HEALTHY WHITE TURKEY CHILI



Healthy white turkey chili image

This easy, healthy white turkey chili comes together in about 30 minutes with some simple pantry ingredients.

Number Of Ingredients 11

1 tablespoon canola oil
1 clove garlic, minced
1 medium onion, chopped
1 - 1 1/4 pounds lean ground turkey (see notes)
2 cups wild rice, cooked (see notes)
1 15 oz. can White Northern beans, rinsed and drained
11 oz. can white corn (or about 1 cup frozen corn), well drained
2 4 oz. cans diced green chilies (undrained)
2 cups low-sodium chicken broth (and extra if needed, to get it to your desired consistency)
1 teaspoon ground cumin
Shredded cheddar or Monterey-Jack cheese, sliced jalapeños, Greek yogurt or sour cream, chopped cilantro, crushed tortilla chips, hot sauce or sriracha, etc.

Steps:

  • Cook wild rice according to package directions..
  • Meanwhile, heat oil over medium heat in a large pot.
  • Add onion and saute for 3-4 minutes, until softened. Add garlic and saute an additional minute, until fragrant.
  • Move the onions and garlic to the side and add ground turkey. Cook until browned and cooked through, about 5-7 minutes.
  • Add remaining ingredients and stir to combine. (Add wild rice now if it's already cooked, or stir it in once it's finished.)
  • Cover and simmer on low for 15-30 minutes. Check and add extra chicken broth if desired, to get it to your preferred consistency.
  • Top with your favorite chili toppings and dig in!

White turkey chili is a great way to use up leftover turkey from the holidays. Our white turkey chili recipe makes a comforting meal with white beans, green chiles, and of course, turkey!

1/2 pound dry white beans, soaked overnight in water, drained OR 2 15-ounce cans white beans, drained
3 cups turkey stock
1 clove garlic, minced
1 medium onion, chopped (divided)
1 tablespoon extra virgin olive oil
1 jalapeño or serrano pepper, stem and most seeds removed, chopped (optional)
1 teaspoon ground cumin
1 teaspoon dried oregano
Pinch of ground cloves
1/4 teaspoon cayenne pepper
2 4-ounce cans chopped green chiles
2 cups diced cooked turkey
Salt to taste (about 1/2 teaspoon to 1 teaspoon)
Garnishes and extras:
1 1/2 cups grated Monterey Jack cheese
1/3 cup (loose) chopped cilantro
1/4 cup chopped green onions
1 avocado, pitted, peeled, and chopped (or guacamole)
Chopped tomatoes or salsa
Corn tortilla chips and/or fresh warmed flour tortillas

Steps:

  • If using dry beans, cook the beans: Combine the soaked and drained beans, turkey stock, and half the onions in a large soup pot and bring to a boil. Reduce the heat and simmer until the beans are very soft, 1 to 3 hours or more, depending on the type of white beans you are using. Cannelli beans are tender and tend to cook rather quickly. Navy beans take longer. Add additional water (or watered-down stock), if necessary. (Or you can skip the soaking, and cook the beans in the turkey stock with the onions in a pressure cooker. Cook on high pressure for 30 minutes, then let release naturally for 10 minutes.)
  • Combine the cooked beans and the turkey stock: In a large soup pot, combine the beans and the turkey stock, and bring to a boil. Reduce to a simmer.
  • Cook jalapeño, onions, garlic, green chiles: Heat olive oil in a skillet over medium heat. Add the chopped jalapeño (if using) and (remaining) onions, and cook until tender. Add the minced garlic and cook a minute more. Add the green chiles and seasonings and mix thoroughly.
  • Add the onion mixture and the turkey to the pot: Add the jalapeño onion mixture to the stock and beans. Add the turkey and salt to taste, and simmer for 10 minutes or more (up to an hour) until the beans are thoroughly soft, and the stew has thickened.

2 cans (15 ounces each) cannellini beans, rinsed and drained
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
2 cups cubed cooked turkey breast
1-1/3 cups fat-free milk
1 can (4 ounces) chopped green chiles, drained
1 tablespoon minced fresh cilantro
1 tablespoon dried minced onion
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon dried oregano
6 tablespoons fat-free sour cream

Steps:

  • In a large saucepan, combine the first 10 ingredients; bring to a boil, stirring occasionally. Reduce heat; simmer, covered, 25-30 minutes or until heated through. Top servings with sour cream.

