Since my husband and I have soup often, I'm always coming up with something new. I saw pot stickers in the freezer and decided to feature them in an Asian soup. The results were delicious. Rice vinegar provides just the right tang, and the green onions and carrots add color. Stir in chopped cabbage or bok choy if you'd like. 1/2 pound Chinese or napa cabbage, thinly sliced
2 celery ribs, thinly sliced
2 medium carrots, cut into matchsticks
1/3 cup thinly sliced green onions
2 to 3 tablespoons soy sauce
2 tablespoons rice vinegar
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot or 1/2 teaspoon ground ginger
1/2 teaspoon sesame oil
6 cups reduced-sodium chicken broth
1 package (16 ounces) frozen chicken pot stickers
Crispy chow mein noodles, optional

Steps:

  • In a 4-qt. slow cooker, combine the first 9 ingredients. Stir in broth. Cook, covered, on low until vegetables are tender, 5-6 hours. Add pot stickers; cook, covered, on high until heated through, 15-20 minutes. If desired, sprinkle with chow mein noodles before serving.

1 tablespoon sesame oil
1 onion, chopped
2 cloves minced garlic
2 (32 ounce) cartons chicken broth
2 green onions, chopped
1 tablespoon sesame oil
salt and pepper to taste
1 (15 ounce) package frozen pot stickers (any filling)
1 (12 ounce) package frozen stir-fry vegetables

Steps:

  • Heat 1 tablespoon of sesame oil in a large pot over medium heat. Stir in the chopped onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Pour in the chicken broth, green onions, and remaining sesame oil. Bring to a boil over high heat, and season to taste with salt and pepper.
  • Reduce the heat to medium, and add the frozen pot stickers and stir-fry vegetables. Cook until the pot stickers float, about 8 minutes.

2 cups finely shredded and chopped Napa cabbage
Kosher salt
1/4 cup chopped fresh cilantro
1 teaspoon finely chopped fresh ginger
1/2 teaspoon toasted sesame oil
4 scallions, chopped
1 clove garlic, finely chopped
About 16 gyoza or wonton wrappers
3 tablespoons vegetable oil
Bottled ponzu sauce, for dipping

Steps:

  • Toss the cabbage with 1/4 teaspoon salt and let stand for 10 minutes. Add the cilantro, ginger, sesame oil, scallions and garlic and stir to combine.
  • Fill a small bowl with water. Lay a gyoza wrapper on a work surface and spoon a scant tablespoon of the cabbage mixture into the center. Moisten a finger with water and rub it along the edge of the wrapper. Fold the wrapper over to make a triangle or half-moon shape, then seal with your fingers, trying to push out any air as you go. Repeat with the remaining wrappers and filling.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot. Arrange the potstickers in the skillet in concentric circles and cook until the bottoms are light golden, about 2 minutes. Carefully add 1/4 cup water to the pan; cover and cook until the liquid has evaporated, the wrapper dough is tender, and the undersides of the potstickers are golden brown, about 6 minutes.
  • Transfer the potstickers to a serving platter, crispy-side up, and serve with ponzu sauce.

1 tablespoon sugar
1 1-inch piece ginger, peeled and thinly sliced
4 3-inch strips orange zest
Kosher salt and freshly ground pepper
2 scallions, sliced, white and green parts separated
1 cup sliced button mushrooms
2 medium carrots, thinly sliced
2 to 3 napa cabbage leaves, thinly sliced
24 frozen chicken or vegetable dumplings or pot stickers Soy sauce, for drizzling (optional)

Steps:

  • Combine 2 cups water, the broth, ham, sherry, sugar, ginger, orange zest, 1/2 teaspoon salt, and pepper to taste in a large pot. Cover and bring to a boil over high heat. Add the scallion whites, mushrooms and carrots. Reduce the heat and simmer, uncovered, until the carrots are crisp-tender, about 4 minutes.
  • Add the cabbage, dumplings and scallion greens. Cover and cook until the dumplings are soft and heated through, 4 to 5 minutes. Divide the dumplings and soup among bowls. Drizzle with soy sauce, if desired.

This traditional recipe is from the area of Northern China. Wonton wrappers are stuffed with finely chopped vegetables and pork, then fried and served with a spicy dipping sauce.

