Here's an easy way to get kids to eat their vegetables. Carrots were never my family's favorite, but with this delicious soup, they hardly know they're eating them. -Joanne Novellino, Bayville, New Jersey

Number Of Ingredients 11

2 small onions
2 cups water
1/2 pound carrots, cut into 1-inch pieces
1/8 teaspoon celery salt
1/8 teaspoon pepper
2 cups diced zucchini (3 to 4 medium)
1-1/2 teaspoons olive oil
1-1/2 teaspoons butter
1/2 cup chopped seeded tomatoes
2/3 cup evaporated milk
2 tablespoons minced fresh parsley

Steps:

  • Chop one onion; set aside. Quarter the other onion and place in a 3-qt. saucepan. Add the water, carrots, celery salt and pepper; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until carrots are tender. Transfer to a blender; cover and process until pureed. Return to the pan., In a large skillet, saute zucchini and chopped onion in oil and butter until tender; add to carrot mixture. Stir in tomatoes. Cover and simmer for 10 minutes or until tomatoes are tender. Stir in milk and parsley; heat through.

2 tsp olive oil
1 medium onion (finely chopped)
1lb carrots (peeled and sliced)
1lb zucchini (unpeeled and sliced)
2 tsp curry powder
3 1/2 cups chicken broth (fat-free, low-sodium)
1/4 cup fresh parsley (chopped)

Steps:

  • Gather the ingredients.
  • Heat the olive oil in a Dutch oven or soup pot over medium heat. Sauté onions in a soup pot for 5 minutes, or until softened. Add carrots and zucchini, followed by curry powder.
  • Stir for 1 to 2 minutes. Add chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes, until vegetables are tender. Add chopped parsley.
  • Transfer soup to a blender and blend until smooth, working in two batches.
  • Serve and enjoy!

2 tablespoons coconut oil
1 medium onion (finely diced)
2 cloves garlic (minced)
3 tablespoons flour
1 cup chicken broth (or vegetable broth)
2 cups milk
2 medium zucchini (grated)
10-12 baby carrots or 1 medium carrot (grated)
1 tsp thyme
Salt and pepper to taste

Steps:

  • In a large saucepan, saute the onion and garlic in the coconut oil on medium high for 5-7 minutes or until the onion is tender.
  • Stir in the flour and mix until combined well.
  • Stir in the broth and milk and bring to a boil
  • Reduce the heat and add the zucchini, carrot and thyme.
  • Cook for 30 minutes or until veggies are tender, stirring occasionally .
  • ENJOY!!

This is one of my favorite soups! It's my grandma's recipe that she just handed down to me this year in celebration of my garden producing enough zucchini for a small army! It's creamy and filling but mild. This soup can be frozen.

4 cups shredded zucchini
¾ cup water
¾ teaspoon salt
½ teaspoon basil
2 cups warm milk
3 tablespoons all-purpose flour
½ teaspoon salt
3 tablespoons butter
2 tablespoons minced onion
ground black pepper to taste

Steps:

  • Stir zucchini, water, salt, and basil together in a pot; bring to a boil, reduce heat to medium-low, and simmer until zucchini is tender, about 15 minutes.
  • Pour zucchini mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend until smooth. Puree in batches.
  • Whisk warm milk, flour, and salt together in a bowl until smooth.
  • Melt butter in a skillet over medium heat. Cook and stir onion in melted butter until translucent, 5 to 7 minutes. Pour pureed zucchini and milk mixture into the skillet; bring to a boil while stirring continually. Season with pepper.

2 cups sliced zucchini
1/2 cup chopped onion
1/2 cup chopped carrot
1 tablespoon butter
2 cups chicken broth
3/4 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 to 1/2 teaspoon garlic powder
2 cups milk
Paprika and additional zucchini, optional

Steps:

  • In a large saucepan, saute zucchini, onion and carrot in butter until crisp-tender. Add the broth, tarragon, salt, pepper and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. Cool slightly., Transfer to a blender. Cover and process until pureed; return to pan. Add milk; heat through. Garnish with paprika and zucchini if desired.

1 tablespoon butter
1 onion, chopped (1 c)
2 garlic cloves, minced
2 zucchini, cut into half-rounds (2 c)
3 carrots, scraped and sliced (2 c)
2 cucumbers, peeled, cored and sliced
1 tablespoon curry powder
6 cups canned chicken or 6 cups vegetable broth
1 cup heavy cream or 1 cup milk

Steps:

  • Melt butter in large soup pot. Add onions and garlic. Add vegetables, curry, and broth, bring to a boil, then simmer, covered, for 20 minutes.
  • Remove from heat. Allow to cool lukewarm. Using a food processor or blender, puree the soup. Return to pot; add cream or milk; heat briefly and serve hot (or chill and serve cold the next day).

1 cup carrot, grated

1 cup monterey jack cheese

Steps:

  • Melt butter in a heavy saucepan. Add zucchini, carrot and onion. Saute until onion is soft and clear.
  • Sprinkle with flour and stir well. Add water, milk, salt and pepper. Heat and stir until thickened, about 5 minutes.
  • Puree soup in batches in blender. Return to pot.
  • Add cheese. Stir to melt. Serve.
