THE BEST OATMEAL COOKIE BARS

The Best Oatmeal Cookie Bars image

These are the BEST Oatmeal Cookie Bars you'll ever bake! Soft, chewy, and loaded with rolled oats and chocolate, this is a great recipe the whole family will love! Super easy and no mixer required!

Provided by Ashley Manila

Categories     Dessert

Time 2h1m

Number Of Ingredients 13

2 sticks (8 ounces, 1 cup) unsalted butter, melted
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs plus 1 egg yolk, at room temperature
2 tablespoons milk
1 tablespoon vanilla extract
1 and 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
1 and 1/4 cups chopped dark chocolate OR your mix-in of choice (see post for ideas!)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  • In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
  • Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
  • Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
  • Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
  • Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

THE VERY BEST OATMEAL RAISIN COOKIES (SOFT AND CHEWY)

The Very Best Oatmeal Raisin Cookies (Soft and Chewy) image

The very best oatmeal raisin cookies you will ever make! They are soft and chewy and I promise you will NOT be wishing those raisins were chocolate chips. (I know you) The trick is to plump the raisins in boiling water, and then add a bit of molasses to the cookie dough. It's to die for!

Provided by Karen

Categories     Dessert

Time 2h37m

Number Of Ingredients 16

1 cup butter (softened (2 sticks))
1 cup brown sugar
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 tablespoon molasses
2 & 1/2 cups all-purpose flour (spooned and leveled)
1 & 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 & 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
pinch cardamom (optional)
1 cup quick oats
1 cup old fashioned rolled oats
1/2 cup chopped walnuts (toasted (optional))
1 & 1/2 cups raisins

Steps:

  • Start by preparing your raisins and walnuts, if you plan to add nuts. Bring a small pot of water to a boil. Add 1 and 1/2 cup raisins to a small bowl. Pour the boiling water over the raisins. Set aside to plump (at least 10-15 minutes.)
  • In a small pan, add 1/2 cup walnuts and set over medium heat. Stir frequently for 3-5 minutes, until the walnuts are light brown and fragrant. Don't burn them! Nuts are so easy to burn. Set side to cool.
  • In a large bowl or stand mixer, beat the butter until is is soft and creamy.
  • Add the brown sugar and granulated sugar and beat together. Scrape the bottom and sides of the bowl and beat for another 2-3 minutes, until fluffy.
  • Add 2 eggs, 2 teaspoons vanilla, and 1 tablespoon molasses. Beat well until incorporated, scraping the sides and bottom.
  • Add 2 and 1/2 cups flour (spooned and leveled!) but don't mix it in yet.
  • On top of the flour in the bowl, add 1 and 1/2 teaspoons baking soda, 1 teaspoon kosher salt, 1 and 1/2 teaspoons cinnamon, and 1/4 teaspoon nutmeg. Add in a dash of cardamom, but only if you already know you like cardamom. Stir it into the flour with a small spoon.
  • Use the beaters to stir the flour into the dough, but not all the way. Stop when the dough is still pretty white from the flour. Scrape down the edges.
  • Add 1 cup quick oats, 1 cup old fashioned oats, and the 1/2 cup of toasted walnuts, if you're using them.
  • Beat just until the flour streaks are gone. Make sure to scrape the sides and bottom of the bowl to make sure it has all been mixed properly, but do not over mix (or you will get tough cookies).
  • Drain the raisins through a strainer. Lay out a paper towel on the counter and pour the raisins on top to dry them out a bit. Set aside 1/4 or 1/2 cup raisins to press into the top of the baked cookies, if you want.
  • Use a wooden spoon to stir the raisins into the dough. If they are still a little wet, they may not mix in very well. Just do your best to get them incorporated.
  • Cover the dough and refrigerate for 2 hours or up to 48 hours. If you are in a big hurry, you can shape the dough into balls right away, set them on a plate, cover with plastic wrap, and refrigerate for 30 minutes before baking (they will chill faster if they are already shaped into balls).
  • When you are ready to bake, preheat your oven to 350 degrees F.
  • Line a few baking sheets with silicone baking mats or parchment paper.
  • Use a 2 inch cookie scoop (< this is the one I have) to shape the cookie dough, or just use your hands. Your cookie dough balls should be about 2 inches across, or a little bigger than a golf ball.
  • Place the cookie dough on the prepared baking sheets with about 2 inches in between each cookie. I was able to fit 12 on a half sheet baking pan.
  • Bake at 350 for 11-12 minutes. The cookies should be firm on the edges and slightly golden. They should not be too shiny. A little bit of shine is okay right in the center, but not much. If the whole top of the cookie is still shiny, leave it in for 2-3 more minutes.
  • Remove the pan from the oven.
  • For an extra thick cookie: Immediately after you take them out of the oven (seriously, don't wait) use two spoons to gently push each cookie together. I just used two regular spoons, the kind you eat cereal with. Push the cookie together so that it comes up a bit in the middle. That's how you're going to get a soft, thick center. If you wait even just a minute after taking them out of the oven, the brown edges will start to crisp up, and you won't be able to shape the cookies. Work your spoons all the way around the edges so that your cookie is a nice circle shape. Work quickly to shape all the cookies before they crisp on the edges. (See photos of this process on my recipe for 30 minute Chewy Chocolate Chip Cookies.)
  • Press extra raisins into the top of each cookie, if desired. (You can use ones that you plumped or ones straight from the bag.)
  • Remove to a wire rack and let cool completely. But not before eating at least one!
  • Store covered on the counter.

