RAISED CORNBREAD

Yeast-Raised Cornbread image

Provided by swirlycinnacakes

Categories     Breads

Time 38m

Yield 2 loaves, 18 serving(s)

Number Of Ingredients 12

4 cups white whole wheat flour
1 1/2 cups cornmeal
1 1/2 teaspoons fine sea salt
1 (1/4 ounce) package active dry yeast
1 cup warm water (~105 degrees)
1/4 cup olive oil
3 tablespoons honey
3 large eggs, room temperature
2 cups corn (if frozen defrost to room temp)
2/3 cup chives, chopped
cornmeal
olive oil (for preparing loaf pans or muffin tins)

Steps:

  • In a medium bowl whisk together the flour cornmeal and salt. Set aside.
  • In the bowl of a Kitchen-Aid type mixer, dissolve the yeast in the warm water. Add about 2/3 of the flour/cornmeal mixture. Now add the olive oil, honey, just TWO of the eggs, corn, chives and begin to mix with the dough hook attachment at low speed. As the dough is starting to come together mixing begin adding more of the flour/cornmeal mixture a bit at a time, letting it incorporate along the way - you might not need to use all of it. Keep adding until you achieve a dough that is tacky. It should clear the sides of the bowl but stick to the bottom of the bowl. If the dough is too wet and doesn't come off the sides of the bowl, sprinkle in some more flour just until it clears the sides. If it clears the bottom of the bowl, add a teaspoon or two of water.
  • Dial up the speed a bit to medium, and keep mixing for about seven minutes. Turn the dough out onto a floured countertop, knead a few times, gather the dough into a ball and rub with a bit of olive oil. Place in a large, greased (olive oil) bowl, cover with a kitchen towl or plastic wrap and let rise in a warm place until doubled, about an hour.
  • Once the dough has doubled, turn it out onto the countertop. To make the rolls you see in the photo up above, start by cutting the dough into thirds - three big wedges. Pat each third into a square shape and cut each into six pieces - you will end up with 18 equal size pieces. Without over-handling, shape each piece into a ball and place the muffin tins. Let the rolls rise in a warm spot until roughly doubled - another hour. Alternately, if you want to bake two loaves, cut the dough into two equal pieces, shape and place in prepared pans. I imagine, you can also bake this dough freeform if you like.
  • Preheat the oven to 375 degrees. Just before baking whisk the remaining egg and brush on the dough, sprinkle with cornmeal. Bake the rolls for 18-20 minutes on the middle rack, or until rolls are golden. If you are baking loaves it will take significantly longer. Turn out onto cooling racks. Serve slathered with salted honey-butter.

Categories     Appetizer     Breakfast     Dessert     Side Dish     Snack

Time 1h45m

Number Of Ingredients 9

1 1/4 Cups Milk ((lukewarm))
6 Tablespoons Unsalted Butter ((softened))
2 Eggs ((lightly beaten))
1 1/2 Cups All-Purpose Flour
1 Cup Yellow Cornmeal
1 Cup White Granulated Sugar
1 Teaspoon Baking Powder ((aluminum free))
1 Teaspoon Baking Soda
1/2 Teaspoon Salt

Steps:

  • Unplug the bread machine and remove the bread pan.
  • Soften the butter in a microwave.
  • Lightly beat the eggs.
  • Add milk, butter, eggs and then the rest of the ingredients into the bread pan.
  • Place the bread pan back into the bread machine and then plug in the bread machine.
  • Enter the bread machine settings (Sweet Quick Bread, Light Color) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make cornbreads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as cornbread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct cornbread setting used by your SPECIFIC bread machine model or the cornbread could be under or overcooked.
  • When the bread machine has finished baking the cornbread, unplug your bread machine. Remove the bread pan and place the bread pan on a wooden cutting board. Let the bread stay within the bread pan for 10 minutes before you remove it from the bread pan. Use oven mitts when removing the bread pan because it will be very hot!
  • After removing the cornbread from the bread pan, place the bread on a cooling rack. Use oven mitts when removing the bread. Let the cornbread cool down for 60+ minutes or it will be more likely to break/crumble when cut into slices.
  • Don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.

  • In a large mixing bowl, combine the milk, water and sugar. Sprinkle yeast on top and let stand for 10 minutes, until foamy. Add the egg yolks, salt, butter, cornmeal and flour; mix with the paddle attachment on low speed for 2 minutes. Switch to the dough hook attachment and knead on medium low speed until the dough is smooth and does not stick to your finger when squeezed, about 5 minutes.
  • Spray a separate bowl with oil. Transfer the dough to the oiled bowl, flip once to cover both sides with the oil. Cover the bowl tightly with plastic wrap and allow to rise in a warm place until doubled in size, about 45 minutes.
  • Line a baking sheet with parchment paper or a silicone liner. Punch down the dough and divide into 12 equal portions (for small sliders) or 8 equal portions (for regular sandwiches). On a clean working surface or pastry mat, shape each portion into a ball then place on the lined baking sheet. (To easily shape into smooth rounds, I pull down the sides and pinch the excess dough on the bottom.) Spray plastic wrap with oil, then loosely cover the dough balls and let rise for 10 more minutes. Meanwhile, preheat the oven to 400 degrees F.
  • In a small bowl, melt 1 to 2 Tablespoons of butter. Brush the tops of the dough balls with the melted butter, then sprinkle with cornmeal. Bake for 12-15 minutes, until golden and baked through. Rotate the baking sheet halfway through. (The 12 sliders will take less baking time than the 8 regular sized rolls, so watch carefully.)