1 tablespoon olive oil
1 small onion, finely chopped
1 jalapeno chile (ribs and seeds removed for less heat, if desired), minced
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
Coarse salt and ground pepper
1/4 pound ground turkey (7 percent fat)
1 can cannellini beans (15.5 ounces), drained and rinsed
Garnishes, such as lime wedges, cilantro, sour cream, and grated cheese

Steps:

  • In a medium saucepan, heat oil over medium heat. Add onion, jalapeno, garlic, oregano, and cumin; season with salt and pepper. Cook, stirring occasionally, until vegetables begin to soften, 3 to 4 minutes.
  • Add turkey and cook, breaking up with a spoon, until no longer pink, 2 to 3 minutes. Add beans and 3/4 cup water. Bring to a boil, while mashing some of the beans against side of pan to release starch. Reduce heat to medium and simmer until thickened, 5 to 10 minutes.
  • Season with salt and pepper; garnish as desired.

1 tablespoon vegetable oil
2 tablespoons tomato paste
2 tablespoons chili powder
1 teaspoon ground cumin
1 green bell pepper, roughly chopped
5 scallions, sliced (white and green parts separated)
Kosher salt
1 pound ground turkey
1 28-ounce can diced fire-roasted tomatoes
2 cups low-sodium chicken broth
1 15-ounce can black beans, drained and rinsed
1 cup crushed tortilla chips, plus more for topping
Sour cream and shredded cheddar cheese, for topping (optional)

Steps:

  • Heat the vegetable oil in a large pot over medium-high heat. Add the tomato paste, chili powder and cumin and cook, stirring, until the mixture darkens, about 1 minute. Add 1/2 cup water, the bell pepper, scallion whites and 1 teaspoon salt. Cook, stirring, until the bell pepper is crisp-tender, about 4 minutes. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, about 4 minutes.
  • Stir the tomatoes, chicken broth, beans and crushed tortilla chips into the pot; bring to a simmer. Partially cover and cook, stirring occasionally, until thickened, 10 to 12 minutes. Stir in all but a few tablespoons of the scallion greens and season with salt. Top with more crushed tortilla chips, sour cream, cheddar and the remaining scallion greens.

1 pound uncooked turkey breast slices, cut into 1/2-inch cubes
1/2 pound ground turkey
3 cups (or more) chicken stock or canned low-salt broth
1/4 cup pearl barley
2 tablespoons chopped seeded jalapeño chilies
1 teaspoon dried marjoram
1 teaspoon dried summer savory
1 15- to 16-ounce can cannellini (white kidney beans) or Great Northern beans, rinsed, drained
1 15- to 16-can garbanzo beans (chickpeas), rinsed, drained
Several dashes of hot pepper sauce (such as Tabasco)
Chopped green onions
Grated cheddar cheese
Sour cream

Steps:

  • Heat vegetable oil in heavy large saucepan over medium heat. Add onion and garlic and sauté until tender, about 5 minutes. Add cumin and stir until fragrant, about 30 seconds. Add cubed turkey breast and ground turkey. Sauté until no longer pink, about 4 minutes.
  • Add 3 cups stock, barley, jalapeños, marjoram and summer savory to turkey mixture. Cover and simmer until barley is almost tender, stirring occasionally, about 40 minutes.
  • Add cannellini and garbanzo beans to chili. Simmer uncovered until barley is tender and chili is thick, about 15 minutes. Season with hot pepper sauce, salt and pepper. (Can be made 1 day ahead. Cover and chill.Bring to simmer before serving.)
  • Serve chili, passing green onions, cheese and sour cream separately.

Steps:

  • In a large saucepan or Dutch oven, heat canola oil over medium heat. Add onion; saute until tender, about 5 minutes. Add garlic, and cook 1 minute longer. Stir in cumin; cook 5 minutes. Add cubed and ground turkey; cook until no longer pink, breaking ground turkey into crumbles. Add broth, beans, jalapeno, marjoram and savory. Bring to a boil. Reduce heat; simmer, covered, for 45 minutes, stirring occasionally. , Uncover; cook 15 minutes more. Dissolve cornstarch in water; stir into chili. Bring to a boil. Cook and stir 2 minutes. If desired, serve with cheese and sliced red onion.
