1 (1 1/2 lb) acorn squash
2 3/4 cups self-rising flour, divided
1 cup raisins
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 1/2 cups sugar
1/2 cup egg substitute
1/2 cup applesauce
1/4 cup vegetable oil
vegetable oil cooking spray
powdered sugar (optional)

Steps:

  • Cut squash in half; discard seeds and membrane. Place squash halves, cut sides down, in an 11- x 7-inch baking dish. Add water to a depth of 1/4 inch.
  • Bake at 375° for 35 to 45 minutes or until tender; cool slightly.
  • Scoop out and mash pulp; discard shells.
  • Toss together 1/4 cup flour and raisins. Set aside.
  • Combine remaining 2 1/2 cups flour, cinnamon, nutmeg, and cloves; set aside.
  • Combine squash pulp, sugar, and next 3 ingredients; stir in flour mixture until blended. Stir in raisins. Pour into a 12-cup Bundt pan coated with vegetable cooking spray.
  • Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan, and cool completely. Sprinkle with powdered sugar, if desired.

Another favorite from grandma! Every fall she'd bake ONLY 2 pumpkin spice cakes (this recipe is only for ONE cake, save the pie filling to make another cake if you desire). Those who were fortunate to get a slice did not want pumpkin pie at their Thanksgiving table. This is a very MOIST cake.

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 3/4 cups sugar
4 eggs
2 cups pumpkin pie filling
1 cup oil
1/2 cup chopped nuts
1 (8 ounce) package cream cheese
1/2 cup butter
2 cups sugar
1 -2 tablespoon milk
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350°F.
  • Mix together the dry ingredients.
  • Add eggs, pumpkin and oil.
  • Blend in nuts.
  • Grease and flour either a bundt cake pan or two 9 inch cake pans.
  • Bake for 30 minutes.
  • In a separate bowl mix all of the frosting ingredients and mix well.
  • Frost when cake is cool.
  • If you have pumpkin pie spice on hand you could sprinkle a little over the frosting for appearances!
  • Enjoy with family and friends.

A very good year in my garden for butternut squash. I've been looking for ways to use them up. I altered a sweet potato recipe and this came out delicious.

3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup butter, softened
2 cups sugar
4 large eggs
2 1/2 cups butternut squash (cooked and mashed)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 12-cup bundt pan with cooking spray.
  • Combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
  • Beat the butter and sugar until creamy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Add the vanilla.
  • Add the flour mixture alternately with the squash. Mix until well blended.
  • Pour into the prepared bundt pan.
  • Bake for 60 minutes. Stick a toothpick in the middle of the cake to see if it comes out clean. If not, bake for 5 more minutes.
  • Repeat if necessary.
  • Remove pan from oven and place on a wire rack for 10-15 minutes. Remove cake from pan and let cool on rack.

3 large eggs
1 cup vegetable oil
2 cups white sugar
1 tablespoon real vanilla
2 cups zucchini, freshly grated
2 3/4 cups sifted flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 tablespoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon ginger
1 teaspoon salt
1 2/3 cups cinnamon baking chips (optional)
1 cup walnuts, broken

Steps:

  • Preheat oven to 350 degrees.
  • In large glass batter bowl, break eggs and stir well with fork. Add sugar,vanilla and oil to eggs and mix again with fork. Measure and sift 1 cup flour, baking soda, salt, baking powder and spices into batter. Stir lightly with fork until mixed. Measure remaining flour into sifter and add to batter. Add broken nut pieces and cinnamon chips, if desired. Mix.
  • Spray bundt cake pan with no stick spray and dust lightly with flour. Remove excess flour.
  • Pour batter into bundt pan evenly, then bake for 60 minutes. Let cool down to warm before removing from pan.
  • Frost if desired, when cool with Cream Cheese Frosting. Sprinkle with broken walnut or pecan pieces for garnish if desired.

3 1/3 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons cinnamon
2 teaspoons baking soda
1 1/2 teaspoons salt
2 large eggs, room temperature
1 cup canola oil
3/4 cup granulated sugar
1 cup molasses
1 cup hot water
1 1/2 cups icing sugar
1/4 cup fresh lemon juice

Steps:

  • Preheat the oven to 325°F Spray a 10-cup Bundt pan generously with non-stick baking spray.
  • Whisk the flour with ginger, cinnamon, baking soda and salt in a large bowl. In a separate bowl, whisk the eggs well. Whisk in canola oil, then sugar and molasses. Pour the egg mixture into the flour mixture and stir well. Add hot water and stir well.
  • Scrape the batter into the prepared pan. Bake 45 minutes or until a cake tester inserted into the centre comes out clean. Let cool in the pan on a rack 10 minutes.
  • Flip the cake out onto a rack set over a baking sheet. Let cake cool for another 5 minutes, then poke deep holes all over the cake using a long skewer. Drizzle glaze all over cake, trying to get some into each hole, and brushing the glaze so it covers the entire surface of the cake. Serve warm or let cool completely.
  • To make the Lemon Glaze, whisk the icing sugar with the lemon juice until smooth.
