EASY CHICKEN CASSEROLE



Easy chicken casserole image

This flavoursome, low-fat chicken casserole is easy to make and freezes really well, so why not make double and freeze for speedy midweek meals

2 tbsp sunflower oil
400g boneless, skinless chicken thigh , trimmed and cut into chunks
1 onion , finely chopped
3 carrots , finely chopped
3 celery sticks, finely chopped
2 thyme sprigs or ½ tsp dried
1 bay leaf , fresh or dried
600ml vegetable or chicken stock
2 x 400g / 14oz cans haricot beans , drained
chopped parsley , to serve

Steps:

  • Heat the oil in a large pan, add the chicken, then fry until lightly browned. Add the veg, then fry for a few mins more. Stir in the herbs and stock. Bring to the boil. Stir well, reduce the heat, then cover and cook for 40 mins, until the chicken is tender.
  • Stir the beans into the pan, then simmer for 5 mins. Stir in the parsley and serve with crusty bread.

Steps:

  • Combine all seasonings. Cut vegetables into large chunks. Put chicken breasts in casserole dish. Surround with vegetable chunks. Brush olive oil generously on all poultry and vegetables. Sprinkle spices on chicken only. Bake covered in a 350℉ (180℃) oven approximately 1 hour. Uncover and continue to bake until vegetables are crispy and the potatoes/chicken are browned. For a spicy variation: Dash some worcestershire sauce and/or hot sauce over the dish before baking.

6 chicken thighs (with skin on)
2 tbsp of olive oil
1 tbsp of butter
2 lbs of carrots (cut in big chunks)
1 whole celery stalk (with leaves)
2 cloves of garlic ( minced)
1 large onion
1 cup of white mushroom ( sliced)
1 cup of chicken or vegetable broth
1 can of whole tomatoes
2 tbsp of flour
1 tsp of smoked paprika
1\2 tsp of Herbs de Provance
1 bay leaf
Salt and pepper
Parsley flakes

Steps:

  • In a non stick pan, heat up 1 tbsp of olive oil.
  • Brown the chicken on both sides for a few minutes.
  • Salt and pepper to taste and set aside.
  • In a roasting pan, melt the butter with 1 tbsp of olive oil.
  • Add the carrots and cook 5 minutes.
  • Add the celery and cook fo another 3 minutes.
  • Add onion, garlic and mushroom cook for 3 minutes.
  • Add the flour, smoked paprika and provencial herbs.
  • Cook for 2 minutes.
  • Add the broth and mix well.
  • Add the tomatoes and the bay leaf.
  • Stir to mix all ingredients.
  • Add the chicken on top of mixture, cover and bake in a preheated oven at 350F for about 2 hours.

200 g | 7oz smoked bacon lardons or chopped streaky bacon
1 tbsp olive oil
1/2 tbsp butter
6 skin-on chicken legs
1 tsp Kosher salt
1/2 tsp ground black pepper
6 shallots (quartered)
2 large garlic cloves (sliced)
800 g | 1.7 pounds baby potatoes (halved)
2 tbsp Dijon mustard
1 tsp English mustard
1 tbsp runny honey
280 ml | 1 1/8 cups medium-dry apple cider
250 ml | 1 cup single (pouring) cream
1/2 tsp dried tarragon
3 fresh thyme sprigs
1 lemon zest only

Steps:

  • Preheat the oven to 200C (400F) and setting the shelf to the lower third of the oven.
  • Pat the chicken dry using paper towels (do not rinse) and season with salt and pepper.
  • Dry fry the bacon in a large lidded non-stick pan until it starts to crisp and render some of its fat. Set aside on a kitchen towel lined bowl.
  • Add a the olive oil and butter to the pan and pan fry the chicken legs, in batches if necessary, for 4 minutes per side or until nicely browned. Set aside.
  • Add the shallots and cook, stirring, for a couple of minutes. Add the potatoes and garlic and cook for a further four minutes.
  • Add the cider and stir in the mustard, honey and cream. Sprinkle with the dried tarragon and stir in the bacon.
  • Return the chicken to the pot, nestling it in the creamy sauce. Add the thyme sprigs, cover the pan and transfer to the oven. Cook for 15 minutes.
  • Uncover the pot and cook for another 5 minutes or until the potatoes are tender.
  • Check the seasoning, add the lemon zest and serve with some crusty bread to mop up the delicious sauce and a green salad on the side.

this came from a night of no sleep and had to get something on the table I am sure you can relate the ingredients are all approx. and are leftovers I happen to have on hand I am posting this as a guide line but my husband really like the way it came out so tossing this idea out make it your own

1 chicken breast halves, skinless and boneless
1/2 c shredded mixed cheese
1 can(s) cream of mushroom soup
1/2 c half and half or milk of any percent
salt and pepper to taste
1 tsp tarragon
1 tsp thyme dried and crushed
1 1/2 c al dente cooked noodles small size
6 ritz crackers
2 Tbsp butter (use for pan, topping)
1/2 c mushrooms
2 Tbsp sour cream
1/2 c red pepper diced
3 handfuls spinich
1/2 tsp garlic powder ( i ran out of fresh roasted)
1/2 tsp onion powder ( i ran out of fresh carmalized onions)
garlic oil

Steps:

  • 1. cook noodles to the tooth as it will continue to cook in the oven, drain set to side
  • 2. shred or dice your chicken breast, I used a leftover rotisserie store chicken
  • 3. add soup in a medium size bowl add milk and sour cream, if you don't have mushroom any cream of soup should work, add chopped peppers, salt & pepper, herbs, mushrooms (mine were sauté left over's), spinach sauté lightly in garlic oil any olive oil or butter will work. add to mixture add cheese I had one of those packs (Italian) which contained mozzarella, romano, asiago, parmesan, provolone. stir well to combine, fold in chicken and noodles I really did not measure the noodles I don't think it matters just put in the amt. you want. after I had cooked this for about 20 minutes it seamed a bit dry so I took 1/4 cup of fat free milk and poured in around the sides and a bit in the middle yes over the cracker topping
  • 4. crush up crackers add half tsp of butter mix. I forgot to but next time I will add some pepper and herbs to this topping
  • 5. I buttered a 9in deep dish pie plate added the noodle mixture topped with a bit more cheese perhaps a 1/4 cup sprinkled cracker topping, dot with very thin slices of butter cook (toaster oven) 350 covered with foil 20 minutes uncover cook approx. 20 more till bubbling set oven to broil cook till topping is brown. keep you eyes on it as the browning will happen fast.
