This stuff is addicting! I love eating it along side my rice as it has a real kick. This dish is -in my oppionion- along the lines of a kimchee- a sort of fresh, spicy, pickley, salady sort of thing. I've given some play with the garlic and the chile paste amounts so that you can make it milder.

1 large cucumber
1 small white onion
4 tablespoons fish sauce
1 -2 tablespoon chili paste with garlic
2 -4 garlic cloves, minced
1 small lime, juice of
2 tablespoons white vinegar or 2 tablespoons rice vinegar
1 -2 tablespoon sugar
1/2 teaspoon salt (to taste)
1/4 cup cilantro, chopped

Steps:

  • Peel the cucumber and slice paper thin.
  • Slice the onion paper thin.
  • Make the dressing with the rest of the ingredients.
  • Toss the veggies with the dressing.
  • Set in the fridge to marinate.
  • I find that this salad improves with age as the cucumbers and onion soak up the flavors from the dressing, however if you slice your veggies thin enough, it's good enough to eat right away.

(Thai Eggplant Salad) Thai dishes known as yams are often translated into English as "salads", perhaps for lack of a better word. Like salads, yams are often served at room temperature and include fresh herbs and raw vegetables. Unlike salads, however, which Westerners often eat to refresh their palates, yams are anything but shy in flavor. In Thailand they are often served when people get together for a glass of beer and want something to nibble on. In this yam, Asian eggplants - long and narrow and ranging from deep purple to pale violet - are broiled and tossed with shallots, Vietnamese coriander, and a dressing that is at once salty, sour, spicy, and slightly sweet. After you have made the salad once, you may want to experiment with the balance of seasonings, perhaps increasing the chili heat. Vietnamese coriander is known in Vietnam as rau ram and in Thailand as pak chi wietnam. It is usually sold in open bunches or in cellophane and can be found at Vietnamese and Thai markets.

Yield Serves 6 as part of a rice based meal

Number Of Ingredients 9

1 1/2 pounds long narrow Asian eggplants (about 5 to 6 medium)
1/2 cup thinly sliced shallots (about 2 large), separated into rings
1/2 cup coarsely torn Vietnamese coriander leaves, or 1/4 cup coarsely torn regular fresh coriander leaves and 1/4 cup chopped fresh mint leaves
6 tablespoons fresh lime juice
3 tablespoons Asian fish sauce (preferably naam pla)
1/4 teaspoon sugar
1/2 to 1 small fresh red or green Thai (bird) chile or serrano chili, minced (wear rubber gloves)
1 head Bibb lettuce, separated into leaves, rinsed, and spun dry
Thai Sticky Rice or Thai Jasmine Rice

Steps:

  • Preheat broiler.
  • Cut eggplants diagonally into 1/4-inch-thick slices, discarding stem ends. On a lightly oiled large baking sheet arrange slices in one layer and broil 4 to 6 inches from heat until golden, about 8 minutes. Turn slices over and broil until golden, about 8 minutes. Cool eggplant slices slightly and chop coarse. In a bowl combine eggplant, shallots, and Vietnamese coriander (or alternative).
  • In a small bowl stir together lime juice, fish sauce, sugar, and chili and pour dressing over eggplant. Toss mixture well and let stand 30 minutes to blend flavors.
  • Arrange lettuce on a plate, overlapping leaves, and mound eggplant on tip. Serve eggplant with rice. Lettuce leaves can be used to pick up some salad.

3/4 teaspoon cayenne pepper

Steps:

  • Place vinegar, water, sugar, and salt in saucepan; heat over medium heat, stirring until sugar and salt dissolve.
  • Bring to a boil and remove from heat.
  • Allow to cool.
  • Pour over cucumber, and sprinkle cayenne pepper on top.
  • Serve.

2 lbs cucumbers, peeled and thinly sliced
1/2 cup rice wine vinegar
1/2 cup sugar
1/2 cup water
1 teaspoon salt
1/4 cup chopped shallots or 1/4 cup chopped purple onion
1 fresh hot chili pepper, finely chopped
1/4 cup dry roasted peanuts, crushed
1/4 cup fresh cilantro, chopped

Steps:

  • Place sliced cucumber on a platter.
  • Meanwhile combine vinegar, sugar, water and salt in a small saucepan and heat until sugar and salt are dissolved.
  • Remove from heat and allow to cool.
  • Place shallots and chili pepper in vinegar mixture and stir.
  • Pour mixture over cucumbers just before serving and sprinkle with peanuts and fresh cilantro.
  • Don't be concerned about the strong smell when heating the vinegar.

Scouring the cucumbers decoratively, as the Thais would do, makes this dish visually alluring. This recipe comes from a great little book called 'The Best of Thailand'.

2 cucumbers, peeled, halved, & seeded
1 lime, juice of
1 1/2 teaspoons sugar
1/4 cup nam pla (fish sauce)
1/2 small red onion, thinly sliced lengthwise
1 small fresh red chili pepper, thinly sliced
1 small fresh green chili pepper, thinly sliced
2 plum tomatoes, thinly sliced lengthwise

Steps:

  • Cut cucumber halves into 2-inch long sections, then cut each section into 1/4-inch thick strips or thick matchsticks.
  • Place cucumbers in a bowl.
  • Add the lime juice, sugar, and Nam Pla and toss gently until well combined.
  • Add onion, chilies and tomatoes and toss gently until well combined.
  • Garnish with whole chilies and coriander sprigs.
