CHEESEBURGER SOUP
This Cheeseburger Soup is the perfect comfort food for cold winter nights when you don't feel like shoveling a path to the grill!

Steps:
- Using a large pot or Dutch oven, add beef; place over medium heat and cook, stirring occasionally, until beef is fully cooked. Drain excess fat from pot and set beef aside.
- In same pot, add olive oil and place over medium-high heat. Once hot, add shredded carrots, diced onions, diced celery, garlic, basil, parsley and oregano; stir until well combined. Saute, stirring occasionally, for 10 minutes.
- Add potatoes, chicken broth and cooked ground beef; stir until well combined. Bring mixture to a boil and then reduce heat to medium-low. Cover and simmer for 10-12 minutes, or until potatoes are fork-tender.
- Reduce heat to low. Add cheddar cheese, Monterey Jack cheese, cream cheese, salt and pepper; stir until well combined. Cook until cheeses have fully melted.
- Remove from heat and stir in sour cream.
- Garnish with chopped green onions before serving.

- In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes. , Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream.

- In a 3 quart saucepan, brown beef; drain and set aside.
- In the same saucepan, sauté onion, carrots, celery, basil, and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes.
- Add broth, potatoes, and beef; bring to a boil.
- Reduce heat; cover and simmer 10-12 minutes or until potatoes are tender.
- Meanwhile, in small skillet, melt remaining butter.
- Add flour; cook and stir 3-5 minutes or until bubbly.
- Add to soup; bring to a boil.
- Cook and stir 2 minutes.

- Season and brown meat to taste.
- Drain and put into a Dutch oven.
- Add onion, carrots, basil, parsley, broth, and potatoes.

SPICY CHEESEBURGER SOUP
This is a great Potato - Hamburger soup and a nice alternative to plain potato soup. It is spicy with the addition of a can of Rotel tomatoes (tomatoes with chili peppers added) - if you don't want it to be spicey, just add a can of plain diced tomatoes. This soup freezes well. I freeze it in Hefty disposable containers and warm it in the microwave for a quick meal.

CHEESEBURGER SOUP
When I first read the words "Cheeseburger Soup" on the menu of our local deli - my thought was YUCK! This was the special every Friday! Well one Friday I decided to broaden my taste buds and give it a try! It was sooooo good! Being the cook that I am, I just knew I could make this on my own. So here is my version and If I do say so myself - "it's better than the deli's" but shhhh....don't tell them!!!!!

- Bring to a boil: The first 9 Ingredients.
- Reduce heat and cover--simmer 20 minutes.
- Stir in: Hamburger and 2 cups of milk.
- Combine: 1/2 cup milk and flour.
- Gradually stir into soup.
- Bring to a boil until thick (stirring occasionally).
- Add the last 3 ingredients.
- Stir.
- When cheese is melted, soup is ready and OH, MY GOSH! Enjoy!

- Cook the hamburger in large skillet over medium heat. Once browned, drain grease and set meat in a bowl. I like to line the bowl with a paper towel to absorb any extra grease.
- Add the butter, onions, carrots and celery to the pan. Allow to cook for 5 minutes. Then add the garlic and sprinkle the flour over top. Cook an additional minute.
- Add in the chicken broth, potatoes, salt and pepper. Bring to a boil. Cover and simmer for 10 minutes, or until potatoes are fork tender.
