The cheese helps smooth out the bitterness, the honey gives it sweetness and receives saltiness from the bacon, cheese and olives giving this salad an all round full flavor for your taste buds.hese greens are nutritious--high in vitamin A, vitamin C and iron. Also low in calories, fat and cholesterol. As with any green, the younger the plant, the more tender it is. 1/4 cup balsamic vinegar
1 1/2 tablespoons honey dijon mustard
2 tablespoons honey
1/4 tablespoon extra virgin olive oil
salt and pepper
4 ounces feta cheese, crumbled
1 small red onion, thinly sliced
1/2 cup sliced black olives
8 cups young dandelion greens, rinsed and dried
garnish dandelion flowers

Steps:

  • Fry bacon in skillet until crisp, drain on paper towels, crumble.
  • Pour off bacon fat leaving behind 1/3 cup in the skillet.
  • Put vinegar, mustard and honey in the skillet mixing with a whisk.
  • Add the olive oil.
  • Add salt and pepper, keep this dressing warm.
  • Toss the greens with bacon, olives, onions and cheese in a bowl.
  • Pour the warm dressing over greens and serve.
  • Garnish with flowers.
  • Yield: 4-6 servings.

6 cups dandelion greens
2 bacon strips, diced
2 hard-boiled large eggs, chopped
DRESSING:
2 eggs
2 tablespoons white vinegar
1 tablespoon sugar
Water

Steps:

  • Wash dandelion greens thoroughly; drain and place in a large salad bowl. Chill. , Meanwhile, in a skillet, fry bacon until crisp. Remove and drain on paper towels. Discard all but 2 tablespoons of drippings. , For dressing, combine eggs, vinegar, sugar and enough water to make 1 cup. Beat well; pour into the skillet. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon. Pour over greens and toss well. Sprinkle with chopped eggs and crumbles bacon; toss lightly. Serve immediately.

3 -4 quarts dandelion greens
8 slices bacon
1 teaspoon dry mustard
2 tablespoons sugar
6 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon cracked pepper

Steps:

  • Washing the greens very carefully, discarding the roots and tough stems. Dry between two towels. Tear the greens into small pieces.
  • Fry the bacon in a large skillet until the bacon is very crisp. Remove bacon to paper towel.
  • Add the mustard, sugar, vinegar, salt and pepper to the fat in the pan. Bring to boil and put in dry greens.
  • Cover and cook the greens for about 3 minutes, until just hot and wilted.
  • Transfer to a warm vegetable dish and crumble bacon all over the top.

We chose dandelion greens, which are at their peak in the spring. (Please note: for Ashkenazi Jews, the mustard in this recipe is not considered kosher for Passover.)

2 sheets matzo
1/4 cup extra-virgin olive oil, divided
Coarse salt and freshly ground pepper
1 bunch dandelion greens (about 1/2 pound total), trimmed and cut into 3-inch pieces
2 tablespoons finely chopped shallot (from 1 large)
2 teaspoons sugar
1 teaspoon Dijon mustard
3 tablespoons red-wine vinegar
1/2 cup golden raisins

Steps:

  • Preheat oven to 400 degrees. Place matzos on a rimmed baking sheet, brush all over with 1 tablespoon oil, and generously season with salt and pepper. Bake, flipping halfway through, until golden brown around the edges, about 8 minutes. Crumble matzos into small pieces and set aside.
  • Place dandelion greens in a large bowl. Heat remaining 3 tablespoons oil in a small skillet over medium heat. Add shallot, sugar, 1 teaspoon salt, and 1/2 teaspoon pepper. Saute shallot, stirring occasionally, until caramelized, about 4 minutes. Add mustard and vinegar, whisking to combine, and cook 1 minute. 1 pound tender, young dandelion greens (about 10 loosely packed cups)
6 tablespoons extra-virgin olive oil
1/4 cup sliced almonds, toasted
2 tablespoons red-wine vinegar
1 teaspoon honey
Salt
Freshly ground black pepper
1/4 pound ricotta salata, cut into shards with a vegetable peeler

Steps:

  • Cut any tough stems from the greens and trim any wilted, yellow, or tough leaves. Wash and dry them according to directions on page 67. The greens can be prepared up to several hours in advance and kept, loosely covered with a clean towel, in the refrigerator.
  • To make the dressing, combine the olive oil, 2 tablespoons of the toasted almonds, vinegar, and honey in a blender and blend until smooth. Add salt and pepper to taste. Place the greens in a large bowl, season them with salt and pepper, and pour the dressing over them. Toss well and divide the dressed greens among six plates, mounding them in the center of the plate. Sprinkle with the remaining 2 tablespoons of toasted almonds and top with shavings of ricotta salata. Serve immediately.

Directions. Put the peas in a pot with the water, and boil gently for 5 minutes or so, until the peas are soft and hot. Add the dandelion greens, cover, and leave them just long enough to wilt but no longer. Put the peas, greens and water in a food processor and blend.