½ pound ground pork
½ medium head cabbage, finely chopped
1 green onion, finely chopped
2 slices fresh ginger root, finely chopped
2 water chestnuts, drained and finely chopped
1 teaspoon salt
½ teaspoon white sugar
1 teaspoon sesame oil
1 (14 ounce) package wonton wrappers
5 tablespoons vegetable oil
¾ cup water
1 tablespoon chili oil
1 tablespoon soy sauce
1 teaspoon rice vinegar

Steps:

  • Crumble pork into a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a medium bowl, mix together the pork, cabbage, green onion, ginger, water chestnuts, salt, sugar and sesame oil. Chill in the refrigerator 6 to 8 hours, or overnight.
  • Place a tablespoon of the pork mixture into each of the wonton wrappers. Fold the wrappers, and seal the edges with a moistened fork.
  • In a large, deep skillet, heat 3 tablespoons vegetable oil over medium high heat. Place the pot stickers into the oil seam sides up. Heat 30 seconds to a minute. Pour water into the skillet. Gently boil 7 to 8 minutes, until oil and water begins to sizzle, then add remaining oil. When the bottoms begin to brown, remove pot stickers from heat.
  • In a small serving bowl, mix together the chili oil, soy sauce, and vinegar, adjusting proportions to taste.

24 rectangular (3 1/2-by-3-inch) or square wonton wrappers
1 recipe Wonton Filling
2 tablespoons vegetable oil
2 scallions, finely chopped (optional)
1/3 cup reduced-sodium soy sauce, for serving

Steps:

  • Make wontons (through step 2).Transfer to an oiled plate, and cover with a damp towel to keep moist.
  • In a 12-inch nonstick skillet with a tight-fitting lid, heat 1 tablespoon oil over medium-high heat. Add half the wontons and cook, turning once, until lightly browned, about 1 minute per side. Carefully add 1/2 cup water (oil may sputter), cover, and steam until translucent and just cooked through, 2 to 3 minutes. Repeat with remaining tablespoon oil and wontons. This scrumptious, savory, brothy dumpling soup is so easy to make and perfect for weeknight meals. It's super flexible, so you can add your favorite veggies, and it's ready in under a half hour.

1 tablespoon vegetable or olive oil
1 large leek (, cleaned and chopped (white and light green parts only))
1/3 cup shaved or chopped carrots
3 garlic cloves (, minced)
4 shiitake mushroom caps (, cleaned and thinly sliced)
3 baby bok choy (, tender leaves and firm stems chopped separately)
1/4 cup lite soy sauce
5 cups chicken or vegetable broth ((= two 14 oz cans plus 1 cup of water))
2 teaspoons sesame oil
2 teaspoons Better Than Bouillon (, chicken or mushroom (optional but delish))
1 1/2 pounds frozen potstickers (, wontons or dumplings (minis recommended, see notes) (no need to thaw))
1/3 cup thinly sliced green onions ((about 2 green onions))
sesame seeds for topping ((see notes for other suggestions))

Steps:

  • Heat the vegetable or olive oil in a 4 quart Dutch oven or soup pot over medium heat until the oil shimmers.
  • Add the leeks, carrots, garlic, mushrooms, and the firm baby bok choy stems (reserve the leaves for later) to the pot and saute until the leeks are soft (about 5 minutes).
  • Add the soy sauce, broth (and water if using) and sesame oil. Increase heat and bring the soup to a light boil, stirring frequently.
  • If using, stir in the Better Than Bouillon paste until completely dissolved.
  • Carefully add the frozen potstickers to the pot, and cook according to the boil instructions on the packaging (usually just a few minutes).
  • Reduce heat to low and stir in the reserved baby bok choy leaves and most of the green onions (reserve about a tablespoon for the soup bowl).
  • Serve immediately, topping bowls of soup with more green onions and a sprinkling of sesame seeds.

  • Add frozen dumplings and baby corn; boil until dumplings are cooked through about four minutes.
  • Add Chinese cabbage or greens and simmer for about 2 minutes.

This yummy soup uses Ling Ling brand frozen pot stickers that I buy from Costco. Instead of frozen veggies, I use fresh ones and add water chestnuts and bamboo shoots. 1/4 cup cornstarch
2 teaspoons chopped scallions, plus more
scallion, for garnish

Steps:

  • In a large pot combine broth and water. Bring to a boil. Add frozen Ling Ling Pot Stickers. Return to a boil and cook 4 minutes, stirring occasionally.
  • Add frozen vegetables, ginger and scallions. Cook 4 minutes.
  • In the meantime, mix Ling Ling Potsticker Sauce with cornstarch in a small bowl.
