1 cup long grain white rice
2 cups chicken broth or water
1 package (10 ounces) frozen petite peas
3/4 cup (2 ounces) grated sharp cheddar or Parmesan cheese
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper or 2 to 3 drops Tabasco sauce
Salt and freshly ground black pepper

Steps:

  • In a medium size saucepan combine rice with broth and bring the liquid to a boil over medium heat. Cover and simmer until the rice is almost tender, about 15 minutes. Stir in the peas and simmer, covered 5 minutes longer. At this point you can serve half to the kids, garnished with some cheese. If you are making this for adult tastes only stir in Worcestershire, cayenne and grated cheese. Remove the pan from the heat and continue to stir until the cheese is entirely melted. Season to taste with salt and pepper and serve immediately before the dish gets gummy.
  • To reheat leftovers and change the flavor a bit, layer the rice in a baking dish and top with some tomato sauce. Cover and reheat in a microwave or regular oven until very hot.

3/4 cup uncooked wild rice
1 tablespoon vegetable oil
4 cups water
1/2 teaspoon salt
1 medium onion, chopped
1 celery rib, diced
1/2 cup butter, cubed
1 medium carrot, diced
1/2 cup all-purpose flour
3 cups chicken broth
2 cups half-and-half cream
1 cup diced fully cooked ham
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon pepper

Steps:

  • In a large saucepan, saute rice in oil over medium heat, for 5 minutes. Add water and salt; bring to a boil. Reduce heat; cover and simmer for 35 minutes (rice will not be completely cooked). Drain, reserving 1-1/2 cups cooking liquid; set rice and liquid aside separately. , In the same kettle, saute the onion, celery and carrot in butter until onion is crisp-tender. Reduce heat; stir in flour and cook until bubbly. Gradually add broth and cooking liquid; stirring constantly. Bring to a boil, cook and stir for 2 minutes, stirring constantly or until thickened. Add the cream, ham, rosemary, pepper and reserved rice. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender.

Steps:

  • This is a healthier twist on a classic creamy turkey and wild rice soup that hails from Minnesota. Serve with a crisp romaine salad and whole-grain bread.
  • 1. Heat oil in a large saucepan over medium heat. Add mushrooms, celery, carrots and shallots and cook, stirring, until softened, about 5 minutes. Add flour, salt and pepper and cook, stirring, for 2 minutes more.

The boyfriend loves creamy chicken-rice soups, and this is my effort to that end. I like the addition of sherry and a dash of curry powder and it's a great way to use up leftover chicken (and presumably turkey). This soup will thicken up overnight; it can be thinned with more chicken stock without losing flavor; adjust salt and pepper to taste. Almonds are optional but add an interesting crunch; this soup is also "crockpot-able" if you prefer.

4 tablespoons butter
1/2 onion, finely chopped
1/2 cup celery, chopped
1/2 cup carrot, sliced
1/2 lb fresh mushrooms, sliced
6 tablespoons flour
4 cups chicken stock
1 cup cooked wild rice
3/4 lb boneless skinless chicken breast, cooked and shredded
1/2 teaspoon salt
1/2 teaspoon curry powder

Steps:

The odd combination of ingredients is what caught my eye the first time. I've modified the original recipe to thin the soup a little and stretch it out more. Freezes well.

4 cups water
1/2 teaspoon salt
1/2 cup wild rice, uncooked
3 tablespoons green onions, chopped
1/4 cup carrot, shredded

6 tablespoons margarine or 6 tablespoons butter
1/3 cup all-purpose flour
5 cups chicken broth
1/2 cup cooked ham or 1/2 cup bacon, diced

Steps:

  • In a large saucepan, bring water and salt to boil. Add rice. Reduce heat; cover and simmer for 45-60 minutes or until tender.
  • Remove from heat. Let stand for 10 minutes; drain and set aside.
  • In a soup kettle or Dutch oven, saute the onions, carrot, and walnuts in margarine for 1-2 minutes.
  • Stir in flour until blended.