EASY OATMEAL BARS (4 INGREDIENTS!)

Easy Oatmeal Bars (4 Ingredients!) image

Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

Provided by Sonja Overhiser

Categories     Snack

Time 10m

Number Of Ingredients 5

1 cup creamy peanut butter (no sugar added, or sunflower butter for nut free)
1/2 cup honey (or agave syrup* for vegan)
4 cups Old Fashioned rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Steps:

  • Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

  • In the bowl of a food processor, pulse together the flour, brown sugar, cinnamon, salt and baking soda until combined. Add the butter and continue to process until the mixture resembles coarse sand. Add in the oats and water and pulse until combined.
  • Press half of the oat mixture onto the bottom of the prepared baking dish with a spatula or your hands. Bake for 10 minutes or until lightly browned.
  • Spread the date mixture over the partially baked crust and then sprinkle the remainder oat mixture over the dates. Lightly press down. Bake for 30-35 minutes or until the tops of the crust is a light golden brown. Let cool completely and then slice into bars or squares. Enjoy!

EASY OATMEAL BARS WITH BLUEBERRY AND CARROT

Easy Oatmeal Bars with Blueberry and Carrot image

These oatmeal bars taste like an oatmeal cookie and are great for breakfast or snack. You can make them ahead, too! (You can add the egg or leave it out. Without egg, these are a crisp cookie bar texture. With it, they're a little cakier.)

Provided by Amy Palanjian

Categories     Snack

Time 34m

Number Of Ingredients 11

¾ cup quick or instant oats ((or rolled oats ground up in the food processor or blender))
½ cup whole wheat flour
½ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
¼ cup melted coconut oil ((or butter))
¼ cup creamy unsweetened almond butter
¼ cup maple syrup
1 egg ((optional))
½ cup grated carrot
½ cup blueberries ((cut in half if very large))

Steps:

  • Preheat the oven to 375 degrees F. Line an 8x8-inch pan with parchment paper so it overhangs on two sides so the bars are easy to lift out once baked and cooled.
  • Mix together all of the ingredients in a medium bowl except the blueberries. (Add the egg if using.) Stir in the blueberries gently.
  • Press into the prepared pan so the batter is even and pressed to the edges.
  • Bake for 24-26 minutes or until the edges are lightly golden brown and set.
  • Cool fully. (Really, please let it sit until it's cool to the touch! You can pop it into the fridge to speed this up if you'd like. It may crumble a bit if you slice when still warm.)
  • Slice into bars and serve or store. I typically cut into 16 small squares, but you can cut them larger if desired.

