Provided by Ming Tsai

Categories     main-dish

Number Of Ingredients 20

1 pound salmon fillet, center cut, skin off
1/2 cup mirin
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/4 cup ginger julienne
1 teaspoon toasted Szechwan peppercorns
1 cup long grain rice
1 cup sugar
1 cup oolong tea or black lychee tea
2 cups warm riced potatoes (boiled in salted water, drained well)
1 tablespoon butter
1/4 cup sliced green scallions
1 tablespoon horseradish
1 tablespoon wasabi powder mixed with a little water to form paste
Salt and black pepper
Salt and black pepper
1 cup all-purpose flour
3 eggs, beaten
1 cup panko bread crumbs

Steps:

  • Cut the salmon in 4 equal pieces and place in a small hotel pan or baking dish. In a bowl, mix together mirin, water, sugar and salt, stir until dissolved. Add ginger and peppercorns to liquid. Pour brine on salmon and marinate for 1 hour. Pull salmon out of brine and place in a bamboo steamer.
  • In a wok lined with foil add the rice, sugar and tea. Mix well and turn wok on medium heat. When mixture starts to smolder, place bamboo steamer on top. Seal the seam between the bamboo steamer and wok with wet cloths. Turn wok down to low and smoke for 15 minutes. Turn wok off and let smoke another 15 minutes. Salmon will be about medium rare and should be served warm.
  • For the "latkes": In a bowl, mix warm potatoes and butter. Mix in scallions, horseradish and wasabi. Season with salt and pepper. Shape potato mixture into 2 1/2 inch diameter cakes. Dredge the cakes in flour followed by egg and finally panko. Deep fry cakes at 350 degrees until golden brown.
  • Plating: Put a small mound of apple salad in the center of the plate, a potato cake on top and the salmon on top of the cake. Drizzle emulsion around the plate and garnish with chives.

POTATO GALETTES WITH SMOKED SALMON

Potato Galettes with Smoked Salmon image

Provided by Ina Garten

Categories     appetizer

Time 45m

Yield 6 servings

Number Of Ingredients 7

2 large russet baking potatoes (1 1/4 pounds total)
Kosher salt and freshly ground black pepper
Canola oil
4 tablespoons (1/2 stick) unsalted butter, melted
4 tablespoons creme fraiche
1/4 pound thinly sliced smoked salmon, preferably Scottish
Minced fresh chives, for serving

Steps:

  • Peel the potatoes, then cut them lengthwise in long matchsticks, using the finest julienne blade of a mandoline. Spread the potatoes out neatly in one layer on a clean kitchen towel or paper towels, roll the towel up, and squeeze lightly to dry the potatoes without breaking them up. Put the potatoes into a bowl and toss them with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Heat 2 tablespoons oil in a small (8-inch) omelet pan (a saute pan with sloped sides) over medium heat. Add half of the potatoes to the pan and press lightly with a large metal spatula to make the shreds lie flat. Cook them undisturbed for 5 minutes. Drizzle 1 tablespoon of the butter around the edge of the pan and cook the potatoes for another 3 to 5 minutes, until nicely browned on the bottom. Loosen the galette gently around the edge with the metal spatula and flip it over. (Be careful! The oil and butter underneath are very hot!) Add another tablespoon of butter around the edge and cook the galette for 4 to 5 minutes longer, until the second side is nicely browned. With the metal spatula, transfer the galette to a paper towel-lined plate and set aside. Repeat with the rest of the potatoes and butter to make a second galette.
  • Place the two galettes on a cutting board. Spread each galette with 2 tablespoons of the creme fraiche and a layer of smoked salmon, covering the galette completely. Sprinkle with minced chives and sprinkle lightly with salt. Use a large chef's knife to cut each galette into 6 wedges and serve hot.

SMOKED SALMON LATKES

Smoked Salmon Latkes image

This is from "Cooking Secrets of the C.I.A." by the Culinary Institute of America. I happen to love potato latkes with different ingrdients, so I present you with these.

Provided by Manami

Categories     Potato

Time 45m

Yield 10-12 serving(s)

Number Of Ingredients 11

4 large idaho potatoes, peeled and halved
1 small onion, peeled and quartered
2 eggs, lightly beaten
1/4 cup matzo meal
3 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 ounces smoked salmon, trimmings finely chopped
2 tablespoons finely snipped chives
1 tablespoon oil (Perhaps a little more.)
sour cream (For serving)

Steps:

  • On a box grater, alternate grating each potato with some of the onion so that the acid of the onion helps to slow the oxidation of the potatoes.
  • Squeeze the excess moisture from the potato mixture and place in a large bowl.
  • Stir in the beaten eggs, matzo and flour. Add the salt, pepper, smoked salmon and chives. (It is easiest to combine the mixture with your hands.).
  • In two large nonstick skillets heat 1-1/2 tablespoons oil in each over medium-high heat. When very hot, add about 1/4 cup of the mixture for each latke to the pan, pressing down with a spatula.
  • Cook about 4-5 minutes per side, until golden brown and crisp. Drain on paper towels and keep warm in a 200ºF oven.
  • Repeat until all of the latkes are cooked, adding oil as necessary.
  • Serve with sour cream.
  • Enjoy!

HERBED YUKON GOLD POTATO LATKES WITH SMOKED SALMON

Herbed Yukon Gold Potato Latkes With Smoked Salmon image

From the December 2006 issue of Sunset Magazine. Found it just in time for Chanukah and was it delicious! The flavoring of the herbs just made them taste great! They raised them to an elegance that I had never thought of.

