SPICY VEGETABLE SOUP
A soup that hits the spot no matter what time of year. You can add as many types of vegetable as you like. Cooking the raw vegetables with the oil and spices before you add any type of broth intensifies the flavor of the soup. Store bought broth works fine. Need to consider salt content when using store bought broth.

Steps:
- Begin first by dicing raw vegetables into required amounts making sure they are pretty much the same size.
- In a large stock pot saute onion in vegetable oil.
- Add carrots, potatoes, celery, spinach and all the spices(salt,chili powder, garlic salt, black pepper) cook until tender.
- Add diced petite tomatoes and Ro-tel tomatoes with green chilies,.
- corn, green beans, bay leaves and stock.
- Add water if needed.
- Bring to a boil and then simmer for two to three hours.
- The last hour simmer with a lid on stock pot.

Steps:
- In a Large Pan - place oil in and turn heat on Low to Medium Heat.
- Chop up the Carrots, Onion and Garlic - I prefer to food process the onion and garlic - DO NOT FOOD PROCESS THE CARROTS.
- Turn the heat up to MEDIUM and begin cooking the Carrots, Onions and Garlic.
- Stir and cook for 5 minutes - stir/mix at least every 30 seconds - you do not want the onions to brown.
- While that's cooking, OPEN the cans of RoTel (MILD) and Beef Broth and place near the stove.
- Chop up the Celery, Cabbage and Prep the Green Beans and place next to the stove.
- After 5 minutes of cooking the Carrots, Onion and Garlic ADD the Beef broth, RoTel, Celery, Green Beans, Cabbage, Basil and Oregano.
- Mix and Simmer for 15 minutes - stirring once every 5 minutes.
- Now Add the Zuccini and Mushrooms and Cook an additional 8 minutes.
- Serve and Enjoy then please place your Review Below.
