CAMPFIRE BEEF STEW
Beef stew cooked over the campfire is a warming and cozy way to end the evening. Start this stew before you set up camp, so it has a chance to simmer and be ready in time for dinner.

Steps:
- Heat the oil in a Dutch oven. Add the beef and cook until brown on all sides, 10 to 15 minutes.
- Add the onions and garlic then cook until the onions begin to soften, about 5 minutes.
- Season well with salt and pepper then stir in the tomato paste, to coat.
- Sprinkle the flour over the beef mixture and toss to coat, making sure the flour is well absorbed. Slowly stir in the beef broth. Add enough water so the liquid level comes about 1 inch above the meat.
- Cover and cook for about 1 hour, until the beef is almost tender.
- Stir in the potatoes and carrots then continue to cook until tender, about 20 minutes. Season to taste with additional salt and pepper before serving.

"YEAH, I'M CHEATIN'" CAMPFIRE BEEF STEW
All you need is a cast dutch oven with domed lid, some pre-made stew and biscuits.... and a nice bed of coals. Twiddle with the recipe and it becomes anything you want! Add red wine, onions, garlic, pasta... whatever. Prep. time doesn't include the time it takes to get the coals in the first place.

- When your campfire had created a good hot bed of coals, line the cast dutch oven with foil. Spray with the cooking spray to cover foil.Empty the stew into the popot. Arrange the pre-made buscuits on top of the stew.
- Cover the oven and set in the coals. Place more coals on the lid.
- Bake for 15-20 minutes until the stew is hot and the buscuits are done.
- Ladle out and enjoy.

CAMPFIRE STEW
This is a meal that we used to eat a lot as kids, because it was inexpensive. My mother originally learned it from the Girl Scouts. The sodium can be a little high, but feel free to try one of the lower sodium vegetable soups. Also, instead of making the mashed potatoes from scratch, I now use the Ore-Ida steam and Mash. What a time saver!

Steps:
- Peel potatoes and boil until fork tender. Add milk and butter then mash.
- Brown the ground beef and drain off excess fat.
- Add alphabet soup to the skillet with the ground beef. Heat through.
- Place a serving of mashed potatoes on a plate and make a well in the middle. Spoon in beef and soup mixture.
- Enjoy!

FORGOTTEN BEEF STEW
Good oven stew. Also good way to use a cheaper cut of meat.This recipe is one I've used many times and is from another church cookbook.This dish does take quite awhile to cook,3-4 hours, allows the tougher cuts of meat to cook slowly, therefore less chance of being tough.
