ASIAN BARBECUED CHICKEN

4 teaspoons vegetable oil, plus more for brushing
2 teaspoons packed light brown sugar
1 1/2 teaspoons five-spice powder
Kosher salt and freshly ground pepper
2 chicken halves (3 1/2 to 4 pounds total)
3 1/4 teaspoons grated ginger
1 teaspoon grated garlic
1/4 cup hoisin sauce
2 tablespoons rice vinegar (not seasoned)
3 1/2 teaspoons honey
1 1/4 teaspoons sesame oil
6 small cucumbers, cut into 2-inch spears

Steps:

  • Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off the burners on one side and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  • Mix 2 teaspoons vegetable oil, the brown sugar, 1 teaspoon five-spice powder, 1 teaspoon salt and 1/4 teaspoon pepper in a bowl. Rub on the chicken. Grill skin-side down over direct heat until marked, about 5 minutes. Flip and move to the cooler side of the grill; cover and cook until a thermometer registers 165 degrees F in the thigh, 30 to 40 minutes.
  • Meanwhile, heat the remaining 2 teaspoons vegetable oil in a saucepan over medium heat. Add 3 teaspoons ginger, the garlic and the remaining 1/2 teaspoon five-spice powder and cook 2 minutes. Add the hoisin sauce, 1 tablespoon vinegar and 3 teaspoons honey; cook 1 minute. Remove from the heat and add 1 teaspoon sesame oil.
  • Toss the cucumbers with the remaining 1 tablespoon vinegar, 1/2 teaspoon honey, 1/4 teaspoon each sesame oil and ginger, and salt to taste. Top the chicken with the sauce. Serve with the cucumbers.

A simple and easy recipe for asian grilled chicken! It's a quick chicken marinade with soy sauce, minced garlic, rice vinegar, ground ginger, and one secret ingredient that makes the chicken SUPER tender!

1 1/4 - 1 1/2 pounds lean boneless skinless chicken breasts
2 cloves garlic, minced
1-2 tablespoons sriracha (or sambal oelek or gochujang)
1 1/2 tablespoons honey
2 tablespoons light soy sauce
2 tablespoons rice vinegar
2 tablespoons mayonnaise
1/2 teaspoon salt + 1/4 teaspoon black pepper
1/2 teaspoon ground ginger

Steps:

  • In a medium bowl, whisk together the minced garlic, sriracha, honey, soy sauce, rice vinegar, mayonnaise, salt, pepper, and ground ginger until smooth. You can also just add the ingredients into a blender or food processor and just give it a few quick pulses.
  • Place the chicken breasts in a large zip top bag. Pour the prepared marinade on top, zip the bag and give it a good shake until the chicken is evenly coated. Allow the chicken to marinate for 30 minutes - 10 hours. Keep in mind that the longer you let the chicken sit in the mayonnaise mixture the more tender and flavorful your chicken will be!
  • Preheat an indoor or outdoor grill to medium high heat. Spray the grates with nonstick cooking spray if desired. Place the chicken breasts on the grill, discard any leftover marinade. Cook the chicken breasts for 5-6 minutes per side or until the internal temperature reaches 165ºF.
  • Serve immediately, garnish with chopped cilantro if desired.

CHINESE BBQ CHICKEN

The marinade for this chicken is based on the famous Chinese BBQ Pork (Char Siu), a very popular recipe on my blog! It's sweet, savoury, sticky, laced with Chinese Five Spice. Add your own touch like ginger and chilli for a kick! The red food colouring is optional - it gives the chicken the reddish tinge that Char Siu is known for. 1 1/2 tbsp honey
1 1/2 tbsp hoisin sauce
2 tsp oyster sauce

750 g / 1.5lb chicken thigh fillets (, skinless boneless (or breast))

10 - 12 bamboo skewers (, soaked in water for 1 hour (optional))
Green onions / scallions (, finely sliced, for garnish (optional))

Steps:

  • Place Marinade ingredients in a ziplock bag or bowl and mix to combine.
  • Add chicken and mix to coat. Marinade for 3 - 24 hours.
  • Optional: Cut chicken into bite size or large pieces and thread onto skewers. Use 1 skewer for small pieces, 2 for large, like pictured in post.
  • Heat half the oil in a heavy based skillet over medium high heat, or BBQ on medium (if using grill side, brush oil on bars).
  • Remove chicken from marinade (RESERVE for basting) and place in the skillet - cook in 2 batches, don't crowd the pan. Cook for 4 minutes then turn.
  • Use the Marinade to baste the cooked side of the chicken. After 3 minutes, turn the chicken over so the basted side is now cooking again - cook for 1 minute.
  • Baste the chicken, then turn again and cook for 45 sec - 1 min.
  • Transfer chicken to a plate, cover loosely with foil and rest for 5 minutes.
  • Serve, garnished with green onions / scallions if using!

