SICHUAN STIR-FRIED POTATOES



Sichuan Stir-Fried Potatoes image

Sichuan stir-fried potatoes -- a much-loved recipe in China that may not be as well known in the US but you'll be surprised how easy to make and good it is!

2 large red skinned potatoes
2 tablespoons oil
1 tablespoon Sichuan peppercorns
2 thin slices of ginger ((minced))
2 cloves garlic ((minced))
3-6 dried red chilies ((de-seeded and chopped))
1 long red or green hot pepper ((de-seeded and julienned))
1 teaspoon light soy sauce
½ teaspoon sugar
1 teaspoon white vinegar
1/2 teaspoon sesame oil
1 tablespoon chicken stock ((or water))
Salt to taste
1 scallion ((chopped))

Steps:

  • Peel and julienne the potatoes. Soak them in fresh, cold water a couple times (until you can soak them and the water is somewhat clear). Drain and set aside, but don't let them sit longer than 20 minutes, as they'll turn brown.
  • Heat oil in a wok over medium heat, and add the Sichuan peppercorns (make sure they don't burn). When the peppercorns are fragrant, turn off the heat and scoop all the peppercorns out, leaving the oil in the wok. Discard the used peppercorns.
  • Over medium heat, add the ginger, garlic and chilies to the oil. Cook for a minute, and add the potatoes and julienned peppers. Turn the heat up to high and stir-fry for 30 seconds. Add the soy sauce, sugar, vinegar, sesame oil, chicken stock (or water), and salt. Stir-fry everything for a minute and cover for 45 seconds. Uncover, stir in the scallions, and serve!

Chinese Stir-Fried Potatoes image

These addicting stir-fried potatoes are a great accompaniment to a variety of entrees (not just Asian style either!)

1 pound potatoes, peeled if desired and sliced thin
1 tablespoon light soy sauce
1 teaspoon brown sugar
1 teaspoon all-purpose flour
3 tablespoons peanut oil, divided
1 cup chicken or beef stock
1 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Combine the potatoes, brown sugar, soy sauce, flour, and 1 tablespoon of the peanut oil in a large bowl. Stir to coat the potatoes in the mixture. Cover the bowl and place in the refrigerator for 1 hour. Heat the remaining peanut oil in a wok over high heat. Add the potato mixture and cook, stirring constantly, for 3 minutes. Add the chicken stock, sugar, and salt to the wok. Mix gently then reduce the heat to medium low, cover the wok, and let the potatoes cook until they are tender. Serve hot.

2 medium potatoes, peeled and sliced into 1/2 inch round slices
3 large tomatoes, sliced into 1/2 inch thick round slices
2 whole red chilies, chopped
1 teaspoon cumin seed (sabut jeera)
salt
1 tablespoon olive oil

Steps:

  • Heat oil in a wok.
  • Toss in red chillies.
  • Allow to splutter.
  • Add cumin seeds and allow to splutter.
  • Add tomatoes, potatoes and salt to taste.
  • DO NOT ADD WATER.
  • Mix well, cover and cook until the potatoes are tender when pricked with a fork.
  • Squeeze some fresh lemon juice on top of the cooked potatoes before serving, if desired.
  • Serve hot with parathas or roti.
  • You may serve raita as an accompaniment.
  • Enjoy!

A creamy fall soup that's easy to make any time of year. The earthiness of the sweet potato is balanced with tart apples, spicy ginger, and touch of zesty lime. If desired, garnish each serving with a dollop of sour cream, some chopped cilantro, and a few sweet, spicy nuts. A Thanksgiving favorite that's a kid favorite year-round. Freezes well!

3 tablespoons olive oil
4 shallots, sliced
1 pound tart apples, cored and cut into 1/4-inch pieces
2 tablespoons grated fresh ginger
1 lime, zested and juiced
¼ teaspoon red pepper flakes, or more to taste
¼ teaspoon ground cayenne pepper, or more to taste
2 quarts chicken broth
2 (15 ounce) cans sweet potatoes, drained
½ teaspoon salt, or to taste
1 lime, cut into wedges

Steps:

  • Heat olive oil in a large soup pot over medium heat; cook and stir shallots in the hot oil until soft, about 3 minutes. Stir apples, ginger, zest from 1 lime, red pepper flakes, and cayenne pepper into the pot. Reserve lime juice. Cook and stir mixture until apples are very soft, about 15 minutes.
  • Pour chicken broth into pot; add sweet potatoes and salt. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Puree soup with an immersion blender until smooth. Stir reserved lime juice into soup. Garnish with lime wedges to serve.

In a 2010 love letter to the food processor, Mark Bittman gave the machine the ultimate compliment: "I upgraded its position in my kitchen from a cabinet to a spot on my itsy-bitsy counter," he wrote. Here, he uses the machine to chop and grate vegetables, cutting down on prep time (and any possibility of shredding your knuckles on a box grater). The end result is a quick side dish, full of flavor from the ginger and soy sauce.

4 scallions, trimmed and cut into 1-inch pieces
2 garlic cloves
1 piece fresh ginger (1-inch long), peeled
1 small fresh hot chili (like jalapeño or Thai), stem and seeds removed
1 1/2 pounds sweet potatoes, peeled and cut into 1- to 2-inch chunks
3 tablespoons peanut oil
Salt
Freshly ground black pepper
1 tablespoon soy sauce, more for serving

Steps:

  • Put scallions in food processor and pulse until finely chopped; remove. Add garlic, ginger and chili to the processor and pulse until minced; remove. Fit the processor with grating blade and grate sweet potatoes.
  • Put oil in a large nonstick or well-seasoned cast-iron skillet over medium-high heat. When hot, add garlic-ginger-chili mixture and fry for 30 seconds. Add half the scallions and all the potatoes and sprinkle with salt and pepper. Cook, stirring or tossing, until the potatoes are lightly browned, about 10 minutes; the potatoes need not be fully tender.
  • Add soy sauce, toss once, and transfer potatoes to serving platter. Garnish with remaining scallions and serve immediately with additional soy sauce, if desired.
