Weight Watchers Cold Sesame Noodles image

Traditionally made with toasted sesame paste, this dish is also great prepared with reduced fat peanut butter. For best results, serve at room temperature soon after tossing the sauce with the noodles. 4 POINTS per serving (1/3 cup)

6 ounces chow mein noodles or 6 ounces spaghetti
1/3 cup reduced-fat creamy peanut butter
1/3 cup water
3 tablespoons ketchup
2 tablespoons hoisin sauce
2 tablespoons reduced sodium soy sauce
2 tablespoons packed light brown sugar
1 tablespoon rice vinegar
1 teaspoon dark sesame oil
2 scallions (chopped)

Steps:

  • Cook the noodle or spaghetti according to package directions; drain, rinse with cold water and set aside.
  • In a small sauce pan, combine the peanut butter, water, ketchup, hoisin sauce, soy sauce, brown sugar, vinegar and oil. Bring to a boil over medium-high heat, stirring constantly, until well mixed.
  • Remove from the heat and cool about 10 minutes.
  • Toss the noodles with the sauce, sprinkle with scallions and serve.

2 tablespoons reduced sodium soy sauce
1 tablespoon smooth peanut butter
1 garlic clove, finely chopped
1 scallion, thinly sliced
1 tablespoon fresh lemon or 1 tablespoon lime juice
2 teaspoons dark sesame oil
8 ounces whole wheat spaghetti or 8 ounces linguine
thin buckwheat noodle
1 small carrot, finely shredded
1 tablespoon toasted sesame seeds

Steps:

  • Combine the chicken broth, soy sauce, peanut butter and garlic in a small saucepan; bring to a boil.
  • Reduce heat and simmer 15 minutes.
  • Remove the sauce from the heat and stir in the scallion, lemon juice and sesame oil.
  • Meanwhile, cook the spaghetti according to package directions.

2 teaspoons Thai fish sauce (nam pla)
1 teaspoon minced peeled fresh ginger
1 garlic clove, minced
1 teaspoon sesame oil (dark)
crushed red pepper flakes
1 teaspoon canola oil
1 garlic clove, minced
1 teaspoon minced peeled fresh ginger
1/2 lb savoy cabbage, shredded
1 onion, sliced
1 tablespoon reduced sodium soy sauce
1 ounce rice noodles
1/2 cup grated carrot
2 teaspoons sesame oil (dark)
16 (6 inch) round rice paper sheets

Steps:

  • To make the dipping sauce, whisk all the ingredients together.
  • To make the spring rolls, heat large nonstick skillet over med heat.
  • Add canola oil, then add garlic and ginger.
  • Cook, stirring until fragrant.
  • Stir in cabbage, onion, and soy sauce.
  • Increase heat to med-high.
  • Cook, stirring occasionally, until vegetables are tender.
  • Transfer cabbage mixture to medium bowl.
  • Meanwhile, place rice noodles in large bowl and add enough hot water to cover.
  • Let stand until soft, about 10 minute.
  • Cut noodles into 2-inch lengths and stir into the cabbage mixture.
  • Add carrot and sesame oil, toss to coat.
  • To assemble: dip one rice paper in bowl of warm water and place on clean kitchen towel.
  • Place 2 tbsp of vegetable mixture in center of wrapper.
  • Fold in sides, and roll up to enclose the filling.
  • Repeat process for all remaining rice papers.
  • Transfer rolls to cutting board and slice in half. Serve with dipping sauce.
  • 3 Points for 2 rolls with 1 tbsp dipping sauce.

Sweet and savory noodles in a curried sesame peanut butter sauce. You can add chicken or sausage for a one dish meal.

1 lb Chinese wheat noodles
1 tablespoon kosher salt
12 baby bok choy, halved (Shanghai Tips)
2 cups vegetable broth (see Asian Vegetable Broth)
1 tablespoon cornstarch
1/2 cup peanut butter, natural
2 tablespoons olive oil
2 tablespoons soy sauce
3 drops fish sauce
1 teaspoon dark sesame oil
1 -2 teaspoon mild curry powder (I used Singapore blend by Penzy's Spices)

Steps:

  • In a medium saucepan, combine olive oil, peanut butter, soy sauce and fish sauce over low heat. Blend cornstarch into the broth and slowly pour into saucepan, whisking constantly until smooth. Add curry powder to taste. Add sesame oil just before combining sauce with noodles.
  • Cook the noodles according to package instructions with kosher salt added to water. In last few minutes of cooking, add shanghai tips. Drain noodles and mix with sesame peanut sauce. Serve immediately.