Steps:

  • Cut the chicken into 1 - 1.5" pieces.

  • Heat 1 tbsp oil in a large skillet (big enough to fit the skewers) over medium high heat.

The original has double the amount of sesame oil but I feel a little of that goes a long way...double it if you wish. This can be served hot or cold. It's delicious! Prep time does not include 1 hour marinating time.

2 teaspoons salt
4 cloves garlic, peeled
2 slices fresh peeled ginger

1 tablespoon light soy sauce

4 skinless, boneless chicken thighs (cut in bite sized pieces)
1 tsp soy sauce
2 tsp corn starch
1 tbsp vegetable oil
1 onion (chopped)
1 tbsp grated ginger
2-3 cloves garlic
1 tbsp curry powder
1 tsp turmeric
1/2 tsp Chinese 5 spice powder
400ml/1 1/2 cup chicken stock
2 potatoes (medium )
1 red pepper (sliced)
150g/1 cup sugar snap peas
salt to taste
chopped cilantro/coriander for serving

Steps:

  • In a medium bowl mix the soy sauce with corn starch, then add chicken pieces and set aside until needed.
  • Prepare the vegetables by chopping up the onion, peeling and grating ginger, peeling and cutting the potatoes and mincing the garlic.
  • Heat 1 tablespoon of vegetable oil in a deep frying pan or a wok and add the chopped onions and ginger. Cook over medium heat for 5 minutes, then add minced garlic and cook for a few seconds. Make sure not to burn the garlic.
  • Then add the curry powder, turmeric and the 5 spice powder, mix briefly until you can smell the aromatics. Add the chicken together with the marinade and cook it for a few minutes, so the chicken is sealed but not cooked all the way through. Add the chicken stock and deglaze the pan by scraping up the bits stuck to the bottom of it with a wooden spatula. Then add potatoes and bring everything to a boil, lower the heat and let it simmer uncovered for 15 minutes.
  • Then add sliced red pepper and sugar snap peas and cook for 5 minutes longer. At the end, taste and add a pinch of salt if necessary. Serve over steamed white or brown rice, sprinkled with some fresh chopped cilantro and green onions.

1 tsp. Chinese five-spice powder
1/4 tsp. ground red pepper
1 cut-up (8 pieces) chicken
c. hoisin sauce
1 tbsp. soy sauce
1 tsp. sesame seeds

Steps:

  • In large bowl, stir sherry, sesame oil, five-spice powder, and ground red pepper.
  • Add chicken to spice mixture and toss until evenly coated. Cover bowl and let stand 15 minutes at room temperature, turning chicken occasionally.
  • Prepare charcoal fire or preheat gas grill for covered direct grilling over medium heat.
  • Place chicken on hot grill rack. Cover grill and cook chicken 20 to 25 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife, turning pieces over once and removing pieces to platter as they are done.
  • In small bowl, mix hoisin sauce and soy sauce. Brush hoisin-sauce mixture all over chicken and return to grill. Cook 4 to 5 minutes longer or until glazed, turning once. Place chicken on same platter; sprinkle with sesame seeds.

This recipe used the traditional method to prepare the traditional Chinese roast chicken.

1 chicken, , about 2 kg
20 g salt
60 g honey
30 ml light soy sauce
1.5 tsp Chinese five-spice powder
15 g salt
15 g Sichuan peppercorn, , blend and toast with salt
1 tsp Chinese five-spice powder
5 g salt
1/2 teaspoon baking powder
2 teaspoons salt
3 teaspoons Sichuan peppercorn

Steps:

  • Slaughter the chicken. Dress, eviscerate, and rinse. Pat dry and keep it vertical to drain off the water in the cavity. Let it stands for two hours.
  • Carefully separate skin from breast meat by inserting the fingers or a small knife in between the skin and the breasts.
  • Combine the salt, honey, light soy sauce and applied to the entire surface of the chicken.
  • Apply the salt and Szechuan peppercorn mixture to the cavity of the chicken.
  • Refrigerate the chicken in an upright position. Leave it uncovered for at least 12 hours or up to 24 hours until the surface is completely dry.
  • Apply additional salt plus some baking powder to the surface. Hang the chicken upright and allow the chicken to drip dry for an hour.
  • Truss the chicken.
  • Place the chicken on an oven rack. Rub some oil on the surface. Roast in the preheated oven at 220 degrees Celsius for 20 minutes.
  • Hold the chicken carefully to drain off any juice on the skin and inside the cavity.
  • Reduce the heat to 160 degrees Celsius for another one and a half hours.
  • Cut the chicken into pieces and served with Szechuan peppercorn salt 椒盐.