Provided by Manami

Categories     Potato

Time 1h10m

Yield 20-24 serving(s)

Number Of Ingredients 15

3 1/2 lbs yukon gold potatoes, scrubbed, with any brown spots removed (You don't have to peel Yukon Gold's)
5 large eggs, beaten
1/2 cup matzo meal
3/4 cup finely chopped fresh chives
1/2 cup chopped fresh parsley
2 teaspoons chopped fresh thyme leaves
2 teaspoons chopped fresh rosemary leaves
1 tablespoon kosher salt
1 teaspoon fresh ground black pepper
vegetable oil (for frying)
9 -12 ounces thinly sliced smoked salmon, cut into 20 to 25 slices (optional)
sour cream
thinly sliced red onions or chives, 2-inch lengths
capers
caramelized onion (1 portion) (optional)

Steps:

  • Fill a large mixing bowl three-quarters full with cold water.
  • Using the coarse side of a box grater or a food processor fitted with a medium-coarse grating disk, grate potatoes, transferring them to the water as you go.
  • Let potatoes stand in water 15 minutes.
  • Pour potatoes into a fine-mesh colander and rinse well with water.
  • Rinse mixing bowl and wipe dry.
  • Take a large handful of potato and squeeze to remove some water.
  • Pile onto a clean kitchen towel, gather towel corners up into one hand, and twist hard to wring out any remaining moisture.
  • Repeat with rest of potatoes, using fresh towels if needed.
  • Return mixture to bowl.
  • In a medium bowl, stir together eggs, matzo meal, herbs, salt, and pepper, then pour over potatoes and toss to mix well.
  • If at any time you notice a pool of liquid in the bottom of the bowl, toss in more matzo meal, 2 tablespoons at a time.
  • Pour 3/4 inches oil into a 12-in. frying pan (with sides at least 2 inches high) over medium-high heat.
  • When oil reaches 350°, scoop a scant 1/4 cup of potato mixture from bowl, then gently turn onto a wide spatula.
  • Press into a patty about 1/3 inches thick, then gently slide pancake into hot oil.
  • Cook 3 or 4 pancakes at a time (do not crowd pan) until edges are crispy and well browned and undersides are golden brown, 2 to 3 minutes.
  • Gently turn and cook until other sides are golden brown, 2 to 3 minutes longer.
  • Transfer pancakes to paper towels to drain briefly, then keep warm in a 200° oven while you cook remaining pancakes.
  • Serve with sliced smoked salmon, sour cream, onion and/or chives, and capers.
  • Tips for Terrific Latkes: Soaking, rinsing, and drying the grated potatoes removes excess starch and makes the latkes crispy (not necessary for sweet potatoes).
  • Use restraint when adding eggs and matzo meal. Too much will make the latkes heavy.
  • Keep oil between 300° and 350° while frying to prevent latkes from turning greasy.
  • If making latkes ahead, let cool on paper towels, then arrange in a single layer in a zip-lock plastic bag and refrigerate up to 3 days. Reheat in a 300° oven until crispy and hot, about 15 minutes.

POTATO LATKE WITH SMOKED SALMON (CRIQUE STEPHANIOISE)

Potato Latke with Smoked Salmon (Crique Stephanioise) image

Provided by Joan Nathan

Categories     dinner, main course

Time 45m

Yield About 2 large criques or 10 small criques

Number Of Ingredients 16

1 pound baby Yukon Gold potatoes (approximately 6 small potatoes), peeled and grated
1 extra-large egg
3 tablespoons chopped chives
1 tablespoon fresh finely chopped parsley
1 tablespoon chopped black olives (optional)
Coarse salt and freshly ground pepper to taste
3 to 4 tablespoons extra virgin olive oil, plus oil for greasing ring molds
Coarse salt to taste
2 tablespoons sour cream
4 ounces smoked salmon, cut in strips
Juice and zest of 1 lemon
1 teaspoon finely chopped chives
1 teaspoon finely chopped black olives
Freshly ground pepper to taste
1 teaspoon finely chopped parsley
Extra virgin olive oil for drizzling on the plate

Steps:

  • Put the grated potato in a medium bowl. With a wooden spoon, stir in the egg, chives, parsley and olives. Season with salt and pepper, and stir well to combine.
  • To make large criques, warm 1 1/2 tablespoons of the olive oil in a medium nonstick pan over high heat. With your fingers, scoop out one half of the potato mixture, squeeze out the excess liquid between your hands and drop in the center of the pan. Using a fork or spatula, flatten the mixture firmly. Cook the crique over low to medium heat for about 6 to 8 minutes, until golden brown. Flip and cook for an additional 3 to 4 minutes, or until the exterior is crisp and golden brown and the interior is tender. Repeat using the remaining olive oil and potato mixture.
  • To make small criques, lightly brush the insides of three 3 1/2-inch-diameter ring molds with olive oil. Heat the pan with additional oil, and place the molds into the pan. Squeeze the excess liquid out of the potato mixture between your hands, and place 1 1/2 tablespoons inside each ring. Proceed as above, cooking for 3 to 4 minutes on the first side. Using tongs, remove the molds from the criques and gently press with a spatula. Flip and cook for an additional 1 to 2 minutes, or until the exterior is crisp and golden brown and the interior is tender. Set the criques aside. Repeat until remaining olive oil and potato mixture are used up.
  • To serve, sprinkle the criques with salt and top with a dollop of sour cream. Place a small mound of the smoked salmon on top, and drizzle some of the lemon juice over the salmon. Sprinkle with the lemon zest, chives and black olives, and season with pepper. Garnish with parsley, and drizzle some olive oil around the plate. Serve immediately.