2 cups water
1 cup wild rice, uncooked
1 small onion, finely chopped
4 medium carrots (or 10-12 baby carrots), finely chopped
2 stalks celery, finely chopped
2 tablespoons unsalted butter
1/4 cup flour
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon poultry seasoning (or substitute dried thyme)
2 cups half and half (I use fat-free)
3 cups cooked chicken, chopped
1 cup peas (thawed, if frozen)

Steps:

  • Combine chicken broth, water, wild rice, onion, carrots and celery in a large stockpot over high heat and bring to a boil.
  • Reduce heat, cover and simmer for 15 minutes, or until rice and veggies are tender.
  • Meanwhile, melt butter in a small saute pan over medium-low heat. Whisk in flour and cook for 1 minute. (It's OK if you've got small clumps of flour.)
  • Add salt, pepper and poultry seasoning and stir to combine.
  • Slowly add half-and-half while whisking constantly to remove the clumps and get a smooth mixture.
  • Cook the cream mixture for 4-5 minutes, until slightly thickened, stirring occasionally.
  • Slowly add the cream mixture to the cooked rice, stirring to combine. Stir in chicken and peas.
  • Cook for 2-3 minutes, until everything is warmed through, but don't let the mixture boil. Serve hot and enjoy!

This creamy, vegan wild rice soup is the ultimate comfort food. The flavours are wonderful, it's full of nutrition and makes the perfect way to warm up on on a cold day.

1 cup chopped celery (150 g)
1 medium white onion, diced (approx. 1 1/2 cups, 215 g)
3 cloves garlic, minced
1 tsp ground thyme
1 tsp dried oregano
2 cups peeled and diced carrots (300 g)
4 heaping cups or 1 small head of cauliflower, chopped into small florets (450 g)
5 cups vegetable broth
1/2 cup nutritional yeast (30 g)
1 1/2 cups cooked wild rice (250 g)
1 tsp each sea salt and black pepper, or more to taste
2 tbsp fresh lemon juice

Steps:

  • Cook the wild rice according to package instructions. While it's cooking, proceed with making the soup.
  • dd the onion, garlic and celery a large soup pot with 2 tablespoons of water and cook over medium heat for about 5 minutes until starting to soften, stirring often (alternatively, you can saute the veggies in 1 tbsp of olive oil). If the pot starts to dry out at any time, add another tablespoon of water.
  • Add the thyme and oregano, stir to combine and cook for another 2 minutes until fragrant, stirring frequently.
  • Add the cauliflower, carrot and all of the vegetable stock and simmer over medium-low heat until the carrots and cauliflower are tender. This should take approximately 20 minutes.
  • Stir in the nutritional yeast.
  • Scoop half of the soup into a blender. Make sure you leave a crack in the lid to let the steam escape. Start blending on low then increase to high and blend until smooth and creamy. Once it's blended, pour it back into the soup pot with the rest of the soup. Alternatively, use an immersion blender directly in the pot to blend about half of the soup.
  • Stir in the cooked wild rice.
  • Stir in the lemon juice and season with salt and pepper, if needed.
  • Serve right away with chopped fresh chives or green onion and lemon wedges.

A thick, creamy wild rice soup just like the kind you'd get at an old fashioned supper club in the midwest. My secret ingredients make it the best!

1/2 cup butter
4 carrots, peeled and diced
4 stalks celery, diced (use those inner leaves, too!)
1 onion, peeled and diced
3 cloves garlic, minced
1/4 cup all purpose flour
1/4 cup dry Sherry
32 ounces chicken broth or stock
1 bunch fresh thyme, tied with kitchen twine
4 cups cooked wild rice (see cooking instructions in the recipe notes)
salt and fresh cracked black pepper
12 ounce can evaporated milk
1/2 cup half and half

Steps:

  • Melt the butter in a large Dutch oven or soup pot. Saute the carrots, celery, and onion for 10 minutes over medium heat, stirring often, until the onions are translucent. Add the garlic after 5 minutes. Note: don't brown the veggies, just gently saute.
  • Stir in the flour and cook for a minute or two more, again, without browning the flour.
  • Add the Sherry to the pot, and give everything a good stir, then add the broth, along with the bundle of thyme and bring to a gentle boil, stirring often.
  • Add the cooked rice, and teaspoon of salt and pepper. Cover and gently simmer for 5 minutes. Note: check the pan often to make sure it is simmering and not furiously boiling.
  • Remove the thyme bundle, add the evaporated milk and half and half, and heat through. Taste to adjust the seasonings.
  • At this point the soup can be cooled and refrigerated overnight. Or you can enjoy right away.
