CORN WITH BACON AND CHILI POWDER
Yet another way to cook corn on the cob on the grill, but this is different, and very good. You won't need butter.

Steps:
- Wash the husked corn.
- Wrap one slice of bacon around each ear. It probably won't cover the entire ear, but be sure it goes from one end to the other. Sprinkle with chili powder to taste.
- Wrap the corn and bacon and chili powder in heavy aluminum foil and place over medium coals, or medium flame on gas grill.
- Cook approximately 20-25 minutes. Time will depend on the size of the ears of corn, and how fresh they are.

- Wrap each ear of corn with a bacon strip; place on a piece of heavy-duty foil. Sprinkle with chili powder. Wrap securely, twisting ends to make handles for turning., Grill corn, covered, over medium heat 20-25 minutes or until corn is tender and bacon is cooked, turning once.

CORN CHOWDER WITH CHILI POWDER AND CRUMBLED COTIJA CHEESE

Steps:
- For the chili powder: Mix together the cumin, garlic powder, oregano, paprika, cayenne and salt.
- For the bacon: Crisp the bacon in the olive oil in a saucepan over medium heat, about 10 minutes. Remove the bacon with a slotted spoon and set aside on paper towels. Keep the grease.
- For the chowder: Brown the onions in the same saucepan, about 10 minutes. Sprinkle on the flour and chili powder. Cook for 1 minute. Add the chicken stock, corn and potatoes. Season with salt and pepper. Bring to a boil and simmer on medium-low until the potatoes are tender, about 20 minutes. Stir in the cream and remove from the heat.
- Ladle the soup into bowls and garnish with cilantro and cheese. Sprinkle with the remaining chili powder and a squeeze of fresh lime juice. Serve with tortilla chips.
ROASTED CORN WITH CHILI LIME BUTTER
Steps:
- Preheat oven to 350 degrees F.
- Place the corn in its husks directly on the oven rack and roast until the corn is soft when you press on it, 30 to 40 minutes.
- While the corn is roasting, combine the butter with the chili powder and lime zest.
- Peel down the husks and tie in a knot to use as a handle while eating. Rub the corn with soft butter mixture, and garnish with a lime wedge. (This roasting method produces the sweetest corn I have ever tasted.)
CHICKEN CORN CHOWDER WITH GREEN CHILIS AND BACON
This is a perfect late summer dish when corn is the best and its cool enough to roast a chicken, and use the leftovers in soup ; ) I used a home made broth, made from: 5 corn cobs, 1 chicken carcass, 3 small leeks, 4 carrots, 4 celery stalks, one onion, one head of garlic, fresh herbs and spices. Just a little salt. Its a very corn flavored broth perfect for this base. - Prep garlic, onion, potatoes, celery together onto a large plate and put aside.
- Chop up bacon and cook in a large skillet over medium low heat until well done. Bacon will soften during soup cooking.
- Without draining drippings, add your chopped vegetables and cook until onions begin to soften.
- Over your pan, sift white flour beginning with 1 tbs until all the renderings are absorbed and a light coating on flour has appeared.
- Add stock.
- Bring to a low simmer and add your spices. Simmer uncovered for about 15 minutes. During this time add your chicken and corn.
- At this time you might have to transfer to a stock pot. Add 1/2 cup light cream and start with one cup of milk. Return to a simmer.
- Separately, mix 1/4 cup corn meal and 1/2 cup of water. This is to be added to your chowder next for flavor and thickening.
- Depending on the consistency you like, add the rest of your milk and corn meal mixture. Add milk to make it thinner, and corn meal mix to make it thicker. Or both. The cornmeal will be visible in the soup, but if you have "fine" corn meal, you will not feel it.
- Simmer for 20 minutes until potatoes are soft. Serve.

- Place corn in a food processor; cover and process until coarsely chopped. In a large skillet, saute onion and chili powder in butter for 2 minutes or until onion is tender. - Spray a large sauce pan and heat over medium high heat.
- Add the carrots, onion, garlic and salt and cook, stirring, for 3 minutes.
- Add the beef and cook, breaking it up with a spoon, until it is no longer pink, 3 to 5 minutes.
- Add the tomato paste and cook, stirring, until it is slightly darkened, 1 minute.
- Add the beans, green chiles, chili powder, beef broth, and 1/2 teaspoon salt.
- Simmer over medium heat until the vegetables are tender, about 10 minutes.
- Stir in the corn.
- Divide among bowls and top with the Cheddar and scallions.
