SAUSAGE WONTON CUPS

Crispy wonton cups filled with cheesy, spicy ground sausage.

1 pound pork breakfast sausage
½ teaspoon ground cumin
pinch ground cayenne pepper
1 ¼ cups shredded sharp cheddar cheese OR shredded pepper jack cheese (divided)
½ cup cream cheese
24 wonton wrappers
Optional garnish: green onions or parsley
Cooking spray

Steps:

  • Preheat the oven to 400 degrees.
  • In a medium skillet combine the sausage, cumin and ground cayenne pepper, cooking over medium heat until the sausage is browned and cooked through, breaking up the sausage with a wooden spoon or spatula.
  • Fold in the cream cheese and 1 cup of shredded cheese.
  • Lightly spray a mini muffin tin with cooking spray. Gently press the wonton wrappers into the muffin pan forming the cups, then spray the cups with cooking spray.
  • Divide the sausage mixture between the cups and top with the remaining ¼ cup of cheese.
  • Bake 10 minutes or until the wonton wrappers are lightly browned then garnish with thinly sliced green onions or chopped parsley. Serve hot.

1 pound breakfast sausage, cooked, crumbled and drained
1 1/2 cup cheddar cheese, grated
1 1/2 cup Monterey jack cheese, shredded
1 cup ranch dressing
1 can black olives, finely chopped
1 red pepper, (fresno), finely chopped
1 package Wonton wrappers

Steps:

  • Preheat oven to 350 degrees. Combine all of the ingredients, expect the wonton wrappers, mixing until well combined.
  • Spray a mini muffin pan with non stick spray. Press 1 wonton wrapper in each, keeping the wrapper open. Be careful not to tear them. Spray the wrappers with non-stick spray. Place in over and bake for about 5 minutes, until lightly browned.
  • Remove wrappers from muffin tins. Fill with sausage mixture. Place on baking sheet and bake for 5-10 minute until bubbly.

2 tablespoons salted butter, melted
12 wonton wrappers
One 15-ounce can black beans, drained and rinsed
One 4-ounce can diced green chiles, drained
2 teaspoons chili powder
Juice of 1/2 lime
1/2 cup grated Monterey Jack cheese
1/2 small avocado, diced
1/3 cup pico de gallo
1/4 cup sour cream
Hot sauce, if desired
1/4 cup fresh cilantro leaves

Steps:

  • For the wonton cups: Preheat the oven to 375 degrees F.
  • Brush 12 cups of a mini muffin pan with the butter. Fit 1 wonton wrapper into each cup, folding the sides as needed.
  • In a small bowl, toss together the beans, green chiles, chili powder and lime juice. Spoon some of the bean mixture into each cup, about a heaping tablespoon each. Bake until the filling is warmed through, about 12 minutes. Remove the pan and top each cup with a pinch of cheese. Return the pan to the oven and continue to bake until the cheese is melted and the wontons are golden, another 5 minutes.
  • For the toppings: Let the taco cups cool in the pan for a minute or two. Transfer the taco cups to a platter and top each with some avocado, pico de gallo, a small dollop of sour cream, hot sauce, if using, and cilantro.

1 pound ground Italian sausage
½ cup shredded Monterey Jack cheese
½ cup shredded Colby cheese
1 cup salsa
24 (3.5 inch square) wonton wrappers
¾ (16 ounce) container sour cream
1 bunch green onions, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a miniature muffin pan.
  • Place ground Italian sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and remove from heat.
  • Stir Monterey Jack cheese and Colby cheese into the warm sausage to melt. Stir in salsa.
  • Gently press wonton wrappers into the prepared miniature muffin pan so that the edges are extending. Place a heaping tablespoon of the sausage mixture into each wonton wrapper.

Appetizers to liven up any party! Spicy sausage, cheese olives, and peppers. What's there not to like? I found this in my Christmas with Southern Living 2003. It's a beautiful cookbook with lots of great recipes and ideas! I haven't tried it yet but I think that these could be made ahead of time and kept in the freezer until they were heated up again.

1 lb hot pork sausage
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded monterey jack cheese
1/2 cup ranch dressing
1/3 cup chopped pimento stuffed olive
1/3 cup finely chopped red bell pepper
1 jalapeno pepper, seeded and minced
1 (16 ounce) package wonton wrappers

Steps:

  • Brown sausage in a large skillet over medium high heat, stirring until it crumbles and is no longer pink. Drain on paper towels.
  • Combine sausage and next 6 ingredients.
  • Coat 4 miniature muffin pans (1 3/4 inch) muffin pans with cooking spray. Place won ton wrappers in pans, using fingers to create fluted shape. Lightly spray wrappers with cooking spray.
  • Bake at 350 degrees for 8 minutes, turning pans after 4 minutes.
  • Spoon 1 heaping tablespoon filling into each won ton cup.
  • Bake at 350 degrees for 9-10 minutes or until browned and throughly heated.
  • Remove from pans and serve hot.