  • In a medium mixing bowl, use a fork to mix together the oats, cinnamon and baking powder. The stir in the cooked quinoa.
  • Next, in a large mixing bowl, mix together your egg (or replacer), bananas, maple syrup, oil (or nut butter of choice) and vanilla extract.
  • Add the contents from the first mixing bowl (oats etc) to the second bowl with the bananas etc. Mix until the ingredients appear to be blended.

5 HEALTHIEST OATMEAL BRANDS THAT ARE SERIOUSLY DELICIOUS ...

From wellandgood.com
Estimated Reading Time 6 mins
  • Nature's Path Organic Hot Oatmeal: Original. The biggest thing I learned through taste-testing oatmeal is that it's all about texture—which, unfortunately, is a very personal preference.
  • Purely Elizabeth Original Ancient Grain Oatmeal. Made with gluten-free oats, flax seeds, quinoa flakes, chia seeds, hemp seeds, and puffed amaranth (all organic), Purely Elizabeth features one of the most nutrient-dense oatmeals on the market.
  • Qi'a Superfood Chia, Buckwheat, & Hemp Cereal. Like the Purely Elizabeth oatmeal, this cereal from Qi'a (a subdivision of Nature's Path Organic), is loaded with superfood extras.
  • McCann's Quick & Easy Steel Cut Irish Oatmeal. McCann's is a massive oatmeal brand—you probably grew up with it in your house (and maybe in your grandparents' kitchen, too)—and for good reason.
  • Wildway Grain-Free Instant Hot Cereal. With walnuts, ground flaxseed, cashews, coconut flour, pecans, dried dates, and vanilla bean, this cereal tastes delicious.

OATMEAL BRANDS, RANKED WORST TO BEST

From mashed.com
  • Kodiak Cakes. Looking for the best of the best when it comes to your oatmeal? You can't go wrong with Kodiak Cakes' oatmeal. This stuff is seriously out of this world, and we'd be surprised if you didn't want to eat it every single morning from now on.
  • Umpqua. Into oatmeal that has a bit more texture than your average bowl of oats? Then Umpqua is the brand that you've been looking for. These oats have a distinct chewiness to them that you won't get from other brands, and we love that we're not just getting a mushy texture when we eat these.
  • Oats Overnight. We're going to warn you now: Oats Overnight is not your typical oatmeal. If you're looking for your classic bowl of oats in the morning, then this is not going to be for you.
  • Nature's Path. You might notice that a lot of the better oatmeals on this ranking tend to be on the expensive side. That may be frustrating considering that oatmeal is usually regarded as one of the least expensive foods out there.
  • Better Oats. When you want an amazing taste and that extra health factor, you really can't go wrong with Better Oats. With this brand, you'll find a lot of flavors that are seriously so delicious.
  • Purely Elizabeth. These days, people want more out of their oats than the plain, basic stuff. However, you may not always know what to include in your oats to make them taste as good as they can be.
  • Bob's Red Mill. If you know exactly what you like when it comes to your oatmeal and you're not open to compromise, then Bob's Red Mill is the brand for you.
  • McCann's Irish Oatmeal. How much do you know about Irish oatmeal? Nothing? We didn't either, unless, until we heard about McCann's Irish oatmeal. According to the company's website, Ireland has always been known for growing oats — even before they were growing potatoes.
  • Bakery on Main. One thing that we love about the oatmeal from Bakery on Main is the fact that there are so, so many flavors to choose from. That's amazing because, first of all, it takes time and a lot of thought to pull together all the ingredients you need to make a super-flavorful oatmeal.
  • O Organics. If you're looking for the most basic of oatmeals and don't care too much about extra add-ins or flavors, you may want to look into O Organics.

It's best to steer clear of flavored packets of instant oats.
